I come here about once a month but my experience yesterday just proves why this is such a great place. I came in with about 45 min before we had to be somewhere else which is usually a decent amount of time. It was a little busy so it took about 20 minutes before we were seated and my boyfriend's bowl came out. I noticed that my number was called but when we went up my bowl was not there. We asked the guy in the window if it was there or just a mistake and he said he had put it out and asked to see our receipt with the bowl number. He looked at our receipt and then went around the entire restaurant and found my bowl and the person who took it! (It was an accident, still frustrating). He told us that I could remake my bowl at no extra cost, but by that point we didn't have enough time to wait for it to cook and eat. They refunded us and brought over an extra side of oranges and gave us three drinks for free, which is extremely generous considering it was not their fault at all. I was bummed by not getting my meal but very grateful that they cared enough about my experience that they wanted to make up for a mistake that they didn't make. There are coolers filled with the most desirable ingredients from proteins like sliced beef, chicken, pork, shrimp, fried eggs and boiled quail eggs; plant ingredients like lettuce, Napa cabbage, spinach, watercress, bok choy, bamboo shoots, sliced lotus, bean sprouts, etc. There was also all manner of tofu skins, fried tofu, tofu cakes, as well as fish cakes, noodles that arranged from white flat noodles to clear vermicelli noodles and ramen noodles. After filling a large bowl with our desired ingredients we took them to the register to be weighed. At that time we could pick whether we wanted a vegan broth or one of the other beef, chicken, pork, etc based soups. We were served really fresh and delicious oranges alongside the soups that were being stewed. We were also able to get soft ice ice cream at the end of our meal. Appreciated the condiment area that allowed us to have access to fresh garlic, sesame oil, chili oils, cilantro, green onion chopped, peanut sauce, etc. The ingredient bowl is priced at $16 a pound. And the average bowl seems to generate about a pound and a half to 2 pounds. I was excited to try this new "hot" spot (ha ha) as I've been to traditional hotpot restaurants before but not this buffet style. The location for this particular spot is in the Lake Hills part of Bellevue which I'd never been to before. I noticed they have other locations in the Puget Sound area also. When we went, it was super crowded. A kind person informed us of the process that you fill your bowls immediately, then pay, then get seated, then pick up your cooked bowl. There's an instruction sign up front for those who notice it (we hadn't). The buffet options are right up front and they have every kind of seafood, meats, noodles and veggies that you imagine. I loved the large variety offered as I got to try so many things I hadn't seen before. The mushrooms, for example, were super intriguing to me. I tried all of them! I also loved the sauce bar which allowed me to make my own sauce combinations with many options. It's pretty easy to go overboard on filling up your bowl as these items all look so good. My bowl ended up being like 2.5 pounds on the scale. It was cooked in a reasonable amount of time and I ended up taking home like half of my dish for later. The soft serve ice cream at the end is a nice finish to the hot and sometimes spicy meal. Our only negative experience here was the cold temperature inside as both sets of doors were constantly being opened and when closed, they still let in a freezing draft. Maybe they can add a windbreak outside of better insulate the doors or add a heater? This place was also very crowded everywhere and we almost turned around and left after seeing the big crowd standing and the overflowing tables of customers. Usually I go for the regular beef broth but I've found it to be a little too salty the past few times so I went for the chicken. First time having it, and it won't be my last. Decent variety of soup base flavors. I got the classic extra spicy (to which the worker was concerned for me, and rightfully so! But I wanted something super spicy and stomach-pain inducing, and I got just that!) You pay, then stand in another line waiting to be seated. Positives: The food is delicious, the amount of inclusions is great, and there's a soup base for everyone. The staff are on top of clearing table quickly and the sauce bar is not just generous, but helpful for families with its variety of bowl sizes for sharing. Negatives: The greens were huge. It felt like nothing was cut up, and for soup you don't really want to have to take a bite of just cabbage. The labels were small and light, so I had to read a lot of them for my mother. They use a system where they call your number, but on a Friday night the talking noise made it hard to hear if you weren't standing by the sauce station. Personal: We weren't a big fan of the system. On a slow night it wouldn't matter, but they have you get your food first and stand in line to wait for a table. I get in theory this helps quicken things since your food can cook while you wait, but what if it's done before I get a table? If you get a drink you're also standing there with a cold drink in hand. Definitely a great place to get all your nutrients. After assembling my bowl, I took it to the register and have it weighed. (FYI 15.99/lb). I also chose a broth and decided to try their chicken collagen broth since it wasn't spicy. After paying, I immediately went to the sauce bar to build my own dipping sauce. I noticed this restaurant is mostly serve service, which is fine so I don't have to worry about tipping. Once my order number was called, I went up to the pickup counter and retrieved the finished product. Overall, the broth was very flavorful and the ingredients I placed inside made it taste even better. The dipping sauce complimented well with the meats and veggies. I'm guessing the difference was the oysters, since seafood tend to go bad quicker and that's the only things I had that other people didn't have. Near the pick-up window is a self-serve table to make your own sauces and for utensils. Food: for my proteins, I got mostly lamb and beef. The lamb was not gamey and meats were not overcooked. It was very easy to just grab things and put it in your bowl until you realize that cooked up it's a lot of food so bear that in mind! This place is located in Bellevue and they have multiple locations such as Tukwila and Seattle. Personally, I went to their Tukwila location and absolutely loved it! Wanted to try their Bellevue one this time and see how it is. The food was very limited compared to Tukwila's, it was a bit unorganized and very unappealing to choose the toppings. If you didn't know, it's a place where you can pick your items and then pay for what you want in the bowl at 14.99/ a pound. Food overall was super cheap at just $10, and it filled me! It tasted delicious, however I asked one of the staff for an ice water without lemon because they only had lemons water from the dispenser. And I watched him grab my cups and fill it SINK WATER! I am not a fan of tap water or unfiltered, let alone its in a kitchen sink full of raw cut up meats. Which is where I rate this place 3 stars. Parking was extremely crowded and very tight parking in a plaza. I wouldn't come back to this location from the low quality of times and limitation, as well for their sink water.
