Had a fantastic dinner at Bacán for Magical Dining! The hamachi was incredibly fresh and made for the perfect light appetizer. The snapper was delicious, paired with a Guyanese curry that had just a hint of heat without being overly spicy. But the real standout was the lemon verbena ice cream dessert, it was so creative, and the unique flavors worked perfectly together. The thyme ganache and matcha soil really made the dish. It was so good that if we weren't already so full, we would have ordered another! The service was attentive throughout the meal, rounding out an excellent dining experience. 4 1/2 stars! We came here for our anniversary recently, dressed to the nines and expecting the restaurant to be ... more formal and dressy than it was. There were plenty of people who didn't look even 'business casual' much less the 'dressy' listed here in Yelp. We were seated and got our drink order in ... and waited several minutes. We had already decided on our orders when our server first arrived at the table, bearing menus listing the courses for the prix fixe five course 'Taste of Bacan' menu. (There was also a prix fixe seven course offering, but no menu for it??) We changed our minds and went with the five course offering ... and waited several more minutes for the first course to arrive. (Fortunately, the delays in service ceased after this.) The food was amazing! First up was a Lobster Burrata Tostada, on a little four inch crispy corn tortilla with sweet notes from the passion fruit. Next up was the Florida Snapper, beautifully cooked, with a loose mofongo and fennel shreds, but served on a bed of curry sauce which was too spicy for us. It was at about this point when the Bread Service we added showed up: a good-sized loaf of warm bread, heavily seasoned on top, paired with a chorizo/ricotta spread that I didn't care for. Then the Pork Belly, so soft and delicious. The last entree was the Carne Asada, served medium rare (off-putting to those of us who prefer our meat cooked), but delicious when eaten with the salsa and corn side. We finished up with the Tres Leches cake. I'm not usually a fan of Tres Leches, but this again was superb, contained in a dark chocolate shell, garnished with little chocolate/crispy rice balls. I appreciated that they had zero-proof mocktail options, and tried the El Dorado. I didn't care for it, though, as the drink changed flavors twice as I worked through the layers, and none of them were particularly tasty. The service was wonderful, our server made excellent recommendations and dishes were cleared and water was kept full all night. Oh my word where do I begin with Bacan?! This place is unbelievable, unreal. Not a single dish disappointed. Was here this past Saturday for dinner and from the moment we walked in the customer service was great, the staff made sure to provide a great experience from beginning to end. The dishes we ordered were paired and filled with amazing flavors and their mocktails were fantastic as well. We had the seared octopus, and the lobster tostadas as our appetizers. I could've had 2 more of these 2 appetizers because they were that good. We also had the 6oz ribeye steak which I got with their potatoes which had this amazing sauce at the bottom of it and we had the Florida snapper. Some of our friends got the tuna tacos, the braised duck, and mushrooms which all amazing also. If you have something to celebrate or if you just want a nice amazing dinner you need to go there! Very cool vibes-- walking up, I felt like I was walking into a casino, ha! The staff were all very nice. And the inside felt very welcoming and comfortable. We started with the bread, with the chorizo ricotta spread. They call it a "coca" but I think it's basically a focaccia? Anyway, it was delicious! One of the highlights for me. The Hamachi was also very fresh, light and tasty. For my main meal, I got the swordfish, which was incredibly fresh and delicious. With the Chaufa, basically a fried rice. The rice was good, but very heavy, I didn't eat it all. I'm not sure I'd get it again, but I did like it. Walking out of the restaurant I saw a plate of the carne asada-- I kind of wish I would have gotten that! Then for dessert, we got the tres leches cake. However, it was just SO sugary, that it was too much. between two of us, we couldn't finish it, and it was pretty small. It had its own unique twist. But just way too much sugar in every component. I was very pleased with the whole experience, but wanted something to really knock my socks off to give them 5 stars. If I could give half stars, they'd get 4.5. I recommend you give them a try! I'm very torn with Bacan. First the restaurant is in a great location and has an incredible vibe when you walk in. The service was incredible to start, but slowly fizzled out as the meal went on. The cadence that goes with a tasting menu went completely out the window as the second half of the course took twice as long as the first half. The wine pairing was exceptional, highly recommend it. Now the real problem, the food. The food was good. A couple items were really good. But honestly nothing was great! There is a lot of potential here, but this place is truly bordering on not being worth the cost. I wanted to have a different experience. In fact, this was the first restaurant we experienced once in town because I'd been waiting. It unfortunately was not worth the wait. My husband and I recently dined at Bacan and we had a very pleasant experience. The restaurant itself has a great vibe, boasting beautiful hanging light fixtures throughout. Both the host and our waitress were friendly and welcoming, setting the tone for our evening. I ordered an amaretto sour, which turned out to be the best one I've ever had, and the gnudi for my entree, which I enjoyed overall though I do wish it had been just a tad bit more flavorful (nothing a little salt couldn't handle). Hubby had the carne asada with a side of truffle potatoes, both which he enjoyed very much. The reasons why I'm not giving Bacan five stars is due to their limited vegetarian/vegan options (especially in this day and age) and because some items (I'm looking at you, carne asada) are overpriced for what they are. Who would say no to $60.00 for a three course meal at a Michelin recommended restaurant. Certainly not I, and certainly not when I'm treating a friend for her belated celebratory Birthday meal during Orlando's Magical Dining Month. Bacan, meaning cool or awesome in Spanish, definitely lived up to the hype. Upon entering the contemporary and stylish Lake Nona Wave Hotel and upon making our way to our table at the far end of the restaurant, you're surrounded by eclectic art, design, and architecture. Everywhere you look there is something to behold. And that beautiful presentation extended itself to our evening meal. But an eventual five star meal not only includes what is served but also the service one gets at such an establishment. To the end, our server, Jay blew it out of the park! Having a waitperson who knows every ingredient in every dish and how it is prepared and who has a personality that engages and educates you is a golden unicorn in the server world. Kudos to the management and chef of Bacan for having such a star on your roster! But of course to the food...and drink. The Birthday girl had a glass of PInot Noir and I had a Basil Tai Cocktail which was a variation on the classic Mai Tai served with a blended rum and basil. So refreshing! Then came an incredible Amuse Bouche of Aji Amarillo (Peruvian Peppers) and Octopus, With this starter I knew this was the first stop on a magnificent culinary journey. Soon after, appetizers of Hamachi (Yellowtail Tuna) and Charred Octopus arrived. Marvelous! We both upgraded our entrees with my guest having a Filet and Ribeye for moi. Paired with sides of Truffle Potatoes and Sherry Mushrooms the taste sensation was phenomenal! The restaurant was truly incredible. The ambience and lighting were soft and inviting and the decor felt elegant from the moment we walked in. The vibe was flawless and my friends and I enjoyed every moment of our dinner. Each dish arrived beautifully plated by the Chef. I ordered the snapper and expected a whole fish, but it arrived as a delicate fillet that gave the entire meal a gourmet touch. The cream and sauce paired with it took the flavor to another level. We added the shareable potatoes which were delicious and my friend ordered the ribs and could not stop talking about how good they were. The food here was pretty good, but I agree with a review I saw before going that the food was pretentious for pretentious sake. The drinks were decent, but some of us ordered the same drinks and they looked completely different. Our server didn't seem to know either way and unfortunately it seems the drinks are made at the hotel bar, so there's no way to know. My favorite item of the night was the lobster tostada (so good!). The tequenos were also pretty yummy. The carne asada was good but nothing where I felt this is amazing. Our friends ordered the bread which was yummy but expensive for bread. They also got the octopus and tuna tacos, which they seemed to enjoy. The desserts were probably the least exciting of the night. The citrus tres leches was good, but tasted like a trix cereal cake. Two people ordered the cafe en la niebla and both really disliked it. This was weird because it sounded like a brownie dessert but ended up being like a dippin dots dish, that tasted more like tiramisu. Definitely a flop. Would I return? Truthfully probably not. They were small but I could have eaten 10 of them, they are so delicious. The crunch of the jicama balanced the tuna perfectly. I had a similar experience to another recent review on here with the Chefs Experience tasting course. Things were moving along nicely until we got to the second half of the meal, where the pace slowed to a crawl with no explanation. The food was tasty, but honestly, a little boring and uninspired. The portions were generous but it felt less like we were getting a curated tasting menu and more like half of regular dinner entrees. Our server was great, but everyone else seemed to either be tired, bored, or not on the same page as each other. Overall, I would recommend a return to the restaurant but am not rating it too highly because I would not waste my money on the tasting course again. Got the Florida snapper but didn't think it was going to be fried and was hoping for a grilled or blackened option like other Florida places. The skin was attached and not at all crispy. A bit soggy sad fried whatever dish. Would have been better if they took the skin off and fried it separately and put back on top for an extra crispy skin texture. Also tried the truffle chicken and it was the worst I've had. Not that truffley and quite small comparing to others I've had. Succinct but distinguishably reminds me of pizza rolls Grilled Octopus - Cooked to perfection with a beautiful char, served with vibrant sauces and a hint of citrus. Had I not returned, I would've missed out on the best octopus I've ever had in my life. Delicious all the way this is my first time going to this restaurant after the opportunity was taking away from me last year. One of the most confusing meals of the butternut squash that you see in that small glass container. That was an extremely different taste on my pallet when I wanted to try after seeing him pass out. It was on the house. it was delicious. Our server was a gentleman from Puerto Rico. That was well traveled all around the globe so he knew his menu very well and sold it very very deliciously with his verbiage. The tequenos are new but I didn't love them because the foie gras didn't come thru in it. The Crispy snapper was great. We are actually Guyanese and they did capture the flavor profile of one of our curry types. Branzino is an old faithful item. Ambience and service is always on point. Clau is amazing. Bacan is located in Lake Nona at the Wave Hotel. The restaurant is located on the first floor across from the bar. It's a very cute and intimate area with beautiful decor. I went on a solo date on Sunday and was surprised to see others sitting by themselves; so this place is great if you want to eat alone. I ordered the Agave Oat Brioche, Papas Chorreadas, and Carne Asada. The food is delicious!! My server Courtney was very nice as well at the other servers. I highly recommend this place for a date night. If you want a quiet dinner, I'd recommend going on a night during the weekday or Sunday. Friday and Saturday nights seem to be busy. I was scrambling to get of the couch for NYE and go somewhere to enjoy an extravagant dining experience. Bacan popped up first in OpenTable and I took a shot. The Wave Hotel has a great reputation for creating memorable experiences so I reserved based on their NYE Prix-Fixe Experience. I had the early sitting which was a better option to get be back on the couch before the clock hit 12:00! We were seated promptly for our reservation. I'm glad that I reserved (with card) to ensure we had a spot for what seemed like a hectic night. Our Server was Jason M and he really set the tone for the evening. He engaged us with stories and walked down the menu with experience. Normally I don't like a lot of conversation but he was personable and let us order all of our Prix-Fixe options. He stated this was the best option as everything was prepared when ordered so this method was a better plan. Starting with a few drinks - the Basil Tai was a tropical libation with a hint of rum and coconut. Everything arrived on time and the entire wait staff worked as a team. This means that even if your server is busy, someone else is still attentive to your needs. Now with a Prix-Fixe agreement on NYE, the gratuity was already set but Jason went above and beyond so kudos to him and the team for making NYE special. Bacan is an experience that is worthy of the accolades that they have received. I probably can't afford a weekly dine here, but when I need Michelin dining this will be on the list. Roasted broccoli was delicious also & my salad with the citrus dressing & pumpkin seeds, a perfect pairing with the delicious chicken & papas. We also had the pavlova. It was good, but I'm a traditionalist when it comes to this dessert. Keep it simple. Now don't get me wrong, my sister had it & LOVED IT. However it was her first time eating g this dessert. We got drinks, which looked great, but honestly neither of them tasted that incredible - not sure if it was just our choices or the menu. But, we opted to not get others just in case. The food was definitely a different experience, thankfully. For appetizers, get the lobster burrata tostada, it is delectable. My only complaint is that it is not bigger, because I could have eaten double the amount that we were given. But, skip the octopus, not that its bad, but not as good as the tostada and I'll assume there are other options that taste better. I wanted to try the bread service, on my next trip, that will be an option. Do not skip out on the Short Rib - it is one of the best short rib meals I have ever had. The birria pushes the dish over the top, I would dip anything into that birria, if that tell you how great it was. It comes with arepas; mine were very very dry, but once they were added into the sauce they were enjoyable. We also had the venison, which was also quite good. But, nothing will beat the short ribs. Hubby and I grabbed a last minute reservation at Bacan on a Friday night for an impromptu date night. We expected it would be busy, so we checked in and went to the living room bar to grab a drink while we wait. The wait wasn't long and by the time we had drinks in hand, we were already being called to be seated. We were sat on the patio and had the most amazing team of servers. Our main server, (sorry, I forgot her name I waited to long to write this. But she had a blonde ponytail, she was fantastic) she helped guide us as a knowledgeable and experienced palate to what eat item tastes like. I was in a very indecisive mood so this helped me navigate the new menu. For appetizer I was between the pierogi and the croquette, and she recommended the croquettes as seen in the picture. I thoroughly enjoyed them as they were crunchy on the outside, soft and cheesy in the middle with salty bites of ham. Now that I know for a fact she is understanding my palate and preferences, I found myself again at a crossroads between the birria short ribs and the spiny lobster tail. Two very different directions. She pointed me to the birria short ribs as "Thee Best Item On The Menu", in her opinion, and so that's what I went with. Although I haven't had the entire menu, the tenderness of the short rib, the savory flavors of sauce and the Oaxaca queso filled arepa was just incredible. Each bite was melting in my mouth. Eventually, I'll circle back to the lobster, but that birria will stay on top of my mind. From now until early November, they also have a special experience called the Ozmopolitan. Our servers happily suggested we check it out. The 8 course chef's tasting was fabulous. The pate to start was so delicious with unusual and perfect condiments to go with it. I especially loved the truffle flavored beef small plate and the crunchy, amazing quail. Everything was exceptional, including the service. Jay was our waiter and he was relaxed, informative and seems to love his work! He made a fantastic smoked Manhattan and recommended a wonderful Spanish tempraniello to go with our beef. I've been to Bacan a few times and it is always hit and miss with is surprising for a restaurant that is recognized by Michelin! On my most recent visit, I asked for my steak medium done. However, the chef, sous chef and sever didn't notice that it came to me bloody and blue! The service was very slow that night and by the time the server noticed, he was very apologetic and offered to make me another dish but my guests had already finished their dinners, so I left hungry beacuse i also received the wrong side and my octopus appetizer wwas fishy tasting, so I probably won't be back. read more

All three of my experiences at Bacán have been 5/5 stars. The dining room is beautiful and elegant, but I have to say on nice nights the outdoor seating is a contender as well. They have a few interactive and table side experiences, like their smoked old fashioned, which really brings the service above and beyond. I would definitely recommend Bacán for celebrations as it is easy to spend money but all very worth it. read more

Definitely will return. It's inside the hotel Wave. High ceiling industrial indoor and Amazon outdoor, and the earthy tableware. A slow night on a Thursday at 6pm, then by the time we leave at 7:45, it filled out mostly. Guess I'll never survive in Europe and elsewhere. Love their decor, service and food. The front desk shown me to the corner table, saying that this is her favorite. Mine too, thanks sweetie. The food is pretty phenomenal: Scallops Bronzino (not bone in ... I know I know ...)
