River and stream salmon skin roll was my favorite, crunchy and pack of flavor. Spicy salmon roll was nothing special. Nigiri was normal as well. Service was friendly and helpful. Last 2 times i was here dining in it took 30+ mins to get anything out; And the last 3 times i ordered take out i arrived (intentionally) 10mins after the time they said it'd be ready and have waited at least 40mins after that. Bamboo Sushi is currently a contender for my favorite restaurant in town. The food is out of this world -- favorites are agedashi tofu; the maitake mushroom "small plate"; the crispy garlic tofu and yesterday, I tried their #1 best-selling sushi roll, "The Green Machine". No wonder it is their best seller! It is tempura green beans and other vegetables smothered in a gorgeous sauce which is rich but not heavy and also herbaceous. My fiance always has the chirashi bowl, which he says is delicious and it is priced very well compared to comparable chirashi bowls. The friend with whom I often go can't have gluten and I am pescatarian. The menu is clearly marked to designate which dishes are gluten-free and which are vegetarian. Beyond that, Bamboo Sushi has perhaps the best service in a restaurant I have ever had. Every single server we have drawn in our trips there is knowledgeable, attentive, polite and personable. Don't expect traditional Japanese style sushi. This place has more fusion style dishes. The sashimi looks fresh but doesn't taste like much. The rolls are okay but they lack flavor. Cauliflower was good. Overall, food here is fresh but the food is poorly made and tastes bad. You should pick up QFC sushi nearby if you just want some sushi. I had high hopes for this place BUT... the service was terrible. To start with, we had to wait for a while for our server to come to our table. Finally it happened and we special ordered California roll WITHOUT cucumbers. It took forever for the order to be done and ... it had cucumbers. Soy sauce jar was completely empty and since our waitress was no where to be found, We had to borrow it from another table. then we had to ask for wasabi sauce when all the other tables around us (different waitresses) were getting theirs without having to be reminded. Not once were we checked on to make sure nothing else was needed. And when the bill came, we sure were charged for incorrectly done California roll. I quietly paid the bill and left. I've been to the one in Portland and it was great. More Americanized feels instead of authentic but that's cool from time to time. The server Alex seem genuinely nice and helpful which is what i appreciate from servers the most. The food was wholesome and their fusion twist on things was good!! The place is ginormous too! The host with the dyed blonde hair and fake lashes seemed like the most unhappy and unfriendly worker there though, it seemed like it would pain her to smile and also didn't say one word or anything when we came and just seated us. But i don't think a review should suffer from her plus all the other workers seemed nice happy so i know it's not a work culture issue. Friendly hosts matter! For drinks, we got Walk on Water and a matcha lemonade margarita. You can taste a hint of the miso in Walk on Water. Matcha lemonade margarita would be good for those who like a more earthy taste. I've been here about four times now. I do enjoy their food, it's fresh and beautifully prepared. Usually the flavors are pretty spot on. So far I've had shrimp roll, avocado roll, Little Island roll, vegetable tempura, spicy chicken bowl, friend ordered the burger which he thought was amazing. I think I like their lunch menu better than their dinner menu. On one occasion the vegetable tempura was a little greasy and the dipping sauce seemed a little off it's regular flavor, not bad off, just "off" recipe. Not sure why but the veggie tempura always comes out long after the first sushi dish. It takes longer it would be nice for the waiter to ask you if you'd like to wait and have that come out as an appetizer or if you don't mind coming out towards the end of the meal. The other thing I noticed the last two times I was there with two different waiters is that once you have your entree you never see them again. They never come back to see if you want anything else or how things are. I know the waitress tonight could have increased the tab and subsequently her tip if she would have come back at some point before I was done eating. They've plants thousands of acres of seaweed to help preserve the oceans. Now onto the good stuff - the food. We stopped by for happy hour and let me tell you, it definitely left us thrilled. From beer specials to the red wine blend (a tree is planted for every bottle) to the ultimate piece de resistance - sake on tap, this was the perfect way to celebrate my birthday. I'm really happy that Bamboo is aiming to serve sustainable seafood. However, the execution of the dishes was disappointing. Next time, I will go to a different Seattle sushi restaurant for a better meal. Our dishes tasted if they had sat around before being served. The rice was cold and dry on our rolls and nigiri, our fried shrimp head and tempura arrived lukewarm. Bamboo doesn't provide soy sauce, wasabi or ginger. While, fresh high quality sushi doesn't need soy sauce, the mediocre, grocery store quality rolls at Bamboo are crying out for the moisture and salt from the soy sauce. Yet, the servers seemed to scoff at our request for soy sauce because they believed the food to be good enough to stand alone. I wanted to love this place. I mean, the mere philosophy of it makes you feel good. So what if I used a plastic spoon today, tonight I am having sustainable fish! It's that lazy, feel good slacktivism that my millennial heart can get behind. They work with the Monterrey Bay Aquarium to make sure they follow guidelines that will ensure healthy ocean ecosystems and fish for generations to come. Fantastic. I am on board! This idea of sustainability is admirable and something more restaurants need to do. However, in practice...it's kind of odd. This place is new so I do know that a lot of this could be just growing pains and the fact that they haven't settled into their groove yet. The fish quality is not bad, but the presentation is pretty poor. However, they were real busy so I get it. My biggest gripe is that the sustainability route takes them a little too far. No soy sauce here, only tamari (meh). On top of that, you don't pour it yourself. Run out? Want more? Need to get your waiters attention (3 minutes or so). Ask for it - sure no problem! Waiter comes back five minutes later cuz you are not the only person they are serving. So after 8-10 minutes (or in my girlfriend's case never, the waiter never came back) you can resume eating sushi again. Also, there is no ginger given. Nor wasabi. Look, if you are going to be uber traditional and adhere to old school sushi then sure, no need to have copious amounts of ginger, soy and wasabi. However, if you are going to have western style rolls on your menu (love me a western style roll) you better let me mix my wasabi and soy into this glowing plutonium rod color of green. I donno, they seem to have a 'vision' so to speak but how that is executed is a little odd. You can be sustainable but don't offer tempura rolls and ration your soy, ginger and wasabi. Went during happy hour today (although it's still super pricey) the atmosphere in here is great, and we had nice service from the host and our waiters. Additionally, the drinks were delicious. The food was lacking in a big way though. The chicken karage was very bland and dry. The smashed avocado crispy rice turned kinda chewy and squishy after it cooled, and the spicy salmon roll was honestly bad (did not taste like anything at all, and it was served room temp/lukewarm). We had late lunch around 3, and this evening (past 10pm) I felt nauseated and became ill throwing up. Whether or not it was something I ate at the restaurant that made me sick I can't say for sure but I had only eaten food from home besides the stuff we had here. The sea urchin was fresh! The finish was smooth. They also let me know sometimes they won't serve or let customers order the "uni" if it wasn't up to par that day .
