The regular size ramen was plenty, but don't let that stop you from trying the decadent Mega with all of the toppings. Was in need of a quick dinner and so I walked around Hell's Kitchen for some ideas. Have not been back to Japan for several months now, and I think it was clear to me that Japanese ramen was on my mind! Once I entered the restaurant, I was quickly seated by the server and she told me to have a seat right at the bar. Before ordering, I kindly asked if they had a restroom, thank god they had one. Everything felt like I was right in Japan. The small size of the restroom, there were at least 10 seats available, and the chef you could watch while he prepared and cook your meal! Once I placed my order, my Gyoza was delivered within 5 minutes, another minute my KimChee was delivered. Last but not least was my bowl of ramen! Oh how this was perfect and I couldn't have asked for more. Other items on the menu l'd like to try on another visit, they also serve Beer but I wasn't in the mood for alcohol that evening. It has that underground Japanese izakaya restaurant vibe, which I absolutely adore. The Toribro Deluxe Mega is a chicken paitan soup that is loaded with pork belly, chashu, fried garlic, garlic paste, egg, scallions, and nori. The soup consistency runs a bit thicker than most, which packs an incredibly umami depth of flavor. Super nourishing and hits all the right spots, especially if you go on a rainy day. Docking off 1 star due to wait times; it is a very small hole in the wall type of establishment so there isn't much seating to begin with. We got the gyoza and chicken ramen and added an egg. The gyoza was alright. It wasn't that flavorful or had enough fillings for me. The chicken broth was phenomenal! So hearty and unique (in nyc). It wasn't overly fatty, so I wasn't nauseous after eating it. I got the wavy noodles with mine and my partner got the straight noodles. As a person who prefers straight noodles, the wavy noodles were much better in this ramen. The wavy noodles were cooked perfectly Al dente with an eggy flavor. It's the best wavy noodles I've had. The egg was also cooked perfectly and well seasoned. Maybe next time I'll get the pork char siu since the chicken was a bit over cooked in some parts, but I didn't mind it! With chicken broth, sometimes the broth can smell too "chickeny", for lack of a better word, as if the chicken is not fresh. This was not the case here, it was not overly greasy or too light. Ambiance (4/5): This is a classic Japanese ramen shop feel--tight high top bar seating that overlooks the kitchen. There are a few tables on the side as well. It was cool seeing the solo chef prepare all the moving parts. Sadly, I did not feel like the seating was very comfortable, as the bottom part moved around on its own and there is no backing. Service (5/5): Came in on a Friday afternoon and there was only 2 or 3 other solo patrons so I was attended to throughout my experience. Toriburo Spicy (3/5): The noodles were a bit on the undercooked side so a little more chewy (which I like/prefer!) I like the homemade spicy paste that gave the dish another level of flavor! For the price point, I was definitely hoping that the pork charsiu piece would be a little more generous in portion size--however it's really only 2 small slices. The flavor was there and a good blend of meat to fat ratio but just really to meager. The dish also does not come with any egg. I think I was hoping for a bit more flavor in the broth to wow me but it's admittedly hard to compare paitan to tonkontsu. Cozy spot that's a little bit of a hidden gem to find. I love how it's underground - it makes me feel like I discovered somewhere only known to locals. There is limited seating inside so definitely be aware of that. I also love how small the menu is - it generally means everything is fresh and you can see everything being cooked in front of you. The aesthetic is interesting - you have their big pots of broth boiling over the stove top and can smell the delicious smells. Everything came out pretty quick. We were visiting NY, just finished a morning walking tour, and were looking for some good eats.....more specifically, since the weather was kind of cold, we had a craving for something hot and soupy. Located in a small basement space, I can see how there'd be a line to get in here during peak hours, but we were fortunate that the crowd hadn't formed yet, so we managed to get couple of seats at the bar....where can get a close up view of the kitchen prep of our food. Warning though.....this place is very small ...almost claustraphobic, which probably explains why they cannot have too many staff and servers on the floor....so, service can get a bit slow, and the servers a bit too busy to give you full attention. So, we went ahead and ordered the Toribro Paitan Ramen and the Toribro Spicy Ramen. Yes, there's absolutely no doubt that the freshly made, hot, delicious bowl of steaming ramen is good. However, the portion size for what you pay is pretty small....and for some, the broth may be considered flavorful, but for others, it may be kind of salty. But, what I really liked was that the broth was made from chicken soup.....since I am not much of a pork person. I've been coming to this specific spot when it was totto ramen and I appreciate that the spirit is still there. No fuss, no frills, just strong delicious chicken paitan ramen. Apparently this is a former location of Totto Ramen, when they closed the head chef opened this space to keep the vibe going, or more precisely, to introduce people to the "next level of ramen". Like the chicken rising from the ashes, Toribro was reborn. Cool fact, Tori means "bird" in Japanese, and Toribro like Totto specializes in Chicken Paitan, thus we have Bird-Bro!* The compact space has a ten seat bar, a two top and a couple of larger tables towards the back. All the action is happening behind the bar, the chef is making it all happen while a large pot of paitan is stirred at various intervals by the staff. The lone female server deftly and efficiently handled the patrons as a bunch of us came in at once. I love the Sapporo on draft here - they must move a lot of this because it tasted so fresh and chilled to the right temp - it hit the spot and went perfectly with my "Toribro Deluxe Mega" ramen. I ordered this without any of the garlic, because as much as I love the flavor garlic doesn't love me. But you know what, this was actually a bit of revelation for me because I could actually taste how amazing their chicken paitan is! My partner in crime had the Toribro Deluxe and I tasted the broth that had the garlic and that was all I could taste, it also made it saltier. So my revelation, and recommendation is stop ordering ramen with various garlic or spicy additions - if possible get it on the side to add to bites so you can actually taste other flavors. /end rant. My Deluxe Mega came with Char Siu three ways - sliced, shredded and Kakuni, being a chunky cube of meat. None of these were particularly outstanding and if ranked in order it would go 1st Kakuni, Sliced then Shredded. The meat portions were on the smaller side of most other ramen spots. No matter, the paitan and noodles truly shine here. Stopped by after a show nearby. The logo is cute with the rooster comb. Fun tidbit: "Tori" is bird in Japanese, so "Bird"bro has a cute comb! A few steps down and into a small restaurant with J Pop music softly playing. There is a nice long counter with 10 seats (discreetly numbered!), where you can watch the magic happen, and a few small tables. The service was attentive, with 1 waitress taking care of the whole restaurant. The chef, and occasionally the waitress, checked on the pot of broth consistently, and made sure to give it a few good stirs to keep things moving! The Toribro Mega Ramen had a good amount of garlic (fried garlic and garlic paste). Garlic doesn't agree with my friend, so he got the Toribro Deluxe Mega Ramen without the garlic. After tasting each other's broths, we felt like the garlic made the broth saltier, maybe a tad overly salty. So, if you're not a huge fan of garlic or want a less salty (but still flavorful broth), ask them to hold it! The Char Siu was tender and flavorful, though a tad bit dry. I got the noodles firm, and it was perfectly firm. The Seasoned Boiled Egg is well seasoned and cooked a little past soft boiled. I prefer it fully soft boiled and jammy. The Bean Sprouts add a crisp texture to the bowl. Overall, a good portion. If you're a big eater you can order extra noodles (Kaedama) and/or soup! Well, chopstick to my head, I'd give it to Toribro--each bowl was an umami powerhouse. We got the Toribro Mega and Toribro Miso.
