They should have kept the door locked instead of having customers wait outside in 90 degree heat and humidity. I came back to a line but was seated right away. The bartender/server was friendly, attentive, and provided great service. Unfortunately, the ramen wasn't for me. The broth, ramen, and egg was extremely salty and oily to the point where all I could taste was salt. The chashu was extremely salty. I should have picked some off. The tonkotsu...I couldn't finish it, and it didn't sit well with my stomach. If you actually want to appreciate the broth, the classic ramen is the way to go. You can always add spicy oil yourself. A few things could definitely be improved. For an upscale ramen spot in the heart of NYC, I was surprised the tap water was straight-up lukewarm. Nobody wants lukewarm water after eating a piping-hot bowl of ramen. I'd also avoid the bar seating if you can. The seats aren't very comfortable, especially if your back tends to get tight from sitting hunched over. Another small but surprisingly annoying issue is the front door, it doesn't have a slow-close mechanism, so it's constantly slamming shut. Depending on where you're sitting, it can get pretty loud and distracting while you're trying to eat. On the positive side, the service was great. I could only recommend the edamame based on taste but not on price. The ramens were 50/50. Smoked Dashi and Ban Ban Chicken were different but good, and definitely recommended. After my first visit: This is my favorite ramen restaurant on the planet. It's my perfect restaurant - but not because of the ramen. Because of the desserts! We ordered few appetizers like chashu rice ball, mushroom buns, and i got spicy tan tan ramen and my partner got the miso ginger ramen. Chashu rice ball came with chashu, sauce, rice wrapped with nori. It's more like a sushi roll than a rice ball but it was ok. The pork was a bit dry and was messy to eat. Although it has omikuji/fortune slip inside that you pull out which is a unexpected fun addition to the dish. I ended up getting daikichi which means great luck. Mushroom buns were fluffy, flavorful and tasty despite vegetarian option. The spicy tan ramen was spicy, creamy and savory. The ramen came with half egg, few slices of chashu, menma, ground pork with spicy miso which you mix together. The broth is combination of rich, spicy and creamy and pretty strong sesame flavor. Noodles are thicker and chewer than what i'm used to. Chashu was nice and tender. menma was ok not very flavorful. Overall a solid ramen but not particularly special. I also appreciated that they added a fair portion of mixins that complemented the rest of the ramen dish well. I will say that I don't think the ramen was super special or a must try, but definitely solid for satisfying a craving for ramen. The restaurant isn't very big, it's a long narrow space. Pretty dim, but has a cool vibe. The bar is decently big, you can get reservations at the bar or tables on resy. We didn't try any cocktails, but they had a wide selection of cocktails and sake. Everything we ordered was really good. We ordered the potato salad with snow crab, the gyoza, and the classic Tokyo ramen with extra noodles and extra chashu. For 2 people, it was enough food to be satisfied but not stuffed. The potato salad had an amazing sauce and a decent amount of snow crab. If you like Japanese potato salad, I think it's a definite order. The gyoza is made fresh and came out sizzling. It was really nice. The chashu was amazing, so glad we ordered extra. It's cut very thin. The noodles are so good. In my opinion, the broth wasn't too rich or too salty. We booked the 11:30 AM timing for 3 people and I'm so glad we did because by 12 PM, the restaurant was full with folks waiting in the bar area. We came here with our 1 year old and they accommodated him so well- he had a small bowl plate and utensils! The vibes are casual, very open and the music isn't too loud, i didn't have to scream for my son or my husband to hear me. The establishment itself is very clean! Side note for parents: they have a changing table for your little one! The food was incredible! Highly recommend trying dishes that your server recommends because they won't recommend wrong. We also wanted to try out dishes we normally wouldn't think to order because of how simple they sounded. Tonchin takes it a whole different level with every dish. The ramen is of course the highlight, but wow- the most savory broth and meat and the noodles? So tasty. You leave full and content not bloated and thinking you over-ate.
