This was a life-changing experience. I have had celiac for over 8 years. I've tried other gf restaurants biscuits and have tried to make them myself- mine always come out hard like Civil War Tack! Oh my! Let me start by saying that I have seen a line wrapped around the corner for this place; therefore, my expectations were high. I was off, one day during the week, and headed to the Dunkin Donuts on Canal St., when I randomly made a last minute decision to stop by this place. I walked in and I was the only patron?( I am acutally not sure because there was a random lady behind the counter chatting it up with obvious staff who then got her food and left-maybe an employee?! Idk but they must have been off that day). I viewed the menu via the chalkboard on the wall and true to the name, it was separated with waffle and biscuit options. I wasn't in the mood for a waffle, so opted to lean towards the biscuit side. A HUGE turn off for me was the lack of meat options for the biscuits (ie only beef! No turkey sausage, no plant based). I decided to try the egg and cheese biscuit, which wound up being close to $7-8 (pricey for egg and cheese). It didn't take long for my order to be ready and brought over to me-I give it 4 minutes tops. When I opened the box, I immediately noticed that the top portion of the biscuit look hard and upon touch I confirmed that it was hard like a rock-disrespectfully hard. I tried to eat the biscuit and with one bite, I was disgusted and had to spit it out. The biscuit was the blandest and hardest biscuit I have ever tasted- not an ounce of flavor-it was like eating pure flour. The cheese choice was very sharp and it didn't taste well with the flour brick. For $7, they should be ashamed of themselves for serving a flour brick with cheese. I have had better biscuits from the can or fast food places. The cashier was nice,albeit had some issues with speaking-not sure if her first language was English- but she was very friendly and that is a plus with Customer Service. There were other workers in the area, but they were extremely consumed with each other and could care less that a patron was in their brick establishment. The place was clean. I cannot fathom how they have ever had a line outside, unless their meat and butter is all in the waffles! And if that is the case, they need to call it 521 Waffles (and sometimes we use leftovers to burn a biscuit for you). I hope others have a better experience but I want my time and money back! I can't ever see myself remotely thinking about returning here (not even for a cup of water) because it was just that bad. read more

The biscuit is fresh and warm with the nice crisp top and bottom you expect, nicely browned. The inside, as a gluten free vegan biscuit goes, was good. I've never had one like this. The smell and aroma was perfect, the best I've smelt for vegan gluten-free biscuits, as well as the crispness of the top and bottom - perfect. The interior, like I said, was good, but not flaky like I dream about, but it was not dry or grainy. So, I'll take this biscuit over any other gluten-free biscuit I've had anywhere. Four stars because... if you can make a biscuit this good that is vegan and gluten free, couldn't you please try for a waffle? That seems to be easier, right? I do not like to leave negative reviews when it seems people care. When service is not with a smile I tend to not give the benefit of a doubt. Went here 3 times over the course of 2 days to the point where I believe the owner who knew my face after being there the third time was the person at the register. 1. No smile, interaction left me feeling cold inside Likes: 2. Love the fact it was open early as there are not a lot of options early morning in downtown 3 I really like the taste of the coffee 3. Cute place although rather bland and again a cold feeling 4. Smell of the waffles and biscuits cooking was great The bad/average 5. Biscuit was average but crust was excellent around the edges. But in the end the biscuit did not have much taste. I guess that is the gluten free part of the biscuits and waffles..... they are all gluten free. Size was average for the price 6. Waffle was ok nicely cooked but just ok nothing special 7. Butter they serve frozen . Does anyone who serves frozen butter ever try and use it on their food ? It doesn't work, it tears it if you try to spread it, or you have to place clumps around the waffle. Makes no sense why people still do that. Easy enough to take some butter out in the morning from the freezer to get it to room temperature and still not worry about it getting old. 8. So they are conscious about gluten free but don't care much for recycling. Served with plastic utensils, biodegradable paper box for dining in but no recycle bins. I am not big on that just seems like a big miss. Again cold experience. 9. Coffee - while I liked it a lot they give you about 3/5 a cup. Sure they leave room for cream but I never saw anyone need that much room for cream. I came up this morning for a second cup and she said sorry no refills to which I said no that's ok I was just reusing the cup. With no smile she charged me $2.84 for another 3/5 cup. You would think at least in a 2nd cup she would have filled it more and I even ward her say oh I need to fill it up or something to that effect that reminder her she hadn't given me enough after inspecting her first pour. This was the most disappointing part for sure. It is not good service it is cheap service with a cold look. Best gluten free biscuits ever! After only about a year (maybe even less) of being GF, I was already REALLY missing that iconic crumbly, buttery experience of a biscuit breakfast sandwich. So grateful to find 521 because the biscuits are so spot on, you can hardly even tell it's not a standard recipe. Sure, it's a *little* different--there's no way to perfectly replicate the magic of gluten--but I don't think you're missing anything. The big slice of melty cheese, lots of scrambled egg, and yes--bacon (see Bookbinders review for the revised terms of Cultural Meat Exception) between two halves of the hefty-yet-delicate biscuit made for the perfect, filling breakfast. Honestly my only complaint is that they close really early, so when I wanted swing by AGAIN on my way out of town to get another sammy (yes, on the same day), they were already closed! Guess I'll have to make another trip to Richmond soon...honestly, the biscuit alone is worth the drive. So that pretty much concludes the real review, but...I also have to take a minute to acknowledge that I spent a lot of time hate-reading bad reviews on here, because I was really curious what people could possibly fault. To be honest some of these people got me heated. There are a lot of dickheads on here talking shit about the allergen-friendly namesake foods. My friend and I came in for breakfast, and she ordered directly after me. My friend went to ask about her order, and the said they forgot- FORGOT?? What?? I got delivery from here for breakfast and it was bland but ok. We ordered the Chocokoah waffle and the Biscuit Sandwich that had bacon, egg, avocado, and hot sauce. The biscuit was surprisingly flavorless with an odd crunchy texture. If I had to guess I would suspect they used shortening instead of butter in the biscuit, that would explain the lack of flavor. The over all sandwich was not inedible but overall under seasoned. The only thing I could really taste was the hot sauce. The egg had no salt and pepper and cheese was just standard super market cheddar. This was a case of a good idea but poor execution. The waffle was a bit better. Being diagnosed with celiac, i can say without a doubt it is hard to find a safe restaurant to go out and have a nice meal but 521 is my go to for breakfast on the weekend. Almost every weekend I bring someone new and if i can't bring a friend or a family member I come alone because it is just not worth it to miss a week The staff and owner are always so friendly, they will remember you if you come semi regularly! Their hard work clearly shows and they do their best to please despite having a small kitchen. Sometimes it's clear they have a lot of orders to fill (sometimes all at once!) so if you are at the end of the line waiting to order i suggest saving a table before you order because seating a bit limited. Despite this, don't be deterred by the "long" (according to American standards, it's all fresh!!) wait time if there is one because it is definitely worth the wait if you want a light and fluffy waffle or thick bacon and most importantly eggs cooked the way you want it!!! Also, the biscuit used to be chalky i must say but they did fix it recently and it is buttery and perfect so anybody who has been in the past must go for the retry! Mark, a manager i believe recently hired, is the sweetest and came up to me after he made my sandwich to make sure he made my eggs correctly which is ideal to me in anybody who is in a customer service position.
