I picked this spot last minute for a birthday lunch with friends, and we weren't exactly dressed for the occasion in our casual workout clothes. Upon arrival, I was surprised that they asked for a reservation despite the place being mostly empty, but they were able to seat me for three. As I waited, I noticed the clientele was mostly well-to-do older ladies and business professionals--a bit of a social schmoozing spot rather than a cozy neighborhood eatery. The atmosphere felt polished but slightly forced, and with only one waitress handling the entire first floor (while also setting tables with tablecloths), service was understandably slow. I enjoyed lunch there on Oct 18th and had the pleasure of being waited on by Daniel who did an excellent job of explaining the meal I was interested in and a great job at serving the meal. From the start the place is not new but more of a hidden gem. Upon entering the room is so stunning and elegant. The cocktails and food are excellent. It's pricey -- two drinks, an appetizer, one entree to split and a dessert ran about $130, but you get what you pay for, right? It's very tasty. Service was attentive and friendly but not intrusive -- a good balance. The best part of the experience was that the whole restaurant is quiet and lovely and nobody rushes you. It is perfect for relaxed conversations in a low-key luxurious setting. My spouse is hard of hearing and was very surprised at how quiet it was (even on a fairly busy Friday evening)! The waiter is an expert at upselling which is understandable but easy to get your bill climbing high so be careful. Food options range from $14 for a Caesar salad (which uses some grilled Romain and is very good with a good portion, a $23 for a spicy shrimp pasta dish to $31 for a scallop dish on a cheesy orzo which I would recommend. I don't recommend the $14 desserts since the portions are too small. We had 2 entrees and a salad and a dessert with only waters to drink and no coffee or alcohol and our bill plus tip was $150, so it was really expensive for the area. So I went for a lunch meeting so we ordered 3 appetizers, though I did t get a photo of them because people had already started eating but we got the Poblano chile con queso, delish and not spicy at all for those who can't eat spicy food. As well as guac n chips- had a hint of lime and I love that and finally Ceviche. I wasn't a fan because it was more tomato than anything else. The tostadas are pretty good. My wife ordered the grilled salmon and it was good. Came with veggies and roasted potatoes which were cooked great and good size fish. I ordered the chicken parmigiana- I wouldn't order it again. The portion was perfect but the chicken was too flat and too crunchy for me. The cheese made it look delish but became hard and would come off like cooled off cheese. Didn't like that. Sometimes Thyme does matter. My MIL brought us here for lunch and they were really excited about sharing this place with us. Unfortunately it was the opposite of everything they were ranting and raving about. Even they said it was different. We ordered a tuna melt with avo on the side, grilled chicken for the toddler and I had a salad with grilled chicken as well. The service was great, so don't get me wrong that's why they get two stars. But the wait for the food with no one but two other families that had already been served before we were seated took over 30-40 minutes. We ordered simple meals nothing crazy. Water refill was great and beverages but when that's the high light of your experience that's pretty bad. My daughters grilled chicken was only that, a piece of incredibly dry charred edge chicken no side or anything. My salad with the grilled chicken same thing. They I ate it because I hadn't ate for awhile and was hungry. The tuna melt according to the in laws was just ok but they kept forgetting things. Their dish included chips, and they literally had four pieces of chips on it. I'm not sure what the bill was and they never checked back with us to see how our meal was, we kept having to get up to check the status of our meal or remind them to bring something. I have been here a few times and I had never been very impressed given the prices but my last experience was wonderful. We started with the jalapeño margarita and cucumbertini. Both were very very good. Our entrees were the ahi tuna and the Chilean sea bass. The ahi tuna was amazing. It had a great flavor over rice and was a very good size for the price. I love sea bass but I don't really like hominy or tomatillo soup so I ordered the sea bass with roasted potatoes, vegetables, and lemons to squeeze on the fish. It was so good. I absolutely loved my meal. Social distancing is enforced. Bar is not open for seating. There is outdoor dining available. We were just feeling peckish so we ordered a guacamole (7) and the angus beef burger (12). The guacamole was actually made in front of us with our input which was a really cool experience. The guacamole was fresh and delicious. The chips were crunchy and substantive. The burger came with fries and was ok. The fries were thin and tasteless. The service was slow and inconsistent. I wanted something lite and had the chicken probiano soup and half a turkey sandwich. The soup was a little spicy but still good. At a very early age I came to the realization that I cannot stand baked cheese or tomato based sauces. So over half of Italian cuisine is not an option for me, but once in a while (and maybe this is just me) I specifically seek out food or dishes that are on my DISLIKE list. Even if my personal preference says I shouldn't like something, I can still appreciate good food and I have a longing to try every single dish known to man. Thyme Matters' Eggplant Parmesan is my one exception to the baked cheese and tomato based sauces rule. The cheese was melted perfectly (my dislike of baked cheese may have something to do with the quality of cheeses and the rubbery texture it gets when it browns too much) and the sauce was far from bland, just really flavorful...Thyme really does matter. I also had the Calamari. Total hit! They do use a mix of rings and full squid which kind of switches up the texture. And the Parmesan! It's loaded with bits and slices of Parmesan that I seriously just started eating because the herbs that rubbed off on it was phenom. Service was pleasant enough, nothing above average or below. There isn't a thing that sticks out about the staff there for me so that's pretty much a good thing. I'm pretty sure I didn't leave until after they were closed, but I was never rushed or anything like that. If they can make me a lover of baked cheese and a red sauce, TM is definitely worth the trip! Pricing was decent, kind of what I expected for a classy Italian restaurant in El Paso. I have read all of the reviews (so far) on TM and have come to the conclusion that they got off to a rocky start. It seems like the ratings under 2 stars were from before 2012 and since then they've improved and really won over other Yelpers. Thyme Matters is our home kitchen away from our home kitchen. Once you go a few times on a regular basis, the staff there gets to know your likes from the food to your usual drinks you order. By the time I walk to my table and sit down, my drink arrives (sometimes before I even sit down since they see me walking up to the restaurant). But even if you're not a regular, you'll be treated well. Their lunch menu has a bit more variety. House made chips--the best. Hamburgers, sandwiches, salads, and soups are all Delish. Makes it hard to choose. Dinner menu has different entrees. More steak, seafood and pasta dishes. They'll also have a couple of special dishes that are featured for a short time. Right now I'm loving their Arrachera steak with a side of the most delicious chilaquiles. YUM YUM !! I order that every time I go since I don't know how long it will be on the menu. Full bar is available for lunch & dinner. It's a really really nice place to enjoy a quick lunch, date night, friend night or cozy up to the bar and enjoy your meal there. They also have a patio that's really popular during the summer months. The patio is a great place to hang out and unwind after a long day at work.
