Amazing bakery! We went here for a Friday before Mother's Day treat! And boy was it a treat. As an aspiring bakery owner, this place was inspiring. Open kitchen, you can see everything being made. You can see the ovens, and the bakers diligently working. The husband-and-wife owners and bakers were in house and working! I was just in awe of the operation. Lovely staff, lovely vibe, and amazing treats. We had a ham and cheese croissant, a quiche, and some cookies. We also enjoyed a cortado and a latte. Everything was perfect, the lamination on the croissants was beautiful, the variety and uniqueness of the foods was awesome, and the service was just awesome. The owner talked to us for a bit too (Billy?), I had so many questions. I felt bad I was taking him away from his staff, but just what an inviting place. There were a few tables, very intimate setting, very clean bathroom, plenty of parking out front and in back. Just all in all - YOU MUST STOP HERE. The bread looks phenomenal! Huge loaves! I discovered this little bakery while staying down the road in Windham. It's very cool to see businesses like this popping up - and the best part is that they're busy! It shares a parking lot with Yolked and is only open Thursday - Sunday. I went in on a Friday around 11am and almost everything was already sold out. I returned Sunday for a full loaf of sourdough and some pastries. The sourdough is big and beautiful, not too crusty, nicely hydrated loaf. The croissants were very tasty. But if I'm nitpicking, I think the ham and cheese could be improved if the ham inside steams rather than crisping - it gets rubbery and not that enjoyable to chew through. If bread is simply a delivery vehicle for butter, then Waxwing Bakery makes the best delivery vehicles in the area!! I stopped in yesterday and picked up some chocolate croissants, regular croissants, a sourdough bread and a chocolate chunk brown butter cookie!! The croissants are light and VERY flakey, just like they should be! The sourdough has a thick, hearty crust and an airy inside. Both are perfect butter delivery vehicles!! The cookie might be my new favorite sweet treat! If you live In Windham you need to stop in!! Been wanting to give Waxwing Bakery a try but I just don't get early enough to do so. My stepdaughter bought a box of goodies and brought it to my house for us to share. The croissant was flaky and delicious. I also loved the jalapeño cheddar scone. The rosemary biscuits are interesting and tasty. This bakery is exceptional! So unexpected to find a place like this in Windham. They clearly take pride in using great ingredients (many of them locally sourced!), following seasonal flavors, and using the utmost attention to detail in their lamination and baking. As many have said, it's important to note that they sell out of their best things early, especially on the weekends. Your best bet is to arrive before 9am. You will be rewarded handsomely, I promise! Some things that are not to be missed: whatever their seasonal rotating danish is (both savory and sweet are delightful), the ham & cheese croissant, cheddar jalapeno scone (like a super tender and flavorful biscuit!) and my personal kryptonite - quiche. Waxwing's is in the top three quiche I've ever had and I've had sooooo many quiche. They do sell them whole if you really want to impress at a brunch gathering! Speaking of selling whole - they do pre-orders for pies and cakes around the holidays, and they have big beautiful loaves of things like sourdough and challah. You can also get a 1/2 loaf of sourdough if (unlike me) you have some restraint when it comes to bread. Their coffee is really freaking good - I'm a sucker for their pumpkin spice latte, which they have begrudgingly put on the Fall menu, much to the delight of us basic witches! Everyone here is kind and patient, even when I'm staring into the case of goods with my mouth hanging open, practically drooling, trying to decide what NOT to get. I will say that everything here is priced according to it's quality (not cheap), so it is a splurge to come here. But it's worth every penny. Now go! Great service! Friendly, fast and very welcoming owners!! Cute cafe style set up. Not great for large groups of 5+, however it was perfect for my group of 3. We were able to grab a table after some folks left and we comfortable sat for about an hour, enjoy pastries, hot beverages and each others company. Super laid back place. We got a little loud while laughing but the people around us didn't seem to bat an eye. The baked goods here at 10/10 - wow!! They know what they are doing. Croissants - buttery and flaky, banana bread - perfectly cooked, the hot chocolate was creamy and delicious and had a beautiful heart on top. I bought food to go, because I was so impressed. The loaf of sourdough - YUM. They are happy to answer any questions you might have about the ingredients, flavors etc. Parking - be sure to park in front of the bakery - parking that is labeled for other businesses or located in front of other businesses are not for general parking...one of my friends was "yelled" at by a neighboring business owner/worker I can't wait to go back! What a great addition to Windham. Already appears to be a popular spot considering the place was packed despite snow. But honestly would you let snow stop you from getting delicious homemade baked goods? Both the people working were friendly and welcoming! They have coffee and tea offerings with their coffee being from Tandem. But the appeal here is clearly the baked goods. As soon as you open the door and step in you are greeted with pleasant smells of freshly baked deliciousness. All of the offerings are displayed for you to pick from and with all the choices good luck picking just one thing! My wife wanted their Blueberry Lemon Scone and I got their Apple Danish. Both were perfect and I would get either one again but will definitely return to try even more. If you are looking to enjoy the food and drinks here they have roughly 4-5 tables and a window bar/counter with 6 or so stools. So make sure to get here early especially on weekends! FINALLY. Somewhere on 302 where you can get a GOOD latte. Both the hot and iced latte were excellent. The flavor syrups are add your own. Finally visited Waxwing this past weekend to pickup a birthday goodie for a friend. I grabbed a whole load of sourdough and a couple of cookies to go. The sourdough had mild sourdough flavor and a lot of holes (air bubbles) but remained soft, even days later. The holes/air bubbles in the bread did make it hard to toast and butter because the butter fell through, as well as the cheese when I made grilled cheese. I'm no bread expert, maybe this is normal, idk. I will purchase again. I want to visit again to get some fresh Tandem coffee, from the convenience of Windham. Staff was friendly, tables were filled with customers with sort of a bustling vibe. I hope they do well. read more

I wish we could do half stars. This is a nice spot! It gets VERY busy on a Sunday morning and they only have about 4 tables + a window to sit at so it is possible to snag a table but could be tricky. The Pastries were a delight but on the pricy side which is probably why I couldn't give them a perfect 5 ($7 for a croissant is just high). I did get the hazlenut chocolate one so maybe that was why - and they sold out of those VERY early. Also got the raspberry danish which was good. My husband got a sausage roll which he said "had maybe too much going on" whatever that means. I moved to Windham recently and discovered this bakery by chance. They are not open every day of the week and they are not open late, however when I've gone inside there's always been people sitting at tables or ordering at the counter. I've tried a few things and always come back for the bread. You can buy half a loaf or a whole loaf. When I take the bread to a family meal, it's the one food that is devoured first. There is nothing as satisfying as a slice of bread from a loaf that's been made with care. I can't even buy grocery store bread anymore. My favorite is the seeded sourdough. Give it a try. This might be my first Yelp review, but I was inspired by how amazing this bakery is. We sampled the sausage roll, which contained a hefty sausage and covered in everything seasoning, a hazelnut chocolate croissant, and an apple streusel danish. All were made with an amazing laminated dough which was airy, crispy and buttery. I'm so excited to return back and try more items. The best food you can get in Windham, there isn't anything here that isn't delicious. I can't recommend them enough. The staff is extremely friendly and everything is reasonably priced. Plenty of rotating options to choose from. They gladly take advanced orders and always do a great job. And don't be intimidated if there is a line - it moves very quickly.
