I asked for their most popular dessert, the guy at the register said it was the ube basque so I ordered it, to go. The flavor was good but I disliked the amount of food coloring used. The purple color was quite exaggerated and my stomach complained about it later on. I noticed a similar intensity with the green color of the pistachio option. I should've known better and order something else but I was tempted by it since I was told it was their best selling option. Sadly and very disappointed, I later discovered on their website that this ube basque is not even shown on their menu! Apparently, croffles are their most popular desserts... Luckily, there were other popups scheduled for this week. On Wednesday, my boyfriend and I drove up to Kirkland for the Kirkland Wednesday Market. We arrived a little after 4PM and was able to snag parking in the area. It was $2.40 for two hours, which is amazing for parking. Unfortunately, the Halo Halo Shave Ice was already sold out by the time we arrived. We opted to order the Strawberry Mango Sago Shave Ice with an additional add on of Ube Ice Cream. The total was under $14 after the add-on and tax. The best part was there was no wait! It probably helped that it was a bit chillier that day. So happy to have finally tried Mike's Shave Ice. It was delicious and nothing like regular shave ice/snow caps. This is WAAAY better. I hope I can catch another popup soon to try the Halo Halo Shave Ice!

My first time around, I got the lilikoi pog with li hing mui and vanilla ice cream. AMAZING. I loved it so much I got it again my second time around just without the vanilla ice cream. If you're getting Mike's for the first time, 100% get this and li hing mui is a must. My cousin got the calamansi mango sago which was also pretty good but not our favorite. The calamansi came thru much stronger than the mango which I liked but know isn't for everyone. The sago and coconut flakes gave it a pleasant earthiness/nuttiness. I probably wouldn't get it again, but I'm still glad we tried it. Located in the Belgate plaza, there is plenty of parking. Mixed Berry Bingsoo - my favorite bingsoo because the berries are packed with flavor, sweet, and enhance the dessert. With a mix of sweetness, tartness, and acidity, the bingsoo has balance and the contrast actually helps each flavor shine. The berry juices even add flavor to the bingsoo below (and there are berries at the bottom). The only mediocre aspect is the whipped cream on top which is just whatever. Taro Bingsoo - the menu has alternated between ube ice cream and taro ice cream but I think it's always been taro ice cream because it's not overly sweet. Red bean is also sweet but after devouring the toppings (including the ice cream), the bingsoo itself doesn't offer much. It's sweet shaved milk with condensed milk but the taro flavor isn't as potent.
