    High quality sushi falls into two tiers: there's the Morimoto/Nobu omakase experiences and then…read morethere's the high quality neighborhood joints with regulars and Takumi and perhaps Yume Sushi falls into the latter in the Falls Church area. If I were to compare them with clothing brands, the top tier restaurants would be akin to Hermès: impeccable, yes, but you're refinancing your apartment just to sit at the counter. Takumi is Ted Baker: genuinely refined, quietly stylish, and doesn't require a second mortgage to appreciate. The fish is flown in fresh daily. There is no cream cheese within a 50-foot radius of this kitchen. No yum yum sauce. No roll named after a questionable life decision. Just pristine fish doing pristine fish things. The menu is tight -- bento boxes, focused apps, nothing that needs a paragraph of explanation. The fried oysters and squid tentacles are mandatory. Non-negotiable. Do not test me on this. Then the subtle flex begins: yuzu, truffle, shiso placed with quiet confidence, mango puree that sounds wrong and tastes right, an Old Bay finish that would make Maryland weep with pride, and a Kalamata olive that has absolutely zero business being this good on a sushi menu -- and yet. This is a kitchen that knows exactly what it's doing and doesn't need your validation. For top tier sushi in Falls Church, go with Takumi if you skew towards traditional, go to Yume if you prefer modern more creative options.
