I started with the Millefoglie Di Melanzane "Alla Mamma Carolina"--thinly layered eggplant, San Marzano D.O.P. tomato sauce, and 18-month Parmigiano Reggiano. I make eggplant Parmesan at home, but this was on an entirely different level. Absolutely out of this world. As a special favor, they also prepared a half portion of Buccatini Carbonara for me: Roman-style bucatini with guanciale, egg, Pecorino Romano, and black pepper. My only complaint? I didn't get the full portion! It was outstanding. For my main course, I ordered the Costatella Di Cervo, a marinated venison chop with red wine, juniper berries, and herbs, chargrilled and served over soft Ribiola cheese polenta with port wine and fresh figs. I normally wouldn't order venison, but I am so glad I took the chance. It was spectacular--tender, flavorful, and beautifully prepared.
