    Chicken Chili Relleno
    Dave E.

Great dinner with granddaughter and boyfriend. Wife ordered a house Chardonnay which, as I understand it wasn't a Chardonnay but a white blend and I got the impression it was the only white they had. Seemed odd to me. The wine was okay. She ordered 2 Ala carte Chicken Enchiladas and I ordered the Chicken Chili Rellano SOFT. The crispy version is more traditional but I prefer the softer method. Although tasty it turned out a bit 'soupier' than I expected. Normally my Rellanos haven't included chicken so maybe that's why the 'soupier'. As a result it wasn't the greatest although ranking it as #3 on my top 10 list. The Enchiladas were just okay and curiously they were served on 2 separate plates. Perhaps it was because my wife asked for them ala carte.

First time here. Came on a Friday for lunch. The parking lot is large, so no problem finding a spot. We were welcomed in and seated. I was distracted by the person behind glass making the wonderful fresh tortillas. As homebrewers, my husband and I were interested in what their brew set up looked like. It was behind glass and visible from where we were seated. Always neat to see how a brewery is set up, no two are the same. Dulce took care of us. We started with chips and salsa. The chips were warm and the salsa was fresh with a nice kick. He got a taco plate with ground beef tacos, rice and beans. He paired that with the LDP IPA. He enjoyed his meal. I love Chile Rellenos, so that is what I chose for my lunch. It came smothered with their green chili and with some of those wonderful warm tortillas on the side. I paired mine with their Aqua Fresca, a slightly altered base of their Mexican Lager with the addition of Prickly Pear purée and Key Lime. It was refreshing and tasted like summer. I had half of my lunch to bring home with me. The view from where we sat was beautiful. I would come back.

The service is excellent, the Ambiance is as if you are South of the Border and our food was good. We ordered the Menudo, after taking a couple of bites we added the accompanying spices the Menudo tasted good. We are going to have to come back and sample the diner menu.

Had our first visit to Los Dos Potrillos and a bit on the fence. The staff is incredibly friendly and the building/views are beautiful! It's so nice, bright, and comfortable. I really liked getting to see their brewery set up as well. The food was just ok- I ordered the taquitos and my husband ordered some tacos. The chips and salsa were tasty. I ordered combo taquitos and they didn't come out correctly, but the staff was really great about fixing it for me. The taquitos were nice and crispy and I like that they came with green chili for dipping. My main concern was that the meat didn't have much flavor- not wrong per se, just not great. My husband felt the same about his tacos. I'm willing to come back and try something else on the menu as some things were pretty good but I don't know that I'd go out of my way to eat here.

    Chicken mole

I usually get the mole chicken and today was super soupy looking and didn't taste quite right. We have been coming more and more frequently and today was just okay. Might have to change what I order next time. Normally would rate this 5 stars

We arrived at noon for a weekday lunch. I had a huge combo plate that provided lots of yummy leftovers. The Castle Rock location is the fifth & newest to open. The other restaurant locations are in Centennial, Highlands Ranch, Parker & Denver. This is a family run business where everything is made from scratch. The restaurant was named after his (Jose Ramirez) two sons, it means two young horses. This lively restaurant is beautifully decorated with high ceilings & fantastic views. However, the place was very loud, it was difficult to hear one another in conversation. This restaurant even has an on-site brewery! Plus plenty of parking. We started with complimentary chips & salsa. The chips were good but need salt & the salsa was delicious. I had the combo #10 that included three items & I added a couple of tortillas to the meal for $2. The crispy Chile Relleno was cheesy & really crisp, it had a wonderful sauce. It was outstanding & my favorite. The smothered Beef & Bean Burrito was very good as well. The Cheese Enchilada was good, however I thought the sauce was too tomatoey. The service was great & it was a great meal!

Excellent date night spot. It was a bit too loud out where we were seated but it got quieter when the crying screaming kids left. It was busy for a Tuesday but we didn't mind waiting half an hour to get seated. The hostess at the front was very welcoming and nice and so was our server. I look forward to coming back and trying other things on their menu. The outdoor view is very pretty and I'd like to come during the day time to see the view.

We come here at least once every two weeks. Always have the best time! The staff, the food, the drinks are always on point and the restaurant is bustling. Perfect ambiance for weekend vibes! I am a regular for the house margarita with Tajín and Monterrey Chicken. If you are a queso lover, don't forget to add chorizo, you're welcome!!

Second time to this location after the first time soon after their opening wasn't so good. It's a little crazy that they seem to always be busy. We showed up before 5 on a Saturday, and there was already a 30 min wait. We managed to find two seats at the bar, so we just did that rather than wait for a table. Service at the bar was a little hit or miss. We eventually ordered our drinks. I liked both porters, so I went with the Piper's, but could've gotten the coffee, while my daughter had a strawberry margarita. Beer was good; she liked her marg but wasn't sure it had much alcohol in it. We each got the combo chicken and steak fajitas, which were fairly large and very good. Tortillas and guacamole are good, but rice and beans are just fair. I'd definitely come back for the food; however, I wish the waits weren't as long and the service was a bit more attentive from the start.

My second time back! Now that I know what to order, it's hard to have a bad experience here. My friend and I shared the Carne Asada burrito, which made for perfect portions! Even then, we still had leftovers. The chips and salsa are very filling!

The staff did not skip a beat welcoming my party at the door and the serving staff were attentive to anything we may have needed. One of the first things we noticed was the elegance of the entire restaurant. The food was of great quality, one guest even exclaiming, "This is one of the best steaks I've ever had!" You can taste the love and effort that went into each dish. I'd recommend this place for celebrating a special occasion, or even if you just want to enjoy a great meal with a great view and ambience. Looking forward to eating here again!

HOLY FREAKING MOLY, THE BRINKERHOFF IN CASTLE ROCK JUST RUINED ALL OTHER RESTAURANTS FOR ME…read moreFOREVER!!! Listen up, you beautiful degenerates of Colorado -- if you're anywhere near Castle Rock and you DON'T drop everything to go to The Brinkerhoff, you're actively choosing a life of sadness and regret. This place is perched up there like a goddamn castle overlooking the kingdom, windows so meticulously clean I could see my future in them (and it was eating more ribeye). The views? ABSURD. I'm talking "postcard from heaven" levels of ridiculous. You'll be stuffing your face while staring at scenery that makes you question why you ever lived in a basement apartment. The ambiance inside is straight-up opulent too -- crystal chandeliers dripping like diamonds, stone walls, red leather booths, and that massive framed vintage Beech 18 airplane photo that hits different. Speaking of which... My best friend Rob took one look at that classic twin-prop Beech 18 on the wall and the hairs on his arms stood straight up. Turns out he actually flew one of those exact legends back in the day. There's a killer story behind it -- ask the staff about it, they'll hook you up with the full tale. Goosebumps guaranteed. This place doesn't just serve dinner; it triggers full-on life flashbacks. The food? ABSURDITY-INDUCING. I'm still recovering. * Spicy Hiramasa Roll -- TO. DIE. FOR. Spicy tuna, avocado, cucumber, and pure culinary sorcery. One bite and I ascended. I blacked out and woke up speaking fluent sushi. * Big Island Ribeye (16oz, soy-marinated) -- OUT. OF. THIS. WORLD. Juicy, flavorful, marinated in what I can only assume is liquid gold and unicorn tears. MUST GET. I would fight a bear for this steak. I would marry this steak. Hell, I'd let this steak ruin my credit score. * Chipotle Glazed Wagyu Short Ribs -- These bad boys were so awesome I almost proposed. Sweet, smoky, melt-in-your-mouth perfection that made me question every other rib I've ever had. They were basically foreplay for the main course. And don't even get me started on the STAFF. These legends deserve their own parade. Big shoutout to our waiter Larson -- the man dropped recommendations like they were bars in a rap battle. 10/10 service, zero notes. GM Lisa came in hot on the 4th of July, straight from the sister property Sierra, working like a boss and being the friendliest, most knowledgeable human alive. Absolute queen behavior. GM Heather rolled up, made sure everything was flawless, and then dropped restaurant history knowledge like a TED Talk. I felt cultured AND fed. And eternal props to Chloe & Keiley in reservations -- we showed up AN HOUR LATE like the chaotic gremlins we are, and they still saved our seats. That's not service, that's sorcery. This crew isn't just outstanding -- they're the Avengers of hospitality. Outstanding food + god-tier staff + Beech 18 nostalgia that gives your pilot buddy chills = I'm moving in. 10/10. 100/10. Infinity/10. It's a MUST-GO when you're in Castle Rock. Bring your appetite, bring your people, bring stretchy pants, and bring your best stories. I'm already planning my return like it's a religious pilgrimage. Brinkerhoff, you absolute madlads -- thank you for existing. I love you. Never change. (Go. Now. Tell them the unhinged guy AND his Beech 18-flying buddy sent you.)

After he finished eating he noticed that he only received 8 wings and when we told the server her response was 'they do what they want' and gave him the lunch portion. She took the money off of the difference between the sizes, but it's the fact that this happens so much that the server acted as it was expected for the kitchen to do what they want and not what the customer wants. To start, it took over 30 minutes just for our order to be taken, and then another 30+ minutes for the food to come out. We were there for about 2 hours total when this should've been a maybe hour-long visit. When the food finally came, only half of it was brought out. The rest took another 15+ minutes, so most of us finished eating before the others even got their meals. We were starving after playing pickleball, so that was frustrating. On top of that, we could literally see our food sitting there for a while before it was finally brought out. Another issue was the menu being misleading. The vegan burger is advertised as an Impossible Burger, but it was very clearly a Beyond Burger... which is a big difference if you're vegan. When we brought it up, the server tried to correct us and even showed us a picture of the patties, which honestly just confirmed our concern instead of resolving it. To make it worse, the vegan burger was supposed to come with vegan mayo and tomatoes, but didn't have either. When we asked, we were told they had run out. It would've been nice to know that ahead of time instead of finding out after the food was already served. Also... the men's bathroom was out of soap, which is just not a great look. It makes you question cleanliness overall. It honestly seemed like they were understaffed, and if that's the case, there really should've been a manager stepping in to support the staff and help smooth things over for customers... especially considering the location. I'll end on a positive note... the Oklahoma Onion burger was actually really good (not the vegan one lol) I coud've eaten 2! Oh, and it seems like a good place to come watch sports as there are TV's everywhere and a well staffed bar.

Once we were able to track down the server, she blamed the kitchen which left a bad taste in my mouth (I'd prefer she just admit she forgot to put in the order) and when my friend's pizza came out 12-15 mins later, it was the wrong pizza altogether. The night started fun, but things quickly took a turn. From where we were sitting (not part of the group involved), I noticed a man becoming aggressive toward another nearby group--yelling at them and eventually shoving someone, which led to a fight. As someone simply watching it unfold, it was pretty clear who escalated the situation. What was most surprising, though, was how it was handled. The owner appeared to side with the individual who initiated the confrontation and ultimately removed the group instead. Later, we heard that the man involved was actually a friend of the owner. From an outside perspective, the group that was asked to leave seemed calm and was minding their business before things escalated. Watching everything unfold--and seeing how it was handled--left a really negative impression. Unfortunately, that experience made the environment feel uncomfortable and biased, which is disappointing because the night had started on such a positive note.
