The meat is tender and deeply smoky, the bread has just enough toast to hold everything together, and the jalapeño sauce cuts through the richness without announcing itself too loudly. Nothing is fighting for attention. Nothing is there because someone thought the sandwich needed "one more thing." The ratios are dead-on. And maybe my favorite part--it eats clean. No six-inch tower of meat collapsing into your lap. No river of sauce running down your arm.
