Tokyo Ganso Aburasoba - IG @bougiefoodieboi

Located in Meraki Tea Bar, this place is relatively new and serves up aburasoba, a type of soupless noodle not really common in the Seattle area (most noodle spots are either udon or ramen). It is a great change of pace to try something less common. I ordered takeout this time as I was not too hungry and can portion a fraction of the order for another meal, and there was a 25% discount so it came out cheaper than dining in. I got the Tokyo Ganzo Aburasoba with spicy oil which has a nice kick. The aburasoba order contains an onsen egg that is perfectly runny, diced pork chashu, green onion, bamboo shoots, crispy onion, and parmesan. Definitely mix it to get the best of everything, with the noodles cooked to a nice al dente texture. There is also a small broth to accompany the dish, as the dish can be quite heavy. The pork chashu has the right fatness. I definitely want to come back to try the more basic aburasobas for the value and simplicity. I am also a huge fan that this restaurant is optional tipping, with zero expectation to tip. Considering that with the base price plus tax of the dishes, it is actually cheaper to eat here than other neighboring dine-in spots, and the food is really good too!

So happy to have been informed of this spot! Love ramen, love noodles, so this is a great low mess option to get that fix. The flavor is on point, yet not heavy. Quality ingredient, quick service. Will definitely be coming back to try more on the menu

Man....... I'm a sucker for ramen in general. Ok no I'm just a sucker for food in general. But anyways.... Yo I love noodles..... and... this place serves great FN noodles yall. NGL, I meal prepped a lot of chicken + veggies this week but got tired of eating the same ol meal with rice every day, so I decided to treat myself a lil and got an entree from slurp station to pair w my protein gainz. Oooooooweeee what a GREAT decision. Man who knew brothless ramen could and would taste sooo ono. You'd think it'd be too dry or whatever, but naw, it was perfect! Make sure to try their signature chili/spice and mix it up real good!

I really enjoy their noodles and the taste of their food, I think the serving size is pretty good too. Their eggs are always perfect and I like how you can customize the vinegar and chili oil to your liking. The restaurant itself is very calm and quiet. The staff let you eat and do your own thing which I really like.

Food - aburasoba is the main dish here. You can smell the rich and flavor filled aroma wafting through the restaurant any time a bowl is served. The dish itself is both salty and savory. Many of the options include eggs, cheese, and onions. All of which are customizeable. They also serve boba, albeit without tapioca pearls available. Service - Sit down and order from a QR code, they'll bring the food to you. Fast and friendly service. Ambiance - A cute cafe aesthetic, definitely a great place to hang out with friends.

Nice low key place, seat yourself with or without your laptop or some companions. You order on your phone but I like that they had the menu at the table with description of the different menu options. The jumbo ramen I ordered was really tasty with chili oil. Pork chasui was tender and had perfect amount of fat. I normally order large for soup noodles but since there is very little soup, the proportion of noodles were larger than I expected. I had some nice leftovers for later. Will be back.

Seat yourself, use the QR code to order. Self serve hot and cold water. It's soupless ramen that you put the vinegar and chili oil in and mix in when you get it. I enjoyed the warm noodles and chashu. When we came, there was parking right in front.

Nice option for soupless ramen. Upon going in you scan a QR code to order and then the food is bright to your table. I went for the Tokyo Ganzi Aburasoba. In your order they let you customize if you don't want something (ex. I always remove onions). Food came out quickly and they bus the table for you. My kids messed up and put too much chili oil on their order but that's easily offset if needed. There are also hot and cold self serve water options.

Went here on a Thursday night. Small parking lot in front and plenty of seating inside. They have a clear sign for you to grab an open table and order from a QR code on the table. I had their signature ramen with a tea. I can see why they have great reviews and ranked among the ramen shops. When my bowl arrived, I followed the instructions to drizzle the vinegar and spicy oil onto my noodles and stir. The sauces gave it a another layer of flavor to the salt/pepper flavoring of the noodles. Noodles were thick and cooked perfectly and chasu had a good balance of meat/fat. I had skipped on the bamboo shoots and nori. The egg was a bit plain though...underwhelming with all of the other flavors. Overall...definitely delicious and worth trying their other flavors! Go check them out!

    Sooooooo good! Simply delicious!

Loved that they have a dedicated parking area right out front. Makes it a convenient location. Food was so tasty! I mean super tasty! I was craving noodles and most are soup/broth-based, but the one I ordered here is not, which was EXACTLY what I was looking for. Flavor and texture were spot on and you can add more toppings (corn, bamboo shoots, chashu, etc) if you want. Will definitely be back!

We came around 2 pm on a Saturday. We ordered Takoyaki, Chicken Karaage, and Salt-Based Aburasoba. We thought the Takoyaki was a bit mushy. I really enjoyed the soft egg in my Salt-Based Aburasoba. We liked the spacious seating and chill vibes. The staff was friendly and efficient in serving our food. They also let me use the Fantuan app to order so I could get an additional discount. Parking wasn't bad--we were able to find free street parking in the nearby neighborhood.

Excellent noodles, meat, and sauce. I didn't know what to expect from brothless ramen, but it's surprisingly a lot like pasta. I ordered the Tokyo Ganzo Aburasoba. With the egg and the parmesan cheese, it reminded me a lot of Italian dishes like carbonara and cacio e pepe! Service was quick, ordered via a QR code. Very easy seating, and I'm happy to say the parking makes it super convenient to come by after work after picking up my kid from daycare. Even though I live right off 45th Ave, being able to drive really makes it convenient in a pinch!

Quiet spot where you just seat yourself and order through a QR code. The sauce is super concentrated, so definitely give the noodles a good mix before diving in, and adjust with spice and vinegar to your liking. I really liked their chili oil -- has a solid kick without overwhelming the dish. Adding vinegar really helps cut through the richness and adds a nice umami punch. Portion size was solid -- a good amount of noodles. Super flavorful overall.

I ordered a miso ramen and my parents ordered the tonkatsu ramen. As someone from the Bay Area, I was so surprised by the richness of the ramen and it definitely beats some of my usual spots. Each bowl was ~$15 and a smaller bowl, so would definitely advise getting an extra batch of noodles. The chashu is melt in your mouth tender. The broth wasn't very salty or over complicated itself with a burst of spices, but highlighted the simplicity of a good ramen, tasting the long simmer of the pork. My dad was honestly pretty pissed circling around the area for an hour for parking, but said it was all worth it, even waiting in a long line.

We walked into a casual, compact space with a mix of counter and table seating that fits the quick ramen shop style. The interior is efficient and well organized, though it can get extremely busy, and the wait times are often one of the biggest parts of the experience, especially during peak hours. Once seated, the space feels functional and comfortable, designed around getting a bowl of ramen in front of you without unnecessary distractions. The ramen is built around rich tonkotsu broth with a lot of customization options. We appreciated the ability to adjust things like noodle firmness, richness, and spice level, which made each bowl feel more personalized. The regular tonkotsu ramen stood out for its deep umami flavor without feeling overly heavy, and the noodles had a great texture that held up well against the broth. The vegan options also stand out, including miso-based bowls with flavorful broths that give non-pork options more depth than many ramen shops offer. The toppings are generous, and the soft-boiled egg was cooked to that perfect jammy consistency. Beyond ramen, the menu has a few sides that complement the meal well, including gyoza that came out crisp and well filled. We also grabbed mochi ice cream for something sweet afterward, a light finish after the rich broth. The seasonal ramen options are worth checking out since they add variety beyond the standard bowls, giving regular visitors a reason to come back and try something new. Service is generally quick and friendly, especially considering how busy the restaurant gets. The ordering system is straightforward, and the staff handles the constant flow of customers efficiently. The team kept the pace moving without making the experience feel rushed, and they were attentive to refilling water and checking in on the table. The biggest downside is the popularity, since the lines can sometimes feel long for a relatively quick meal, but the wait tends to move faster than expected given the efficient turnover. Ramen Danbo is a reliable spot for a satisfying bowl of ramen in Seattle. The customizable bowls, strong broth, and consistent noodle quality make it a place worth visiting, although planning around busy hours can make the experience much better. The balance of customization and quality means you can dial in your bowl exactly how you like it, and the focused approach to the menu keeps the attention where it belongs.

I think 15 minute wait was the longest I heard. We ordered the takoyaki (shared, one piece each) and I got the #1 Homura Aburasoba with an extra piece of chashu. I didn't add anything to mine for sauces. The takoyaki was nothing special, but I got a nice chunk of octopus. Reviews say that they're filling, but I wasn't that full after finishing mine. It's satisfying but almost all carbs. The flavor was good and I liked the hint of seafood through the fish powder, but it comes at a price point that's a tad high for me for what's in the bowl. Would still recommend ordering 1-2 extra Chashu though. I tried my friend's Original Aburasoba and the flavor profiles are pretty different, so the sauces and toppings definitely play a role. The noodles do soak things up. It was a cool experience but I wasn't blown away. I would bring people for a novelty dish once, probably wouldn't come back.
