I love that you can see the process of them making the cheese, although it does get pretty cramped and crowded! I ordered the smallest size they had and the Mac and cheese was pretty good. It was creamy and tasted "clean" if that makes sense (nothing like Kraft in a box). And you can even see them making the cheese at this location too. The Pike Place location is iconic and the original. On this trip, I decided to try the smoked salmon mac n cheese. So yum! Lots of cheesy goodness with lemon, dill, and great salmon. Highly recommend! The line can get long, but it does move pretty quickly. The mac n cheeses are ready immediately. The sandwiches, naturally, have a wait to receive your order. Staff are friendly, patient, and helpful. As a traveling cheese lover, I felt it was my civic duty to visit Beecher's Handmade Cheese not once but TWICE during a recent visit to Seattle. Oh did it live up to the hype. Who knew penne could make such an outstanding mac & cheese noodle?? Mind, blown. We also tried Beecher's grilled cheese with turkey and their unique breadzel, which is basically a bun of pretzel bread with cheese. Everything I tried was delicious, but surprisingly my favorite item was just their plain ole cheese curds. The cheese curds they sell are just a few days old and tasted extremely fresh. Pro tip -- the cheese curds with herbs are taken offsite to add the herbs so are actually a few days older than the plain cheese curds if you are going for maximum squeak. Their pimento cheese crackers and other flagship cheeses that I tried were also awesome -- thanks to Beecher's friendly employees for recommending them. Love that eating at this location is also an educational experience with the massive windows overlooking the cheesemaking process. I did my research before visiting Pike Place and I knew that visiting Beecher's was a must for me since I love anything cheesy. During my 3 day stay I ended up visiting Beecher's on 3 separate occasions. Half of the store consists of the area where they actually make the cheese, so it's pretty cool that you are able to observe at least part of the process of cheese making. The interior is clean and inviting. The store is always busy but the flow is pretty fast. They usually have samples of their cheese curds and a sample of another cheese. The cheese curds are well seasoned with a great texture and their signature cheese is so creamy and tasty. I tried the regular Mac and cheese and the salmon Mac and cheese. The regular Mac and cheese had a wonderful flavor, but it was definitely super rich and creamy. I don't know if I could declare it as the world's best, however it is definitely one (of several) of the best that I've eaten. The salmon Mac and cheese had a lot of fresh dill and chunks of salmon; definitely a must try and unique pairing. The Kimchi grilled cheese is also a must try due to the perfect pairing of yummy Beecher's cheese with kimchi on perfectly toasted bread. The one thing that I tried that I thought was mediocre was the breadzel. The texture was nothing like a pretzel and the taste was just okay. I've seen their stuff in the grocery store before and never gotten the chance to purchase it. Coming in, I'll be honest, I thought this would be a bit of a tourist trap. Boy oh boy, I was so wrong. I was STARVING coming in and decided to live it up, a cup of mac, a cup of tomato soup, AND a grilled cheese. The mac is ready to go behind the counter right after you pay. It was AMAZING. The cheese was rich and creamy, the pasta had the perfect level of bite (and I don't even usually like penne), I could hardly put it down. The sandwich was fresh made and took about ten minutes (staff let me know when I ordered it), so I wandered the place a bit. They have a freezer with all their current frozen offerings, which was fun to see. There is also a cool window into their cheesemaking room, allowing you to see two stages of the process right from the counter! There were also free samples of their flagship cheese, and if I wasn't getting back on a plane I would have purchased as much as possible. Snappy, sharp, DELICIOUS. The grilled cheese and tomato soup were phenomenal as well. I think the soup had a bit of cheese in it and retained that sharp flavor. The sandwich was on a wonderful crusty bread and perfect as the dipper. Overall, I was very, very wrong about this place. It's amazing.
