There were plenty of open tables under the covered part of the patio, but upon arrival was told there is only table seating for hotel & select guests due to weather. We sat at the bar. Watr Miami Rooftop was such a vibe. The ambience was amazing -- perfect weather, beautiful oceanfront views, and that classic South Beach energy. Being right on the water made everything feel elevated and special. The drinks were delicious and super refreshing. We also got fries with the burnt garlic aioli, which I had never tried before and was honestly so good -- such a unique flavor. I ordered a fresh coconut too. It was slightly moldy inside, which wasn't ideal, but overall still enjoyable for the experience. We ended the visit with some shots (they were generous!) and great music. There was a live DJ that kept the energy up, and there's even a pool if you want to swim. It's definitely a perfect girls' trip spot and there are so many cute picture locations all around. WOWOW!!! I had such an amazing experience here. If you have been to Level 6 and thought it was nice but too busy and too chaotic COME HERE! This is elevated dining. The dishes were all AMAZING. The ultimate Miami Beach experience starts here! If you're looking to splurge on a delicious dining experience, look no further than Watr at the 1 Rooftop. This was my first time here, but my friend was raving about this place and wanted to treat me to dinner here to show me all of her favorite plates. We had a 6:30pm reservation and showed up a few minutes early and was able to be seated pretty quickly. The open air and ambiance was so lovely and peaceful. It was a little loud from the music, but overall a great vibe. Unfortunately there was a couple sitting next to us when we first got there that was heavy on their PDA and was aggressively touching each other, which made things weird and distracting lol but that's the Miami experience.... Right? We decided to stick with just waters for beverages (saving room for dessert) and started off with truffle fries and crispy tuna rice. The truffle fries were perfectly seasoned and perfectly crispy. The tuna crispy rice was delicious, but such a small portion and I wish it came with at least 4 pieces rather than only 2. For mains, we did the miso cod and the watr sushi roll. I've never had a miso glazed cod before and I was extremely pleased with it. Very flavorful and perfectly paired with the broccolini. My friend doesn't like onions and mushrooms, so we ordered them on the side for me to enjoy. The watr sushi roll was perfect. It had tuna, snow crab, and shrimp tempura. It was one of the best sushi rolls I've had in a minute. We ended the meal with some mochi and the chocolate miso cake. The cake was out of this world. It had banana and chocolate flavors and it was like a flavor explosion in my mouth. I would go back to Watr just for this cake tbh. The service was great and we had our waters filled and plates cleared at all of the right times. Validated parking is only valid for 3 hours, and we stayed a bit longer than that, so we ended up paying $65 for valet. Whack. Sitting on top of the 1 HotelSouth Beach is this gorgeous rooftop! The small intricate details is what makes this rooftop stand out. Right as you enter, there's a backlight of waves that shine over the signage. We decided to come here for drinks, but we did see some patrons sitting down for dinner/food. We got the- Island time 4/5 - it was definitely sweet and just what I prefer in my drinks Purple rain 3/5 - 100% my friend's vibe and something to make her tastebuds happy. No one was actually inside the rooftop pool, but I'm sure during the daytime there would be! Our first plate was disappointingly lukewarm, but once we let our server know, they quickly brought out a piping hot one that made all the difference--tender, flavorful, and well balanced. This rooftop is THE MOST BEAUTIFUL place and is my favorite spot in Miami Beach. You walk in and immediately feel the luxurious open-air, jungly design. They have a section for non guests to dine unfortunately not by the pool but trust me you'll still have a blast. The salmon cucumber truffle roll... omg. One of the greatest rolls I've ever had, I'm salivating as I type this out. I wish I had gotten two of them. I had also gotten the 5 nigiri set which was great but the salmon truffle roll was a clear winner. For dessert, I had a tough time choosing but ultimately went with "The Chocolate". It was mind blowing like I want to repeat this meal ASAP. You must stop by here when in Miami Beach!! read more

We had a 6PM reservation but arrived a little early to catch the sunset and have a drink & the staff was so kind about seating us right away. They gave us a great table near the DJ who was playing bangers, the music was great and set the vibe for the night. The sunset from the restaurant was absolutely beautiful. Our waiter was Edwin and he was so sweet and welcoming and took great care of us. The drinks were great and the food was yummy from the appetizers to the entrees. The environment itself is great: shaded, tropical, and very much the vibe they advertise. The drink was fine, though it mostly tasted like juice. I took a stroll to the 1 hotel Tuesday night. A brief walk through the elegant lobby leads you to the elevator towards the roof top. I was disappointed to hear the patio was closed off for dining or even viewing. The hostess explained there were not enough covers to open this space. Marco was my server and his knowledge of the menu was excellent. The octopus and seaweed dish was one of the best seafood arrangements I've ever had. The pickled onions mixed into the seaweed was different and delicious. Dessert was a chocolate torte sweet strawberries with gold flaked chocolate chunks. It was a very enjoyable meal looking out at the city lights, nice white wine, excellent food and service. If I make it back to Miami I will return. read more

The truffle fries weren't as crispy as I hoped and the miso cod had too much of this heavy overbearing brown sauce. The tequila mocktail was also pretty bad - very sour and no other flavors in the mix. People rave about the view but most of the tables are located more on the interior so you don't get as nice of a view. Service was also a little slow, esp the check-in process (3 hosts attended to one party at a time). It took a while for anyone to check us in and then another short while after check-in for someone to seat us even though there were plenty of empty tables. read more

I ordered food from Watr during a recent stay at 1 Hotel South Beach and had a very concerning experience. We picked up food from the restaurant and ate it in our room, and over the course of the day we ate exclusively on property. Later that evening, I became severely ill with what appeared to be food poisoning, which continued into the following day and significantly disrupted my stay. As I am currently pregnant, this was especially concerning from a health and safety perspective. We reported the issue to the hotel at checkout and I have made multiple attempts to follow up since, including emails to management. While I understand an internal review was opened, I have not received any meaningful response to my request to have the food and beverage charges from that day addressed. At a restaurant operating within a hotel of this caliber, I would expect both higher standards around food safety and a more proactive response when something like this occurs. The lack of follow-up has been just as disappointing as the experience itself. I would still welcome the opportunity to resolve this directly. read more
