Local "chefs" will overcook it 99.9 percent of the time as to prevent salmonella (not just a rock band folks). Grilled Chicken needs to be removed from menus especially if they are getting John Tyson's pumped up breasts. Sanderson Farms is a bit better but not much. Stick to Burgers. Keep a simple menu and be dang good at a few things, burgers, fries, and perhaps hot dogs and chili's. That's it. Expanding menus especially in this day and age with fake inflation leading to restaurants implementing fake shrinkflation your already slim chance of succeeding is almost a Dean Wormer zero point zero. Stay simple Mr. Moody. Do a few damn things great and get out of the chicken business, there is enough of that everywhere. Hell Taco Bell has chicken nuggets now. Know your role sir.
