I guess they just give out Michelin Stars these days... The bad: made a reservation and when the reservation was lost we were corralled into sitting into the bar. When we tried again for a table the hostess/manager gave us the runaround and were rude about getting us a table even though it was available. Unnecessary way to set the tone for a dinner. The meal was ok bordering on subpar which could be ok but not for the prices/hype. I was disappointed that their beef program was so lacking in transparency. I had to ask the server multiple times whether it was organic/grass fed/where it was from. This process took 25 minutes. Why don't you source organic beef for a $60-200 steak? Is it really that expensive? Why isn't the staff educated on this for a steak house in Boulder? The broccoli was not only over cooked but burnt. The cocktail was overbearingly sweet and peppery (swing and a miss). This meal was ok but ultimately disappointing. Recommend getting the charcuterie board to start off as it comes with a variety of delicious house aged meats and cheese you can try. The Crispy pig ears is very interesting - if you want to be adventurous and try it, it is a must. It is crunch and salty! The dry aged meat is a go to and a fan favorite. We ordered skewers, bone marrow, olives, greens salad, radish salad, burrata, ricotta, pasta, bread, Halibut, and the dry aged ribeye. The food was overall good. The standouts were the skewers, the cheeses, halibut, and focaccia bread. The saffron bucatini was tasty. The Duck Agnolotti was a let down. The presentation was on point. It lacked any flavor. The dry aged steak was an impressive looking piece of meat. It was served with a chimichuri, demi glaze, and greens. The meat was cooked to a perfect medium rare. For what should have been the grand finale and star of the show was a BIG let down. It lacked that dry age flavor and tenderness that I'm accustomed to. First, I'm a huge Top Chef fan so when I moved to Boulder, I was thrilled to try Blackbelly. First, my general contractor for a remodel recommended getting a steak from the market. I choked on the amount I paid for a ribeye. But, a mouthwatering steak is worth it. I've shipped ones in from Australia and would do it again in a heartbeat due to the quality. However, this was truly one of the worst steaks I've ever had. I'm not kidding - I got an Angus Prime steak from Safeway that was better. I typically buy meat from butchers but won't be doing it here. Then, I heard amazing things about Blackbelly burgers. I decided to try it in spite of the fact that the steak wasn't good. Maybe I just got an odd lot before? Today I went in and ordered the burger and tots. The tots were plentiful and delicious. That said, they were not any better than the Ore-Ida ones I could have prepared from frozen. The burger was, sadly, horrible. It was thin, dry, overcooked and suffered under all the toppings and bread. I would say it was burger, bread and toppings. When I think of a great burger, it's thick and juicy. Not this one. I will share a picture if I can. I paid $28 for this burger and tots. I get that wagyu is more expensive but for the size of the patty coupled with the fact that it was way overcooked, it was a complete waste of money. What I will say is that the people who work there are fabulous! They are kind, accommodating and helpful. read more

I've been for breakfast, and have had dinner a couple times, the service is always great. I recommend sitting at the counter for dinner where you can watch the food come together. The chefs are so nice and as busy as they are somehow still find time to chat. This makes for a very welcoming environment. Blackbelly puts a lot of care into detail, both in the food and in the service which is always excellent. For food we've enjoyed the crispy pig ears, steaks are great, and the pasta is delicious. I think the night was sealed when the hostess made us aware of the new mandatory tip requirements. 20pct for living wages. I have no issue with living wages, but I find it off they don't just raise prices. Tips are for quality service and food. I have dined at black belly two previous times where our meals were outstanding. Last night was ordinary and I doubt the quality will change. Black belly is not on top of their game. They are living off the past. Many tables were available at 8pm on a sat night. Not a good sign. Made reservations here for my anniversary dinner. Upon arrival the hostess congratulated us and sat us immediately. We had a nice seat near the back but not too far away from feeling "in the crowd" Rhonda our waitress congratulated us and got us champagne on the house. I've been to Blackbelly two times and each experience has been outstanding. I'll first start off with my first experience when I went back in May. The service wasn't anything memorable but the food was delicious, especially the crispy pig ears. I also got the tartar and it was so good but the pig ears *chefs kiss*. For my entree, I got the burger and a side of potatoes. First off, the portions are HUGE. My sister and I got 2 appetizers and were too stuffed to eat our entree so ended up taking a lot of it home but leave room for dessert! The chocolate peanut butter mousse was delectable. The second time I went is all about the exceptional service. I ordered a breakfast burrito at 4pm on a Friday. Note, they only sell breakfast burritos until 11am during the week but my order went through, so I figured, why not try? So my order went through and I went to the restaurant only to be told I should not have been able to do that. Most restaurants would just say sorry, give you your money back and send you on your way. Not Blackbelly. The manager, Andrew, and the rest of the staff went above and beyond to try and get me a burrito. He refunded my money and called Santo (their sister restaurant) asking if they could make me a burrito. He then told the manager over at Santo my situation and told them I would be heading over there & I finally got my burrito. What's not to like about really relaxing and peaceful ambiance, wonderful service, and top-notch burgers with the right balance of toppings. One of the few burgers I've felt actually didn't need a sauce at all. As good as they were, make sure not to miss the burrata or posole appetizers, which really stole the show, even though this is definitely a meat-forward place. We had trouble figuring out the main courses we wanted to try and he explained the lamb, pork, and steak dishes. There are different options and sizes for those dishes as well and how they were prepared. He described the dishes in great detail and I was so glad that he did because we loved our steak and pork loin. It just wasn't our server but other servers and general manager assisted us too! Ambiance - I left they followed safety protocols the best of all the restaurants we went to during our trip. Holy cow, WHAT A DELIGHT! Talk about savory perfection! Blackbelly chefs deserve a Nobel Price in culinary expertise. It has been a while since I've been to a restaurant where every single bite managed to transport the mind into a state of deliciousness. Everything from the starters, the cocktails, the side dishes, and of course the meat was absolutely breathtaking. We got a bit of everything to try, and no matter the complexity or simplicity of each dish, each bite was exquisitely crafted. It makes me so happy to have found my new favorite fine dining go-to in Boulder. To top it of the restaurant has a lovely ambiance. You can tell there is thought behind the moment you step inside to the moment you leave. It is truly an experience nobody should miss. I do believe it can be pricey; but given the taste I felt like I was paying for something worthwhile. I had really high hopes for this place after hearing some good things... but they definitely didn't live up to them. The warm bread and homemade butter was phenomenal and the highlight of the evening. Our waitress was great too. We ordered a $50ish Manhattan steak, the special, the mezzelune pasta dish, and a side of Brussel sprouts. The steak was nothing special at all (we're from Iowa so we may just be spoiled by great beef), the brussel sprouts would have been good if they weren't drowned in salt, I love salt but it was almost unbearable, and the ravioli dish was 6 sad pieces of pasta with barely any filling, and drenched in liquid that tasted almost like straight lemon juice. I normally have a 3 strike rule for restaurants, but at the price point I'm not sure we'll give it another go :( read more

Drove out to Boulder to visit Blackbelly for dinner while staying in Denver. The proteins were pretty incredible, not to mention the fresh citrus punch of the green salad. Everything is cured and butchered in house. My rotisserie chicken was super delicious, moist and pile on with an array of compelling textures and flavor profiles. Salty olives, sweet sautéed onions - almost candied. Our charcuterie board was very impressive and just as complex. We tried the crispy pig ears which was my first and I have to say pretty good! Had no idea what to expect and I was relieved they were super crunchy and not too saturated in oil. The fried egg was critical to balance. I also ordered a side of the sautéed mushrooms which were super earthy and smokey - just how I like them.
