That usually also makes it less tender as the middle is still a little coagulated from being chilled prior. I would also assume that chicken broth is less calorie dense than pork so I also felt less guilty drinking it all. They do not have a wine menu which is what I normally order but they do have an extensive sake menu so I decided to give it a try and they have a helpful guide which shows like which sakes are sweet or sour etc. I picked a sweet one which was delicious. When they served it, they let us pick cups based on our Chinese zodiac so we got the monkey and the sheep based on our birth years. So unique and special. And of course the food was delicious! the first half were very unique dishes, plated beautifully and the second half was traditional nigiri. When the chef noticed my strong reaction to the amount of wasabi on the first nigiri, he was kind enough to adjust the amount of wasabi for me moving forward without me even having to ask. All in all it was an incredible night especially not having to go into Manhattan. I look forward to coming back!!
