There's a similar Chinese dish that is used for dim sum and where my love for this dish originated but the thinner the noodle layers the more fluffy the texture usually You can easily tell this place is good simply because the rice noodles are soft and fluffy, if it's not made well the rice rolls will be hard from sitting out too long or it will have a sour taste. In general, you can expect a good banh cuon here because you can hear them making it in the back For my group, we both ordered their #11 which is their assorted banh cuon plate and wow did it hit. The meal was well plated which is kind of rare to see in Viet restaurants where taste is king and presentation is secondary. The temperature of the banh buon with ground pork was warm and the plain banh cuon was room temp which added to the variety in the dish. They provide you with a pitcher of sweetened fish sauce and two bowls at the beginning, this isn't a drink, it's to dip your items into and reminisce on how similar it was to my experiences in Vietnam The dish was spectacular, they were missing some of the fried items initially but the sweetest auntie kept bringing the remaining items fresh from the fryer and spoke to us in Viet (neither of us understood) but she was so proud of the food it made us smile. Stopped in to get their special combo signature dish, Banh Cuon Tay Ho Dac Biet ($15.50), and it did not disappoint. Rice rolls/crepes were perfectly thin with a nice chew, which easily soaked up the nuoc cham/mam fish sauce that is typically poured over. I liked that they had the fish sauce in an enclosed glass pitcher/carafe at each table so you could portion out how much you'd like.
