My fav custom sauce. 2 parts vinegar, 1 part soy sauce, garlic, cilantro, crushed red peppers and a dash of sesame oil.

Haidilao is my go-to spot for really solid hot pot. You order everything individually, so it's more of a build-your-own experience, which makes it easy to get exactly what you want. Food is consistently fresh and really good, and the service is honestly next level--staff are super attentive without being overbearing. Prices are pretty reasonable too, especially for the quality and experience you get. Also a nice bonus: free 3-hour parking, which makes it way easier to go without stressing about time. If you're looking for a reliable hot pot spot with great service and a fun, customizable meal, this place is hard to beat.

I love this Haidilao location for their hotpot but I'm kind of confused on their pricing. I went here on June 19 with a party of 4, for their meat o clock promotion. We did not get anything extra and our total come out to $100 excluding tip. Last night I came here with my boyfriend for the meat o clock promotion again but our total came out to $80, no extras and excluding tip! Despite this confusion, their service is always top tier and inside is always clean! I still recommended this location but be wary of their pricing and maybe keep your receipt!

We came here for late night all you can eat hot pot deal. We were very hungry after concert and saw their ad about 19.99 for AYCE hot pot and decided to give it a try. We ended up paying double as All soup base cost about the same price like $18 and you only have 5 choices of meat to choose from. I am also not sure if the meat quality deteriorate when we come later in the day but the meat we got was definitely sub par from any other hot pot places we have been. I have to say that the service was very good and the staffs checked on us multiple times to make sure we are good. Maybe also because we came late, there were a lot of loud screaming in different tables. I understand Asian restaurants are louder in general but this was another level. I hope their normal menu is better.

Came by on a Friday night to check out the Meat O'Clock $19.99 AYCE deal that's available before 5pm on weekdays and after 9:30pm everyday. I've been to several Haidilaos before, and this store was just as well-maintained and clean as others. We waited ~one hour around 9pm, which was long enough that we got a free order of wagyu. I also always appreciate the snacks that are available to the people waiting in line at all Haidilaos I've been to. The tl;dr is that I don't think I'd opt for Meat O'Clock again, as the available meat options (Australian lamb shoulder, Angus Beef Short plate, signature marinated beef tenderloin, marinated basa fish, white prawn) didn't taste the best. The fish especially had a pretty unpleasant texture. I thought the best thing we had was the wagyu that we got for waiting in line! Also, you have to pay separately for the sauce bar and the soup base, so the $19.99 ONLY includes the meat and nothing else. I think I'd rather pay more for the more premium cuts of meat next time. The free parking with validation is very handy, and the service was as friendly as always, though it was really busy on a Friday night, so it did take a while for our waiter to come by.

Haidilao in downtown Bellevue is our regular hot pot spot. We come here whenever we're in the mood. There's a garage in the same building and you can validate your ticket for free. Street parking or the Safeway garage also works fine and it's a short walk. If you are not familiar with hot pot, the servers will happily walk you through. It can get busy during peak hours and weekends, so it's better to plan ahead. The menu has a lot of choices. Different meats, soup bases, veggies, noodles, so you'll find something you like for sure. If you don't want anything spicy, the pork bone soup is a safe pick. You do pay extra for the sauce bar, but it's unlimited and comes with side dishes and dessert. I always mix my own sauce and make the jelly dessert. For the meat, I recommend getting the premium cuts if you're picky. Hot pot makes the difference in quality really obvious since you're just dipping it in the broth. Prices are on the higher side, especially if you want to leave full. It's also better with more people so you can try more things without overordering. Overall, a solid spot we keep coming back to.

How have I never been here before?! This came as a highly anticipated recommendation from my host family for the weekend! I've worked in restaurants and hospitality for a substantial portion of my life and these people get it! They were so nice, communicative, helpful and always ready to help! We had a birthday and it was so fun! They brought us toys, blanket for the baby and gave us a noodle dance (blew me away! Must order!) The food was awesome, the sauce bar was epic and the fridge of self serve ice cream and snacks was a great touch! I'm used to AYCE for this type of experience but the quality was great and did we order a little too much? Maybe! The spicy broth was killer and the food robot was pretty cool!

2026: Long waits are common: something for your trouble

This time my wife, daughter, and I came for lunch at this popular hot pot restaurant. It's been a while since the last time I was here, so was interested in what has changed and stayed the same. What's clear is that they continue to refine their experience. It's a very completive market for hot pot restaurants in the Seattle metro area, and it seems as if they are doing well, for good reason. My daughter made a reservation for 11:30 on a weekday. Free parking is available with validation in the same office building as the restaurant. We waited outside for our reservation, and a server came out, seating us a bit early. She spent time with us to explain our set lunch options: for $19.99, one can get an AYCE, but nothing else comes with it (no sauce bar, no vegetable tray, and most importantly, one must buy the broth separately). Thus we went with the fixed price option ($24.99). The broth comes in a pot with 4 separate areas, allowing up to 4 diners to pick different flavors. One broth choice not available before was the Pork Stomach and Chicken Soup Base, which is what I went with. I really liked it. It came with small pieces of tripe along with pork ribs, and the flavoring was excellent. Every single item in the Mixed combo vegetable tray (no substituions) were things I enjoy in a hot pot. My favorite was the deep fried tofu paper, and I ended up eating everybody else's share too. The set lunch comes with a drink...canned soda mostly, but I wanted to try WangLaoJi Herbal Tea choice...way too sweet for me, undrinkable. The meat came next, and the quality continues to be good here. It is thinly sliced, and served frozen so easier to handle with chopsticks. The combo comes with one meat tray, selected from 5 different choices (pork, beef, lamb). We got the Kurobuta Pork Tenderloin, and angus beef short plate (x2). With the strong seasoning that we used, it was more about the texture and amount of fat in the slices. The sauce bar seemed to have been upgraded. Not only did it have the most type of different sauces I've seen, it also came with fresh fruit and small bags of chips, and freshly fried shrimp chips. Dessert consisted of cheap, single serve ice cream cups which I haven't had for a long time, along with more chips. They use the server robot to deliver the meat tray, but one must wait for the server to put it on your table. It's a bit confusing, and could see a newbie trying to self serve. One thing that did impress us were the bathrooms: single use mouthwash, and personal (disposable) toothbrushes and combs were provided for folks going back to the office. With all of these different choices, the pricing could have been so complicated and hard to verify. Instead, it ended up being the quoted price. Love that!

We waited nearly 2.5 hours to be seated on a Friday night, so we were VERY hungry by the time we were seated. We opted for half-mushroom base, half their spiciest sichuan base. I really really enjoyed the mushroom base and the sichuan base was a little too much for me. I found the ordering experience seamless and easy. And the wait staff was constantly on the move supporting with orders. All in all, a very active and good experience (minus the wait). Unfortunately, we were all too stuffed for dessert, but we saw a couple of folks enjoying little cups of ice cream.

Finally my first Haidilao in the U.S.! I have to say, after trying so many hot pot places in China and here, Haidilao is surely the most fun one. Their staff were seriously the best, super friendly, helpful, and attentive. We came on Super Bowl day because I know this is probably the place where I wouldn't run into an excited crowd, so that was good for me. And I liked how they were playing Tom and Jerry in the restaurant. For the soup base, we went with the spicy soup base and the curry soup base. The curry one was beyond my expectations. It was creamy and flavorful, so good for noodles and udon. The spicy one was fine too, but I learned my lesson the hard way, please don't put crown daisy in it, it absorbs the spiciness like a sponge. I also had some beef and beef aorta, they were usually my go to protein dishes for hotpot. I loved to cook them in the spicy soup. I loved their sauce and snack bar, everything was displayed and arranged so clearly. I tried the fish skins for the first time, it was chewy, crunchy, and spicy, i think it was good. Again, I'm not the "I only eat chicken finger" kind of person , I'm the one that eat chicken feet. I made a sweet yet refreshing brown sugar jelly to finish my meal. It was a fun dinner! The only thing I wanted to complain about was that when we left the restaurant, I noticed one of the screens was playing a program from Turning Point. Like, what the actual f*ck was that? I hope it was just someone who doesn't know English randomly choosing a channel, and not something done on purpose.

I have been to this location a few times and I would say this is my preferred location in Washington due to its location and parking availability. Parking is an indoor parking garage that you'll need to validate inside the restaurant. Today, I came to eat the Meat O'clock deal which is $19.99/pp and $9.99/child. The meat options available in this deal are AYCE angus beef short plate (my favorite), Australian lamb shoulder, white prawn, marinated basa fish, and spicy marinated beef tenderloin. Currently, they added A5 Waygu chuck roll to this deal but it's one order per table. This is only for the meat mentioned so everything else is extra, including the sauce bar. The place is always clean (including their restroom) and there are plenty of seats. There's moderate lighting, not too bright and not too dim, but there are neon lights on the wall. All of the seatings are booth style, which I like. They offer you an apron so you don't splash food on your clothes but they do occasionally run out of them, depending on how busy they get. Thus far, I have never had a bad service here and always appreciate the staff for their kindness and attentiveness. If you're new to Haidilao then I recommend looking up their "secret phrases" so you, too, may get a gift! They also offer free snacks while you wait and ice cream to take on your way out. Anyways, I recommend this place and it's always fun to go in a group. Although it can be pretty pricey so don't come here expecting to not pay much .

Service was extremely attentive and kind the whole time despite being very busy. To be completely honest I don't get the hype of paying so much for hot pot, especially when places like ygf and fy exist but maybe I just don't get it. But everything was very good and good quality!! Cozy seating and despite having a lot of people not too overwhelming.

It's been a while since we've been here. Decided to check it out since we were around the area and it was a holiday and luckily they were open. This time, I parked in their garage. I had a hard time getting a ticket. The machine ended up not giving one so I just went in. It was late anyhow. They have their usual enormous connect 4 game while you wait. They have someone help you join the wait list. They will text you and you can see what number you are. That's something that is new for us. And I saw that they have a banner saying that if you want for an extended amount of time, you can be comped with items. Unfortunately, we were only a few minutes away from getting one of the items. They have a nice array of snacks and a drink while you wait. It took almost an hour. The restaurant is bright and you can literally smell the soup in the lobby. The bathroom is clean and stocked with toiletries. They give you an iPad to order your food. The food came pretty quickly. I ordered the mixed trays because I thought it would be more economical. For 4 people, it was about $150. We opted for the sauce bar. They have a good selection when it comes sauces - spicy, spices, condiments, crispy, sweet, vinegary. You can be your own mixologist. It's a tight space! It was busy for a late night. They have specials late at night too. We had a great time and dining experience.

Can get it grilled and fried. Fried is ~$4 more. This fish was around 38-39/lb at the time of writing. Flavors were so great! Not a bony fish at all and didn't have to really pick at it. A tad dry in certain parts, but again, nice salty, zesty from the lemon and herbaceous. This place is definitely on the $$$ side, so can see ppl coming here for special occasions.

Everything tasted fresh, especially the Dungeness crab, which was clean and well-prepared. So far, this is the best seafood combo spot!

It's nice that Crawfish Chef is fairly close to where I live. My party of 5 came here at 1:45pm on a Sunday. Parking was plentiful at this time in the strip mall. I was surprised at how many people were there considering it was just past lunchtime, but we were able to get seated immediately. The menu has the usual Viet-Cajun flare, where you want to eat seafood boil or items cooked from the kitchen. I noticed that there was the option to order headless shrimp for those of you who are squeamish about shrimp heada. I ordered a pound of head-on shrimp with added corn tossed in House Sauce at Medium Spicy. The shrimp had nice texture, the corn was sweet and the sauce was pretty decent. We were provided gloves which was very nice. The server was very attentive and refilled my drink when she saw it was getting low. Overall, we had a nice experience and thought this place was pretty solid. If I had one suggestion it would be to have a stock of wet naps considering that this is the type of establishment where you eat with your hands and there is no sink outside of the bathroom.

Experiencing their dry-aged fish Omakase offering in person this week was a reminder of why I enjoy purchasing from Local Market whenever I'm on the East Side. The owner Mark is incredibly knowledgeable, down to earth and willing to answer any silly question you may have. His passion for his craft is obvious, and this company deserves nothing but the best!

But this is a really upscale place and assume the place runs at full capacity during dinner hours. There is parking under the building and you can get your parking ticket validated by your server before leaving - so no stress with parking in downtown. Yes, this is an expensive place but since we were here during lunch hours, we were able to take advantage of the Executive Lunch - Set menu for $45 per person. Among us 3 people, we were able to taste everything available in that set menu and every single dish was amazing - like truly, from presentation to flavors, especially the 3 appetizers - so so very good! Eggplant dish -berenjena criolla 5/5 -- favorite dish of the day. Love that you can still taste a bit of the fried texture on the eggplant and flavor was nutty, creamy, and citrusy. Achupado 3/5 - this was a good dish, there was a variety of seafood and they were all good except for the octopus. That was inedible. I wished they cut it to smaller pieces so it can be eaten easier or give us a knife but as is, it was way too tough and chewy. Flavors was spot on, I do wish they gave more noodles to absorb the sauce Ceviche tasting - 5/5 love the variety. All of them was fresh, tangy and flavorful Complimentary corn - 5/5 this was addicting Service 3/5 : our server was very knowledgeable, he gave us a little of a tour of the menu, cam check on us a couple of times. However, I wish he would have clearly explained that the executive lunch was for the whole table, not just individual. Also, cleaning our table while we are still there is a bit rude in my opinion, almost feel like they are rushing us out. The place is fancy and very very pricey. Good for special occasions or once in a while splurge.

We did a belated Christmas gift exchange with friends recently and our friends made reservations here. So glad they did! It's literally right down in the main Bellevue Square hub, so we were able to easily park at the mall and make a short walk to Castilla. Vibes were perfect with low lighting but still a bustling atmosphere. Our server (unfortunately forgot his name) kept solid recommendations coming all night and was so funny and personable! As this is a tapas spot, we tried quite a few dishes and split them amongst the table. Mixta Paella: our server promised us that the smaller size paella was good for 2-4 people and man he was RIGHT. The portion was absolutely insane and I don't think we even finished all of it. Everything tasted so fresh and there was so much flavor to the dish. They warn you ahead of time, but plan for the paella to take 30 minutes for them to prepare. Grilled Octopus Leg: Every time I have octopus (which is two times now LOL) I'm a little worried about the texture, but it was prepared beautifully here and the sauce that it was in was delicious. Salmon & Artichoke Dip: I'm a sucker for any type of artichoke dip and this was no exception. Creamy, rich, and great flavor! Beef Medallions: Tender and cooked to perfection. Definitely recommend. Chorizo & Onion Empanada: Another banger. So crispy and the filling was so good! I actually was on the fence about this one but my husband insisted, and it was a good choice. Patatas Aioli: Crispy layered potato with a garlic aioli? I mean, come on. You can't go wrong. Delicious. This was our first visit to Castilla and I'm sure it won't be the last - would definitely return if I'm dining up again in Bellevue!

I had made a reservation in advance by phone. When we arrived, however, the restaurant told us they could not find our reservation. While mistakes can happen, the interaction felt dismissive from the very beginning. After we were eventually seated, we were not given menus, even though other guests around us received theirs immediately. We waited and asked multiple times but were still left without menus. Eventually, I tried to get the attention of the front desk and asked for a menu. Instead of helping us, the owner came over and told us that we were being "not polite" and that because we were "not polite," we would not be given a menu. Wanting to document our experience, I posted a Google review while we were waiting. Shortly afterward, the owner came directly to our table with the review on her phone and confronted us about it while we were eating. I politely asked if we could discuss it after the meal, but was told that we needed to change the review immediately or leave the restaurant. I was honestly shocked. I've never experienced a restaurant owner approaching diners during their meal and pressuring them to modify a review. This was my father's birthday dinner, and the confrontation made the entire evening uncomfortable and upsetting for my family. To make matters worse, after we got home, we realized that one of the dishes we ordered was never served at all, and no one noticed throughout the entire meal. I understand that service mistakes can happen. Losing a reservation, forgetting menus, or missing an item can all be corrected. What disappointed me most was how these issues were handled. Instead of acknowledging the problems, we were blamed, confronted, and pressured to change our feedback. I rarely leave negative reviews, but I believe future customers deserve to know about our experience.
