We've been here for lunch a while back, which was OK. Tonight we went again (8 months later). I have no words. We arrive and like a chorus the 2 servers say "seat yourselves anywhere", which we did. A young male server came to our table. We asked about the wine, he said there's red and white. We asked what the white was, he said "red". Huh? Again, what white house wine do you have? We have red snd white. Oh... It's cabernet. Again we asked about the white wine and again he said cabernet. I explained cabernet is red. We want white. He didn't know. He would ask. Came back with white wine choices. Then he asked what we want to eat. We asked for a minute to look at the menu and he left. A minute later the girl server came snd asked if we're ready to order. We said no and literally 2 seconds later the male server was back. This time we said give us 9 minutes please. (So who is our server?? He or she?? ) It feeks like unorganized chaos. As we ordered, the chef must've overheard and then said no we don't have this, don't have that. Two things we ordered weren't available. The sushi rolls's rice was way too thick to properly taste the small amount of fish in it. The octopus balls were tasteless. If the tasteless octopus weren't visible, I would think there were no octopus inside. Tasteless. On every menu item we asked about, the server said I believe (this of that). Never sure of anything. My opinion of this restaurant at this time is the servers are both clueless, management is very absent. The redt of the food was okay, nothing to recommend at all. Oh and the salad was never served, they forgot. Just like servers expect a good tip, I expect good service. I don't know who owns this restaurant, but he/she needs to do some server training. And someone to take charge of the restaurant and operation for the evening. It lacked very obviously. We won't be back. Hope the situation improves for the sake of other clients expecting a good experience. Our bill was $88, you'd think at least we'd be somewhat full ... we weren't. I've been to this establishment a few times over the years that I have lived here and have had an overall positive experience until more recently. The last time I went, my bulgogi was cold and sashimi very thin but enjoyed the rolls, friendly service and cozy atmosphere so we decided to go again. This time, service seemed disorganized and slow. We wouldn't have minded the wait if quality reflected that but the food was mediocre and proportions were small, decent but not worth really the price. This is really a three and a half star review. My husband and I, along with our friend, visited Tsubasa on a Wednesday evening, during the restaurant's soft opening. We were really looking forward to a Korean restaurant opening up in the Clear Lake-Webster-League City area, as there hasn't been one since the one on El Dorado closed down several years ago. My husband is Korean, and I was born in Korea and lived many years there as an adult; in short, we both know and enjoy Korean food. When we arrived, we were greeted by a friendly, young waiter. The restaurant is bright and sparingly decorated. A big portion of the space is occupied by the sushi bar. When we looked at the menu, we quickly realized that 80% of the dishes were Japanese, the majority of them being sushi. I mean, I suspected as such since the name of the restaurant is Tsubasa. It was fine. We like Japanese food, too. We ordered the mini dumpling appetizer, bulgogi, Korean kalbi, tonkatsu, and an 8 pc chef's sushi plate. We wanted to try the food, especially the Korean dishes. The food arrived on trays (which I guess is more Japanese-style (?) but it just makes me think of cafeteria food). The mini dumplings were good--hot and crispy. The bulgogi was fine; standard flavoring. The kalbi is a little too sweet, but I bet non-Koreans would like it. The tonkatsu was good; big portion and standard taste. The sushi was good. Overall, we enjoyed our meal fine. It wasn't a disaster, but it wasn't spectacular, either. Because it's still their soft opening, there are still some customer service kinks they have to iron out. Our waiter seemed unaware of what came with the dishes (soup and salad) and had to be directed at least twice to bring out what was missing from our table. He also brought us chicken katsu at first, when we clearly ordered tonkatsu ("ton" means "pig" in Japanese). But he was perfectly fine and worked hard and resolved the issues quickly. The manager also sent over two additional sample dishes. In Korea, we'd refer to these bonus, free dishes as "service." It was later confirmed that the owner and his wife are, indeed, Korean. I suppose that's why the restaurant was advertised as a Korean restaurant. A part of why we were disappointed overall was because we were expecting a Korean restaurant with a menu full of Korean dishes. Instead, we got a mostly Japanese restaurant with two Korean dishes on the menu. I suppose they would make more money as a Japanese restaurant than a Korean one. Side note: I have never come across a Japanese restaurant in The US that was actually owned and run by Japanese people. The majority of them are owned by Chinese people. If I were to return to Tsubasa, I would order the tonkatsu, as the portion size and quality of food is more bang for my buck. The other Korean dishes are a little overpriced for what you get (but that's common among Korean restaurants). Hopefully, they'll work out their customer service issues, have their grand opening soon, and put up a web site. Good luck to them; I hope they do well. read more

Glad we finally have Korean/Japanese restaurant in this area. We were promptly greeted by the owner (sushi chef) and the server. The restaurant is super clean but kind of small. Food- Dumpling popper (4/5)is really good as an appetizer. We can tell it's really homemade, not frozen store bought. Bulgogi (4/5)- is good. It serves with miso soup, salad and steam rice Galbi (4/5)- very good but a bit too sweet for my taste. Serves with miso soup and rice Chopped scallop roll (5/5). The dining experience I had after picking up from Tsubasa was extraordinary. The Chef/Owner John's deft hands created delicate blends of flavors that perfectly complimented the extremely fresh salmon, tuna and crab I enjoyed. After beginning with Miso Soup, the Spicy Crab Salad was a delicious creamy blend of spicy crab served over tart Granny Smith apple matchsticks which cleansed the palate. The Sake (Salmon) sashimi was buttery and extremely fresh and the two specialty rolls were amazing! I initially asked to delete the crunchy (fried batter) and to make some other adjustments to the rolls and fortunately, I was asked to initially try the rolls as they were customarily made. Excellent advice! The flavors and textures were a masterful marriage and I look forward to enjoying these choices again and exploring more specialty rolls. read more

So my friend came to Clear Lake for Memorial Day and decided he wanted to eat something "light," but the first thing I saw when entering Tsubasa was the power of the dark side emanating from Return of the Jedi's throne room scene on the TV by Chef John's sushi station! So I obeyed the little voice in my head that said "You will eat this food and leave this restaurant with the door open" and let my dining companion usher me inside to the most Gungan-like named sushi restaurant in Houston, that promised from his accolades to be far more palatable than Jar Jar Binks! Wesa going to Tsubasa! You have seen that I am a newcomer to sushi, but have been exploring it gradually in a few past reviews. But I felt like I'd be writing a rehash if I ordered sushi again, so despite my dining companion's lavish praise for the prime-selected fish that comprise John's sushi and ten minutes of inner dialog like the one when you want to go home and rethink your life, I ultimately ordered the don katsu, drawing a set of relieved sighs from the array of fresh fish cutlets behind the glass case not emblazoned with "EAT MUR BIF." Meanwhile, we admired the fresh modern décor that didn't cave to cool nor faux-Japanese trends, the maneki-neko statues confined to one wooden shelf behind John's counter, and waited for Obi-San with "a new hope" that Tsubasa would be a cut above the pack. The first sign this was true was the spanking-fresh miso soup, bright with squares of floating green seaweed that melted in one's mouth a lot easier than alien green milk from a breast that escaped from the Game of Thrones studio, the dashi beyond any notes of fishiness, and the cubed tofu in prime condition. At its best, this dish has basically three or four ingredients and takes 10-15 minutes, and should never be screwed up, but it still benefits from the exact art of scientifically honed timing that John described to us after the meal. My dining companion was kind enough to lend me part of the Chef's Special Roll, tuna wrapped with avocado and topped with a shaving from an entire lemon. The fact that John is skilled enough to cut a thin enough slice to be edible rather than unpalatably bitter is impressive enough, but the lemon actually contrasted well with the unctuous avocado and tuna texture, although it might have stepped on the subtle flavor of the fish itself. When the katsu itself came out, I realized the menu photo had pulled a Jedi Mind Trick on me as it was cut into strips following the frying rather than left whole, but it was done so neatly you'd think it was the work of a lightsaber. Every cutlet I'll ever eat seems doomed by the comparison to that scrumptious Wienerschnitzel in Germany, and even a Japanese katsu has Go! Go! Curry! to compete with. While Tsubasa's version is not equal to those, a little drier and chewier than fire-roasted Porg, it remains exceedingly crispy and devoid of grease. The accompaniments include lightly preserved daikon perhaps nodding towards the Korean influences on the menu, impeccably steamed white rice, rootleaf-free fresh green salad, lip-smacking katsu sauce, and sesame that's meant to be ground into sand before being dumped into said sauce as a thickener. When ground up well, it is far removed from being coarse and rough and irritating, and produces a quite smooth texture with intriguing depth of flavor. The only other complaint about the dish was that the strips of cutlet are meant to be dipped into the diminutive bowl. I am not Luke Skywalker, I cannot fire a proton torpedo into a small thermal exhaust port that's only two meters wide! At risk of Chef John finding my lack of chopstick dexterity disturbing, I chose to just dump the remainder of the sauce over the cutlet and finish. We hung around a while after our plates were finished talking to John about his love for udon noodles and how he's had to build Tsubasa through savvy business skills and playing to his audience. Since Sunday, when we came, is generally a slow business day, most of his sauces are made that day when he has more time, and some former menu items were discontinued because soba proved as popular as The Last Jedi on Rotten Tomatoes audience ratings. With that said, its buckwheat base could make soba a hot gluten-free noodle option in some galaxy far, far away. A $15.50 charge and a quick hand wave with "credits will do fine" later, I went on my way, quite satisfied with the most recent stop on my Kessel Sushi Run. Which will, of course, be for sushi next time if there is one! And compared to all the other Japanese joints in the League City surrounding area, Tsubasa is run with the most care and expertise, certainly earning my companion's unshakable loyalty as the only place he'll ever eat sushi at again. And, even for a newcomer, earning my sincere respect. So I can stop looking for sushi in "Alderaan" places, because now I just have to say "You will take me to Tsubasa now!" read more
