It is like they made it perfect before they added the salty pancetta to it which took the salt over the top. The spinach artichoke dip was recommended by our server and the flavors was great, but it was more of a creamy garlic dip and it was SUPER thin consistency. Would be great as a sauce over chicken or fish instead, and with a different name as it did not read as a spinach artichoke dip. The fig onion flatbread is more of a crisp and thin cracker, but was overly sweet even with the arugula. The burgers are beautiful but WAY too tall so you have to smash it down to eat it, crushing the bun. The Reuben was great bread and meat but barely any sauce and sauerkraut to really make it a Reuben. Great food quality, pretty space, but everything was just a little off. If I was in the area I would stop by, but it wasn't worth the trip so far off the highway for us.

When the food did arrive, it felt very reminiscent of standard brewhouse fare rather than an elevated dining experience. We ordered the goat cheese flatbread, which was just okay, but the flatbread itself tasted like a standard store-bought crust. The truffle fries we ordered as an appetizer were also just average. The real disappointment, however, was the bar program. The signature cocktail although looked amazing, had a really funky taste--and not in a good way. We also ordered an espresso martini, which was overwhelmingly sweet; it tasted like it was made strictly with coffee liqueur and zero actual espresso. To top it off, it was served with six coffee beans floating haphazardly on top. Anyone who knows espresso martinis knows the tradition is exactly three beans beautifully placed onto the foam to represent health, wealth, and happiness. Getting six crowded beans just felt sloppy and amateur. Because of the painfully slow service, the lackluster drinks, and the standard "okay-ness" of the appetizers, our group decided not to bother ordering main entrees. We paid the bill and left for another dining spot in Castle Rock to finish our evening. It's a gorgeous space with potential to be a hot spot, but the current execution doesn't match the environment they've built.

The time was around 4:45pm. If I am not mistaken, their happy hour is 3-5pm. I thought I was in the middle of the HH rush but there were still plenty of seatings available and yet the place was nowhere near empty. And yet, I found just the right spot so I would be away from all the chatters emitting from the people mainly sat at the bar. The selections for wine (red and white) as well as the tap beers are quite the variety. During the HH time, the drinks are only $5 for beer on tap, well mules, wells spirits and any wine on tap. For a chic/elegant/upscale place such as this place, this pricing offer is extremely generous. I simply couldn't think of anything other than refreshing cold white wine so after getting a little suggestion from my wonderful waiter, I went with the Angeline Sauvignon Blanc (the regular price is $12 so I saved $7.) As much as I am a wine person, I don't go by the rigid rules. White win should generally be served between 45°F and 55°F (7°C to 13°C) and yet at home I chill my (white) wine in the freezer for a bit so it will be super cold. This is a must for me. And to my surprise, when they served me the Sauvignon Blanc it was pretty close to the super chill temperature I am used to. As if they read my mind, I was quite surprised and happy with the cold crisp white wine. It was a quick stop to have a little "after work" cocktail on the way home so I didn't get any food and yet that crisp chilled white wine I was served instantaneously made me a big fan of this cocktail lounge. When I asked my waiter when the place opened. He said it opened in 2019. I simply couldn't believe it. If it's been around for this long but the fact that I recently heard about it stunned me. And if I am not mistaken, the waiter said that another location is about to open in a different area in the Denver metro. It's nice to know that this business is thriving. Good for them.

From where we were sitting (not part of the group involved), I noticed a man becoming aggressive toward another nearby group--yelling at them and eventually shoving someone, which led to a fight. As someone simply watching it unfold, it was pretty clear who escalated the situation. What was most surprising, though, was how it was handled. The owner appeared to side with the individual who initiated the confrontation and ultimately removed the group instead. Later, we heard that the man involved was actually a friend of the owner. From an outside perspective, the group that was asked to leave seemed calm and was minding their business before things escalated. Watching everything unfold--and seeing how it was handled--left a really negative impression. Unfortunately, that experience made the environment feel uncomfortable and biased, which is disappointing because the night had started on such a positive note.

One was friendly, the other, not so much, rather indifferent and made us feel a little uncomfortable and not very welcome. This kind of set the tone for the rest of our night. We ordered the "family share" chateaubriand. We realize this is an expensive cut, but the portion is definitely not a sharing cut, around 4 oz. It is closer to a single entree. When it arrived, the plate was cold, like the meat was lukewarm and the cauliflower was ice cold. Again, we had to ask for silverware and plates for this "family style shareable" plate. We brought the cauliflower temperature up with the server and got new cauliflower after we were done with the rest of the meal. Also, I sat with an empty wine glass and no one stopped to ask if I needed another glass. When the servers did stop by, it was a short interaction and we never even had a chance to ask before they were already walking away. We saw so many people come in and out that they must be doing something right, but for us, our experience was mediocre. If our meal would have been the correct temperature (it was well prepared, just cold) and better execution on the service, we may have had a better experience.

For a bill that ended up coming out to about $80 (had also 2 diet cokes and a beer), this was quite a slap in the face. You're better off going elsewhere for your money.
