While I enjoy the monthly & signature rolls, they can be a bit heavy, so I like to balance things out with adding more traditional rolls. I'll usually ask for a few add-ons or small tweaks, and they're always more than happy to accommodate -- which I really appreciate. My Go-tos: The Negihama-Toro, the Philadelphia or Salmon Roll, the Bluefin Special Roll, and most recently the Hamachi Tower, which comes with plenty of fish and rice to make your own nigiri.
