    Beautiful bakery indeed. World-class Parisian style pastries and bread make this a Hallowell must-stop on a street that is becoming a central Maine foodie hotspot. There are no wrong choices here as long as you like buttery, melt-in-your-mouth pastry. 'It's like eating a cloud'' says wife. They rotate flavors daily with something new to try and they label the choices, usually a dozen or so in the display case. A nice touch that keeps the line moving. Baguettes and sourdough boules are available most days. They also have tasty looking breakfast sandwiches sometimes made from croissants. Favorites include almond croissant, lemon cruffin (croissant-muffin hybrid), plum custard and walnut rye bread. The bakery opened in May after much anticipation from the locals. Located in a granite block building in the space of former Dom's barbershop, a long-time Hallowell fixture. It gets very busy on Saturdays with a line forming down street. The line moves quickly though and it's worth the weight. Cordon Bleu-trained owner/baker is from Ukraine.

    So it's a nice little place. I think fairly new. I didn't have high hopes but absolutely everything we tried was good. I'd stay with the lemon curd filled crumpet or danish... it's a Boston creme style filling with a lemon flavor. The croissant is amazing and the ham and cheese croissant is ridonculous! The cinnamon and sugar balls at the register are a nice grab and go, crispy and sweet style dough ball kinda thing. Very good. We tried a sour dough sample that was also very good. It's not everyday you find this quality bakery with this level of standard. Very impressive. They are perfectionist and it shows. The prices are on the high side but worth it. We are gonna make this place a regular stop even though it's an hour drive one way.

    Newly Opened! The pastries and offerings at this little French-style pâtisserie are exquisite--worthy of a following in places like NYC, the Hamptons, or Boston. Hallowell $? The owner is cordon bleu taught, incredibly talented (see bio), friendly + accommodating, with a small staff handling everything from mixing dough, to pastry design and at the counter. Hallowell parking limits people passing by to stop -- I took several turnarounds til I could stop as recommended by another baker. I'd truly like to see this shop be successful. I value the small businesses like this. These are rare in Maine and when I travel I gravitate to these little European type cafes!! My favorite places. I enjoyed my pastries. i will return ... !!!     Grabbed a few things to try at home. It was fantastic! The service was quick and the baked goods were delicious. Will definitely be back.

    It was a small bakery but the croissants, cookies and macarons that we bought were great. Service was quick as well.

As this was our first time here, our server, Joshua, Was especially helpful and attentive in beverage and menu selections. And he did a really nice job of trying that all of the dishes came out at the right time in the right order, which isn't done often enough. Joshua highly recommended the falafel and I join him in that recommendation. The switch to lentils is the base made an exceptionally light but tasty version of a wonderful favorite. The mug, fish and cabbage dish was delicious, though maybe a bit larger certain of lentils, maybe with a bit more spice, would've made this dish even better . The risotto with crab was delicious, but the crab was lost in the dish, so it probably would be better as a crabcake or as a amount of crab meat on top of the risotto. And normally addition to risotto are made at the very end anyway, so this makes sense to get the most out of the crab. We had several glasses of wine, with generous pours; the Sancerre was exceptionally good and paired well with everyone's dishes. There are some excellent local beers on top as well for those who want beer rather than wine. One of our group had some of the oysters and said that they were extremely fresh and delicious - they were local from Brunswick (Mere Point). The desserts and after dinner drinks looked good, but we were full enough that we'll wait until another visit to do that.

It had a subtle sweetness against a beautifully salty texture, which made it far more memorable than bread service usually is, comforting and refined at once. I had the steak tartare temaki and the tagliatelle, and both were outstanding. The tartare was clean, balanced, and quietly confident, with excellent texture and flavor. The tagliatelle was just as impressive, rich and satisfying without ever feeling heavy. Both dishes felt composed rather than overworked, which made them all the more memorable. My guest had the salad and the salmon, and those were equally well executed. Everything that came to the table felt thoughtful, polished, and deeply appealing without trying too hard. The dulce at the end was a lovely finish, understated but exactly right. The only small note is that the room was a bit robustly noisy, especially for an early reservation. Even so, the quality of the food and the assurance of the kitchen carried the experience. What stood out most was the consistency. I was disappointed to find out it is $28 a person and a minimum of two people so it's actually $56 total minimum. As a solo diner i couldn't justify that for myself and wish they would make that clear when they advertise it every Monday on instagram. I love Chaval but I don't think the dishes make sense all the time - i think it is in the eye of the beholder how you feel about this place!
