I grabbed a few bottles that I had been looking for (no unicorns) but this place really had a decent selection for it being a smaller store. At least for whiskeys where my expertise is. Downstairs they make the cheese and customers can watch (that's my understanding, they weren't making cheese when I went) and upstairs is the old equipment for contrast and a small exhibit for additional information. Though the equipment is modern, the process is the same (along with any additional safety/food inspections). It's a great living example of bringing the past to life and promoting making local food as they also use nearby dairy supply and create in house. The cheese is on the more expensive side compared to what you can get in the grocery store, but they had several different Vermont Cheddar flavors. They had samples out, and the smoked cheddar won us over. We also got some beef jerky to pair with it, and the cashier gave us a plate and bamboo knife to eat right outside at a picnic table. I would definitely recommend a metal knife in the situation to get through the wax covering, but the wax is nothing a little sawing can't break through. The cheese is fresh and creamy with that great layer of smoky flavor. It's an upscale cheese and very flavorful. If I was able to take more to go, I would love to try a lot more of the flavors. I'm not cheese expert, but if you want that authentic Vermont cheddar, it doesn't get more real and delicious than this.

I've been here twice and each time, I've enjoyed both. First time, I ordered a Founder's Margherita-style pie and a flight of beers. I like dark beers so I ordered the Irish red, the Mexican dark lager, the Irish stout and the milk stout (see my photo). All were terrific! I really Liked the Mexican with its surprisingly smoky overtones and the Irish with its classic dark stout flavor profile. I ended up ordering a stout with which to accompany my pizza afterward. As for the pizza, it was very good! They have their own Neapolitan-style pizza oven and the pies are served in the traditional Neapolitan 12" size which keeps these pies from being soggy and floppy in the middle. The crusts were perfect! Also the sauce was very tasty and not overly-sweet nor too salty in the least. Additionally, the cheese was high-quality with just the perfect amount applied, too. Huge basil leaves also adorned the pies for that signature Margherita flavor. The service was prompt, efficient, friendly, polite and attentive. Only reasons for 4 and not 5 stars is their terrible chairs! They're those awful, trendy industrial-style ones that are uncomfortable as Hell (also, see pix)! I sat at the bar the first time and left before I wanted to due to having to shift around on the stool so much. The table chair was a bit better but not great. I seriously do not know why restaurants feature these horrible things. Also, it ain't cheap. First time there, nearly $60 for a flight, a beer and a pizza after tax & tip but hey, welcome to Manchester, VT. All in all, it's a great place and I'll definitely be back again for their delicious artisanal beer and very good Neapolitan-style pies.
