I ordered medium and mine was very well done. Wasn't going to send it back because who knows what happens in the kitchen when you do that? The bun and fixings were fine, but the burger itself was not worth the out-of-the way drive to get there. Fries were OK. Companion had a grilled chicken sandwich, which was reportedly good. We have been on the Best Hamburger in Wichita quest and we finally have experienced the top tier! This place deserves its place on the list. The flavor of the meat is fabulous. Otherwise, and this is a positive: nothing fancy, just GOOD. I ordered the #2 Single cheeseburger, my friend had the #5 Double cheeseburger; comes with a side package wrapping of tomato, onion, and lettuce, buns were lightly buttered and toasted. The fries were great and so were the onion rings. Decor was almost museum quality- certainly from a different era: old signs, etc. Friendly and accommodating service. This is a great find!!I was searching for a place to stop for lunch and found a few places but didn't really want to travel that far from our job site. They are know for their CharBurgers and that is exactly what I got! In my case I got a Chili Cheeseburger. They are all cooked to order but the wait wasn't long. Interesting method of serving, all condiments are on the side. I'm other words if you don't like something don't put it on! Now I will have to warn you - the Chili is like molten lava, it's best to let it sit for a little bit. Dress & fix your burger before trying! The great thing about the chili is that there is enough left over to have chill fries. The burger was excellent and the bun held up nicely. I would definitely recommend any of the burgers! First time trying a burger at Bill's. First impression of the decor was a cross between a roadhouse and farm shed which is awesome! Was not expecting to see steaks and chicken sandwiches on the menu as I thought it was burgers only so that was a nice surprise. Ordered the double cheese burger medium. Place was not busy so food came out quick. I enjoyed putting my burger together since the veggies were in a separate baggie which kept them cool and crisp. The burger was more medium well but tasted absolutely delicious! The amount of char on the burgers was perfect and gave the burgers that backyard bbq taste. Fries were nice and crispy. I was very impressed and must say it's the tastiest burger I have had in Wichita so far. Reasonably priced too. Can't wait to be back to try their steak and chicken sandwich. read more

The compiled score results based on a scale of 5 are as follows: - Taste: 4.3 - Texture: 4.2 - Appearance: 4.8 - Doneness: 3.6 - Overall Impression: 4.1 The staff was very accommodating and inviting per usual. The turnaround for the steaks was roughly 12 minutes which was perfect for a lunch run. The Ambiance is that of a loving grandmother's ranch house which grants the ultimate ribeye eating experience. Doesn't look like much as you drive past but we decided after many trips past we would check our out. Definitely has a hole-in-the-wall feel. Upon entering, you look around at the unique decor and unassuming interior. We ordered their #2 Cheeseburger w/fries & #7 Cheeseburger topped with a split hot link w/side of baked beans. They asked how we wanted our burgers and we both said medium. They came out more well done. Although the burgers had a good charcoal flavor, they weren't anything to write home about. This use to be one of my favorite burger joints. The charbroiled flavor was great. Since ownership changed several years ago, both then menu and the quality has gone way downhill. The last time I went the burger was almost half the size it used to be and was about 30% more expensive. I use to eat lunch here weekly but now I barely go once or twice a year for the memory. It's a counter service type place that's really small so if you hit during rush hours then you may only get a to go order or have to stand around for 20 minutes for a table. Bill's Charcoal Grill has changed since last being reviewed in The Eagle over 25 years ago. The neighborhood surrounding it has changed, too: it began as a small restaurant where Bill Wellshear could apply the skills he learned working in Oklahoma, offering little more than a few burgers and a chicken sandwich. Today it's a relic of NoMar that offers hamburguesas alongside chicken fried steak, parrillada, and a variety of caballero dishes. But it's the burger that remains the focal point, thanks to the unique combination of Hispanic influence and the grill which gives the restaurant its name. No matter how many times the restaurant changes hands, you can't take away the grill. It imparts a deep, smoky flavor into the burger, leaving visible marks on the patty, and is totally unlike the griddled burgers that are found at most other restaurants in Wichita. If you want toppings, there's a self-service bar by the soda fountain, but it's served to you sans accoutrements. Which isn't to say you can't spruce up your burger to make it more interesting - this was the first restaurant at which I had a frankfurter used as a burger topping. This exercise in excess combined with the contrast between the firm sausage and tender burger patty is exciting, and isn't found at many restaurants. That you can add avocado and grilled onions on top of all of that is almost too much. Fries aren't the same freshly-sliced potatoes that were once offered, but given Wichita's track record with fries, it can be considered successful that the starch is crisp, fluffy, and well-salted. It may not belong to Bill anymore, but Bill's Charcoal Grill still offers a standout product among many of Wichita's legacy burger restaurants. Part of that is thanks to a continued commitment to quality: part of me likes being asked how I'd like my burger cooked, even if I know the lb patty is much too thin to come close to my desired doneness. Another part is the unique cooking method which helps separate Bill's from the majority of other Wichita burgers. Combined with the Hispanic flavor imparted by the neighborhood, you have a burger that's a cut above the rest. read more

Best burgers in town if you like char grilled flavorful burgers. No goofy stuff, just greasy grilled goodness. I had the California with grilled onions. It has bacon cheese, grilled onions, and a hot link on top of the burger. You add your own pickles, lettuce, tomato, and condiments. Make sure to get a small chili to dip your fries. The burger was fine, nothing to write home about anyway. This place isn't in the vicinity of where we live and the trip over was a bit of a daunting one for a burger at least. When we first arrived there were only a few tables occupied and it was so quiet in there it felt like a library instead of a restaurant and I was afraid to make noise. The guy who took our order didn't say anything about a number being called out so I didn't look at the receipt hell I almost through the damn thing away while I was making my drink and then all of a sudden someone is calling out a number and the old man is like is that us? Shit if I know? A large group came in after us, large enough to push three or four tables together which made the rather small place feel even smaller. Well I love the seasoning of the burger. They changed their French fries (). I loved the steak fries, they changed to the kind with the crunchy coating. Also, they changed to dill pickles () where they previously offered bread and butter chips. And lastly, no more free soft serve ice cream cones. I won't be back.
