When making a reservation, you're required to select either the 6-course or 9-course tasting menu in advance. We initially chose the 6-course menu but upgraded to the 9-course because we were concerned the portions might be too small. In hindsight, that concern was justified. The craftsmanship of the food is undeniable. Every dish was beautifully plated and technically impressive. Standout courses included the yellowtail, which had a wonderful lingering spice, and an oyster preparation that incorporated multiple elements and textures in a very creative way.
