Had a big group of 10 friends coming into town and was looking for a good place to eat in midtown. Resy had an open reservation for a group of 10 about a week before we were meeting on a Sat night. Menu looked good with a wide selection of apps, salads, ramen and a few desserts. And doesn't hurt that it's got a bib gourmand reco from Michelin. The front door is crazy heavy- so pull hard when you enter. The interior is dark modern decor with music playing. Feels like a hushed night club. It's a very narrow space with limited seating so reservations in advance is a must! They will seat large parties if half show up. We were seated at a long table with 8 seats along the side and 1 at each end. The table had a great view of the kitchen which was fun. We ordered a range of apps- small bites (good for vegetarians), apps (wings, bao, riceballs) and ordered ramen. They had a good selection of non alcoholic and alcoholic drinks. For dessert, we all saw the kitchen preparing shaved ice. Gigantic snowball of ice and syrup topped with whipped cream. We knew that we had to order it for dessert. We got 2 kakigori for the table- one mango and one matcha with red bean. Each person got a small bowl to take a serving from the huge shaved ice ball. Everyone enjoyed the food. The first time my friend brought me here, I thought the ramen didn't impress me the way a Michelin restaurant should have. But maybe because I tried the Smoke Dashi Ramen and the smoked fish oil did not appeal to me at all. I used to make it a requirement to visit Ichiran every time I came to New York, but this time I'm so glad I decided to revisit Tonchin. The noodles were thick and perfectly chewy the way I like it. And the broth was rich in a way that was almost milky, and not just a bowl of broth and salt like your typical American ramen chain restaurants. It barely knocks Ichiran off the top of my list for ramen in the US. However, as good as the chashu was, it wasn't as delicate as Ichiran does it. Walking up to the entrance looks like a dingy alley way due to the musky and dark area. Signage can be seen as a small flag hanging from a pole and to the left is a door with Tonchin imprinted on the wall. Entering inside the server was easy to talk too and had a speak easy type feel. Lights dimmed down with Michelin Star awards to my left, bar seating to my right, additional seating in the back next to the visible busy kitchen. Music was a modern sound of Korean hiphop and EDM. Menu was a QR code and within 15 minutes my appetizer and ramen was delivered. Ordered: -Tsukune chicken and pork bun This was delicious! The Karachi coleslaw paired well with the teriyaki sauce which also calmed the sweet taste. After going to the Brooklyn location, I wanted to try the Manhattan location. We had a reservation at 4:00 PM, but arrived early at 3:30 PM. We only had to wait about 15 minutes before getting seated. They definitely get crowded though, so it's best to have a reservation! During "lunch" hours, the place is brightly light. Once "dinner" hours comes around, they set out candles on the tables and dim the lights for a different ambiance. The service was a bit off at first, since we waited a while to get our appetizers. This might have been due to the change in staff between lunch and dinner. The hostess noticed and checked on our appetizers, and got them right out. Afterwards, we had different waiter and he was very friendly and attentive. We did the Pick 3 appetizers: -Kyuri (cucumber): love the mix of flavors with the onions, vinegar and salt. The kyuri has a good bite to them -Kimchi Mushroom: the mushrooms also had a good bite to them. Not too spicy of a kimchi sauce, which I liked as it did bot overpower the mushrooms. -Shishito: I enjoyed the saltiness of the kelp with the char of the shishito. I went for the Tsukemen, which I loved at the Brooklyn location. This was just as good! The noodles had a good bite and the right thickness for the rich broth. I like the lemon on the side to help cut some of the richness. The egg is well marinated and perfectly jammy. The Hassaku Grapefruit Juice is a nice non alcoholic option. I got the Spicy Tan Tan Ramen because I love to have spice in mine, but wish I was able to adjust the spice level. It was definitely super creamy, thick, and filling. The tonkotsu...I couldn't finish it, and it didn't sit well with my stomach. I guess I'll add an updated review every few years to keep things in check, even though I'm a "regular". Some of the staff has been here for a while, which tells me it is a well managed operation. Quality is still the focus at TONCHIN. Table comfort is still not. I love to bring my children when not crazy crowded so they can also enjoy one of the best ramen restaurants in the world. Maybe I'm exaggerating, but I haven't found better yet. Summer soupless ramen with perfectly chewy noodles and slightly spicy sauce is a great addition. The vegan ban ban kinoko as well as its chicken version are great also during summer. The maguro is delicious but I don't find it as satisfying as the noodles. Mind spiciness level for the younglings. In the winter, the spicy tantan or Tokyo ramen always hit the spot. Fish bun has been improved slightly over the years but thank ramen-sama, it is always as messy to eat as the first time I tried it 7 years ago. Desserts are surprisingly delicious. Typically Japanese ramen restaurants lack in that domain but not here. The Tokyo banana is perfectly crafted: creamy crunchy tasty. The shaved ice are great and super fun to eat. We also had the edamame appetizer - super flavorful and addictive, and we wound up ordering a second one (for our party of four) after devouring the first one. Now here's why it's my favorite ramen restaurant- my favorite dessert is banana pudding, and Tonchin's signature Tokyo banana dessert is an elevated banana pudding that makes magnolia bakery look like amateur hour. Plenty of fresh banana and a carmelized banana on the side with a balanced pudding that's not too heavy - this is peak banana pudding. So it has my favorite ramen and favorite dessert. But can it do better? Yes. It can also have...my second favorite dessert! Tonchin has excellent shave ice desserts that reminded me of Korean bingsu. Noodles are thicker and chewer than what i'm used to. Chashu was nice and tender. menma was ok not very flavorful. Overall a solid ramen but not particularly special. I honestly prefer ichiran better. Service was good and staffs were attentive Overall a good experience but it didn't stand out enough for me to come back. Cool place and maybe nice for dates or if you want to drink as well. Price is definitely on the higher side for ramen. I've had ramen in Japan and my standard is high but i can find similar type of restaurant that is cheaper closer to home in US. read more
