We ordered the Pulled Pork Combo & the Chopped Brisket Sandwich. Everything was absolutely perfect. Our server, Felicia, did an excellent job of taking care of us & the prices were quite reasonable ( 2 entrees, 2 soft drinks & a side ) for $ 39.21. Carolyn's was close by and had good reviews so we decided to give it a try and it did not disappoint. We were quickly greeted and given menus and offered something to drink. Our server, Stacy, let us know right away they were out of ribs and pulled pork which was understandable since we arrived after 7 pm on a Monday evening. After perusing the menu, we decided on the brisket sandwich, sweet potato fries and coleslaw, and a meat platter with brisket and their smoked sausage which comes with two sides. We also got the spicy nips as an appetizer (sliced jalapeño peppers battered and fried to a golden brown). All the food was delicious and expertly prepared. The batter on the nips was unique and crispy and I tried to figure out what they used, but I couldn't quite make it out. They were really good and super spicy, we loved it! The meats were fresh and obviously of good quality. The brisket was perfectly smoked and had a nice rub on it and the barbecue sauce was delicious as well. The sausage they use was also very good, smokey and lean. It reminded me of a sausage I had when I was a kid, visiting my grandparents in the south. Everything we had was outstanding. So much so that we came back the next night for their brisket tacos which are served on, you guessed it, Taco Tuesday. We got there early the second day so as not to miss out on the ribs. The Saint Louis style ribs, had a nice rub and were perfectly smoked. They were served with just enough sauce so you could leave them as is or add more if you prefer more sauce. The meat was fall-off-the -bone tender, but still with enough bite to chew. The service was great too. Stacy was very helpful and friendly and we enjoyed talking with her. We also met another customer who came back the next night and said he goes there most nights for dinner. We certainly would come back frequently if we lived in the area.

We settled in and placed our orders -- I had a small cup of gumbo and a small red beans and rice, Dad ordered the gator bites, and my wife and mother both went with the shrimp and cheese grits. Having spent many years traveling through seven different states, including plenty of time in Louisiana and New Orleans, I've had my share of gumbo. To put it kindly, this wasn't one of the better ones. It lacked the dark roux that gives gumbo its signature flavor, had very little liquid, and mostly consisted of chunks of chicken and okra over a pile of rice. The gator bites were probably the best thing I tried -- even though I only tasted one, it was quite good. The red beans and rice were decent, with the highlight being the sausage, though there were only three or four very thin slices. I'd love to find that sausage again! The shrimp and grits I sampled had good, creamy grits, tasty shrimp, and a tomato-based étouffée-style sauce that worked well together. The waitress was prompt, the food arrived hot and on time, and overall it was a decent experience -- but not quite what I'd consider a true Cajun restaurant.
