fourth time at Botanist and 2nd at their bar! I had the cuban eight, it's earthy and aromatic, good balanced with rum. My friend got Rojina hightball, clear texture, sweet with signature Santori whisky taste. The miso caramel chocolate mousse was definitely my favorite! Especially the black sesame semifreddo, love the creamy taste! Better experience than last time:)
Late brunch at the Botanist on a Saturday. The place is known for their tasty cocktails but they also have a nice brunch with 2 drinks included. You are greeted with your first drink, a glass of sparkly wine, you can make it a mimosa with some orange juice, they also offer grapefruit juice to add in. With your glass in hand you head to your table to choose your brunch dishes. The menu is standard, you can get a starter, main and dessert or just starter and dessert. The price difference is not that big so we chose the 3 courses. To start I had the beef tartare, it was very nice. The BF liked his truffled mushrooms on toast. I really liked my main, the torched salmon. Loved the sauce and seasoning. The BF had the lobster benedict which was also lovely. One cocktail is included in the menu. I ordered the Pacific Rim gin and tonic. It was amazing! The BF had the Me time, also very good. Clearly an amazing choice of cocktails. To finish, the desserts were amazing. Really beautifuly executed. Very good place for a date or a boozy brunch with familly and friends
I had a wonderful visit to Botanist, a beautiful and friendly bar inside the Fairmont hotel on the Vancouver waterfront. Bartenders here really know what they are doing and are fun to talk to. I had a delicious champagne drink infused with bergamot. Or maybe I had two. Also had a good cheese plate and some great conversation. You need to stop by this bar if you're ever in Vancouver. It does not disappoint!
The bar at Botanist is one of my favorite bars to visit whenever I'm in Vancouver. It is located in Fairmont Pacific Rim hotel. Even if you decide not to drink or grab a bite there, it's worth checking out the hotel. The bartenders are always personable and attentive. Looking forward to returning to try out their main menu. So far I've only tried the desserts and those have not disappointed.
The botanist was refined from the moment that I walked in; exactly what I look for when going out. I was lucky enough to be seated in the booth right next to their huge open kitchen. It truly became part of the experience, being able to meet into all the different stations and watch the chefs at work was such a pleasure. The best part of my meal was the lobster risotto. It was creamy and rich. You could tell that the ingredients were fresh and natural. There was a high level of detail, quality, and creativity from the kitchen. They definitely seem like they're gunning for Michelin star and with their standard of service, I hope that they get it.
Had such a great time! We had made a reservation, thinking it was for the bar. But their cocktail bar is first-come, first-serve. Reservations are for dining. So we ordered a couple small bites, while waiting for seats to open at the bar. Their appetizer sourdough bread was amazing! Made in-house, and a sizable loaf. Beef carpaccio was delicious. My husband and I were fighting for the last bite, haha. Flavors were incredibly well-balanced. Scallops were ok. Think they tried to do an Asian tom yum flavoring, which didn't work well, imo. Took away from the scallop flavor. Now, the experimental cocktails are where it's at! Pricey, but worth. Because these were some of the most elevated drinks with lovely small bite pairings we've ever had! Really, what an experience. And I wanna go back just to try the rest of the cocktails. ;)
Cute spot with a private room. Delicious breakfast here. Clean and tons of greenery. Good cofffee and solid breakfast. Worth a visit or for hotel breakfast. Reasonable prices for a fairmont. Bacon was American bacon. Eggs are decent portioned seemed like 3-4. The toast was the best by far. Slightly moist and really tasty with butter!
Incredible. If I have anything less than complimentary, it would just be about their choice of artwork in the private dining room. A little bizarre. That aside, every dish was perfect, the timing was spot on, and their wine and cocktail list was extensive. The service was impeccable, but we had the private dining room with a fixed menu. Highly recommend!
Recently I went back to Botanist for the second time after about six years. The duck breast had been a dish I've been thinking about ever since, and I was so excited to see if it was as good as I remembered. Located in the Pacific Rim Fairmont Hotel, Botanist is a beautiful restaurant in a beautiful hotel. From the second you walk in, you get transported to a dimly lit dining room, with modern and sleek architecture and greenery everywhere you look. Although this vibe may be intimidating, the staff from the hosts to the servers are extremely hospitable and kind. When we sat down our server was very friendly and helpful with recommendations and descriptions of anything unclear on the menu. For drinks, I went for the Roji Highball. The drink was good, but not great. There wasn't anything super outstanding about it, but it was refreshing and citrusy while still having a prominent alcohol taste. I was surprised to learn that Botanist ranks 26th in the 50 Best bars list for North America. However, I believe there is a different drink menu in the dining room versus the bar, and I don't know if these menus are strictly enforced. In terms of food, we started our meal with a few slices of rye bread and butter. The butter was great, but I wish the bread came out warm and a little fresher. It was actually slightly under room temperature which was a bit off-putting. The ratio of bread to butter was also off, with significantly more bread than butter. We had to ask for a little more butter. For our starter, we went with the pan-seared scallops. From the second I saw this on the menu I knew I wanted to order it. The concept was unique and stood out to me as something I needed to try: tom yum broth with western style seared scallops. The scallops were amazing. They had a very subtle initial bite while having a delicate chew afterwards. Perfectly cooked. The tom yum broth was also good. Nice and tangy, with a slight kick, and a pleasant herbiness. However I had some issues with the overall dish. The dish is very temperature sensitive, and the tom yum is served separately table-side. Even with this effort, I thought the broth came out a little too cold, also slightly under room temperature. Of course if it is too hot, the broth is overpowering and ruins the taste of the scallop, but if it is too cold it's also distracting and unpleasant. Because of this, it also felt like I was enjoying the two components separately. They were both good on their own, with the intense flavor of the broth being its saving grace, but did not come together to compliment each other in the way I hoped they would. Even if the broth was warmer, I still think there might've been too much of a clash between the tom yum and scallop. I would have liked a little creaminess in the tom yum, as it would add a nice richness to bring the dish together and make the tom yum feel more like a sauce for the scallop instead of a broth severed separately. The whole reason why I went back to Botanist was because of the duck. And after my first bite, I was elated to see that it was just as flawless as I'd remembered. The skin is so perfectly crispy, not too crispy, but melts together beautifully with the tender and moist duck meat. The meat is so soft, it's more tender than most filet mignons. Although the duck is dry-aged, there is no funky flavor or gaminess. The flavor remains very pure and juicy, perfectly complimented by the light brown butter sauce. The portion of duck is very generous, and comes on top of mushrooms, red cabbage, and spätzle. All of these components contribute nicely to the dish, but the duck remains the star of the show. To this day I still believe this is the best duck I have ever had and will continue to compare all ducks I have in the future to this. Overall I had an amazing experience. The service was attentive but not too in your face. There was plenty of attention to our water glasses always someone to ask if we were enjoying our food while still giving us our space during the meal. Although the meal in its entirety wasn't perfect, the duck breast is really special, and something that I will remember for a long time. And while other dishes are still interesting and delicious, I would highly recommend a trip here just for the duck. Botanist is a beautiful restaurant that really leaves a lasting impression from the atmosphere to the service to the food.
We came here for my birthday dinner and this place is gorgeous. Plants everywhere and lots of nice, small touches. There was even a pianist during dinner! Our waitress was incredibly friendly and kind and really took the time to explain the courses to us. We did the tasting menu with wine pairings. Everything was delicious with the exception of dessert, though I found the portion sizes were on the smaller side. The wine pours were incredibly small, even for a tasting menu. The price is rather extravagant so this was definitely a once in my life experience.
We went for a brunch birthday! It's a lovely green and high end place in the hotel for an event. The drinks were honestly a little sweet but the staff were funny and kind. We got two drinks with the set menu. The beet starter and spicy salmon with potatoes are pretty good. Desserts were not too sweet too. A bit pricey but good experience
Named one of the Top 50 Best Bars (North America), this place deserves the accolades. I went here a few minutes after 5pm on a Saturday and there were a few parties already seated at the bar, but we were seated immediately near the center of the bar where we get to see all the action. It gets busy quickly within 30 minutes of opening. Bar is walk-in first come first served, while the reservations are for the dining room. We tried the first 3 experiential cocktails and the What the Flower as recommended by the bar list. We also got a foraged mushroom tagliatelle from the dinner menu that was phenomenal - pasta was al dente and the flavors are bold and rich. All experiential cocktails come with a food pairing bite and a non-alcoholic spumante for palate cleanser. Water of Life No 1 - Pale Blue Dot - my friends call me Mr Worldwide with my travels, and I was largely appealed by the globe glass, so I decided to try this. This drink has herbal notes and blue in color from blue algae. It looks like a science experiment. "The world is your oyster" as they say in the menu, which directly matches the food pairing that comes with this drink - an edible oyster shell (cracker) with caviar which is quite good. Water of Life No 2 - Ring of Fire - my favorite of the 3 in presentation and flavors. This one has the volcanic effect from the dry ice and the cup has a hole in the middle, shaped like a volcano, for the amplified effect. Surrounding is some material that can catch on fire so when it is torched, it has beautiful small dots of fire moving around resembling lava. I loved the fruity and strong flavors of the drink, and the pairing is a wagyu that is juicy and tender in itself. Water of Life No 3 - Raincouver cocktail - one of the more popular ones and the one that first caught my eye. This was is very mild and a bit watered down, but still has the complex notes that come with the experiential cocktails. The foam is a cherry blossom infused foam that condenses into the cocktail. The placement of the foam was a bit poor so a lot of the infusion dropped to the table. But it was my still my least favorite of the 3 due to the flavor profile. The pairing is a fried chicken bite that is quite good, but a bit overpowering from the delicate flavor notes of the drink. What the Flower - I was drawn to the electric daisies which are just buzz buttons (the flowers that numb your mouth if you take a bite, and it changes how your mouth perceives certain flavors). It did not evoke the jumping or pop rocks or tingly effect so I was a bit let down by the drink. It might be a bit more subtle but I didn't notice at all. Service is good as the bartender took the time to explain the cocktails and did wonderful presentation and show of the experiential cocktails.

Honestly, it was a 3 - 3.5 as far as the food was concerned, but the sommelier (Kieran?) was really great, so I'm giving it a 4. I haven't been here in years, and while it's reputation has grown, their food was not even close to the sublime experiences I've had before. The leg of lamb and lamb belly was the best dish of the night. The scallops (no photo) was also very good. The carpaccio was interesting (truffle vinaigrette, which was a bit of a push for me, as I'm not a big fan) but the meat quality was excellent. The mushroom tagliatelle was good, but unremarkable. The octopus was tasty (just a hint of spice), it had a bit of a crunch, but not unpleasant (like the texture of tako wasabi), but it was unexpected. The bread was still excellent. The side of potatoes was bland and watery, and there was almost no taste to the beets. A waste of money and calories. The free birthday dessert was unexpected and appreciated, but it was oddly dry, crumbly, bland, not very sweet and a touch bitter... The service was very professional. The sommelier working that night was really personable and introduced me to a great Portuguese wine. The cocktails were "ok" but there are better places to go if you are willing to spend $24+ for a single drink. Given our proximity to the kitchen, I was surprised that the food was barely warm by the time we got it. Oh, and if you're planning on wearing your fancy "killer heels" keep in mind that the distances here are like at a Vegas casino. It's a long walk across the lobby and up the stairs and then you have to walk all the way to the back for the restaurant to your seat. The washrooms, while on the same floor, feels like a city block away. Overall, it was ok, but not worth the $500+ we spent. I'm not sure that I will bother coming back any time soon. read more
Dined here based on a recommendation from a colleague. It is located in the Fairmont hotel near the waterfront & is spacious & airy. We decided to order from the tasting menu & it did not disappoint. Each entree was a piece of art that was thoughtfully prepared from the presentation & garnishes to the combination of the right pairing of accents to highlight the taste & texture of the main. The bread appetizer was warm & buttery, had to resist filling up on it. Favorites were: Chicken amuse bouche - so very tender & too pretty to eat Gazpacho with basil sorbet - chip garnish provided a nice light crunch & the basil sorbet provided a cooling sensation, could've eaten it just by itself in a bowl Halibut in smoked buttermilk - tender, not fishy & light milkiness/creaminess from the buttermilk, the herbs enhanced the neutral taste of the fish Butter infused candy cap mushrooms - light caramel tasting foaminess, quite the experience Service was thoughtful & attentive without hovering. Overall, a very satisfying dining experience. read more
The Botanist is located in the Fairmont Pacific Rim hotel toward the north side of Vancouver. It's ranked as the 19th best cocktail bar in North America. We had a few exceptional cocktails served by a mixologist and a few good glasses of wine served by the sommelier (I think he was a sommelier, not sure), both of whom were passionate about their drinks and service. We tried the Cabernet Franc and Pinot Noir as I don't typically drink a Cabernet Sauvignon on its own and we didn't order food. We also tried a custom made tequila drink with a hot pepper kick to it. The bar itself has an interesting design though it is directly off the hotel space, no real separation. The outdoor area was closed for the evening. I do think The Botanist deserves a high rating but the need to rank cocktail bars on an arbitrary scale is a bit unnecessary (we love to rank everything nowadays, I think it makes the rankers feel special). There are so many great cocktail bars all across our continent, really what's the difference between cocktail bar ranked #9, #19, or #29 for that matter. They're all good. read more
Stopped by Botanist after reading about their accolades. It's located on the second floor inside the Fairmount. The bar is laid out in an odd way- our seats, squeezed in tight at the end of the bar, were in an odd spot where we could only see the well and a wall. By 7:30p on a Saturday night it was empty with a vibe that was just off. Drinks just ok and on the expensive side. Sunny Side was sweet and though it was made with sparkling wine, it tasted flat. Friendly staff, but not my place. read more

We Ordered: CULTIVATED MUSHROOM TOAST -- truffle aioli, parmesan, grilled sourdough CROQUE MADAME -- black forest ham, gruyère, crispy potatoes LAMB BELLY POUTINE -- pave fries, green pepper jus, full moon valley cheese MILK CHOCOLATE COFFEE MOUSSE -- toasted vanilla meringue, chocolate shortbread, coffee ice cream GOLDEN ORCHARD -- Clarified Apple Juice, Cinnamon and Spice, House Acid blend POETRY IN MOTION -- vodka, grapes, elderflower, rhubarb, lemon, bubbles Iced Latte The golden orchard is a must try drink! It is the best non-alcoholic drink I've ever tried. Overall this was an amazing experience and I can't wait to go back and try more dishes, specially from their lunch and dinner menu. The lamb was excellent but the service was not great. We waited forever for dinner and drinks. It took over a half hour to get a beer. We couldn't even find our waiter at some point and had to flag down a different one. To be fair, he was way too busy with a lot of tables, so its more of a management issue than the servers fault. I only tried 1 cocktail with gin and it was good, but not the best. I was expecting the flagship cocktail to be more interesting. read more
We recently made reservations at Botanists and was pleasantly surprised by the delicious brunch and the wide range of menu selections. The quality of food was very good and the cocktails were on point. The service was excellent with our food being brought out in a timely manner and the items on the menu were explained to us. Space ambience is beautifully decorated with plants, lovely tables, chandeliers and very comfortable seats. Overall it was a really pleasant experience and I highly recommend it- see pix of our food & beverages. Bon appetite! read more
In a swanky hotel. Lovely restaurant with live piano player. I do a lot of tasting menus in the US so this is very reasonable pricing IMO. Lots of very flavorful food- the only slight miss was that mushroom marshmallow- kind of an acquired taste read more

The service was attentive but not overwhelming. The sommelier was clearly passionate about wine and gave us an affordable recommendation that paired well with the meal. The food was poetry. The plates were full of color and the flavors were layered and so delicious. Highly recommend for an elevated dinner. read more
The Tagliatelle is just heavenly. Creamy pasta heaven. No negatives just fan-freakin tastic. First time I ordered it, I shared with a friend and we both were battling a little bit (to get the bigger fork full). Second time I refused to share and my date and he ordered his own. He loved the mushroom "soil". I loooove the depth of flavour the textural dance and the fact that is the THE BEST VEGGIE PASTA IVE EVER HAD. Perfect bite, perfect fresh pasta with everything you'd want to accompany it: This is a flawless example of how mushrooms can replace meat as a base for a cream sauce and produce something just as flavourful as a carbonara. I pray they never take this off the menu. The cavatelli is completely different texturally and is satisfying in a different way. Chewier crunchier, more of a contemporary pasta experience. You can definitely tell the chefs put effort into both dishes, and exercised different skills in these two pasta plates. Side note both times the wait staff were informed, helpful and a pleasure to chat with. My only down note is architectural, the washroom is a maze to find, and always prevents us from drinking more when we visit. I highly recommend for the special date night, or girls night....I frankly would probably even dare to dine alone, since the service is excellent and the food is heaven. Ps. My date said he would order the Beet "steak" again and again, but would forgo the cultivated mushrooms on the chickpea panisse. read more

We had breakfast at the botanist every day as well as we stopped for drinks one evening. I love everything about this place. Selection, decoration, service! Egg Benedict with crab and salmon both were our favorites. Don't skin detox juices, we tried them all. Pistachio croissant wins the almond one but both were delicious. Crispy potatoes on the side is such a great addition. Fresh fruit bowl is pricey but it comes with home made whipped cream and fresh berries (specially during winter). We also had amazing coffee there and gravlax and avocado toast were both amazing. This is my favorite place for breakfast in Vancouver! Also they have very cute patio seating, feels like you are in the garden. read more
Came to this beautiful restaurant for dinner and breakfast the next day while staying in this hotel. The chefs tasting menu for dinner was really amazing. It can be customized for any allergies as well (I had it without seafood). The cocktails are beautiful (recently voted #2 bar in Canada) and they are very on theme. The room is beautiful and the vibe is perfection as well. Breakfast was also fantastic, with friendly sunny staff and lots of options to fit any dietary needs. The view here snd the way the room is filled with sunshine in the morning is just wonderful. Definitely recommend this restaurant for anyone looking for an elegant dinner experience, but definitely recommend making a reso. read more
Came here for dinner years ago when they first opened. We loved it then, and still loved it now for brunch. Brunch can be a tad bit spendy for some, however if you ordered a cocktail or two, a starter and a main for brunch, it really does actually end up being a pretty good deal for what is included. Cocktails were good, starters were tasty, mains were really really great tasting (salt, fat, acid). Awesome service, great dj spinning cool vibes, even at brunch! We didn't have room for dessert but I'm sure it would have been amazing too! read more

Came here for a birthday brunch and were overall very impressed! We ordered the homemade burrata salad and the cheese and charcuterie to start, and the crab and avocado benedict and the pulled lamb spaghettoni as mains, with the tropical fruit vacherin to finish. We also ordered the indigo harvest and velvet morning cocktails, which were included in the $62 brunch set along with two glasses of sparkling wine. The cocktails were vastly different but both delicious. I would recommend the indigo harvest if you want something fresh and fruity, and the velvet morning if you want to start your day with a boozier starbucks latte. Both starters were made with extremely fresh tasting ingredients and the dessert's tartness was perfectly balanced with the sweet meringue which came with it. I am taking away a star as I was quite disappointed with the crab and avocado benny. It must have been sitting out for a while as the avocado was brown when it arrived, and the egg was poached soft instead of medium as I had requested. I also found the peeled tomato that came with the dish a bit strange. The state it arrived in and the flavours of the benny itself were a letdown especially compared to the amazing starters we had beforehand. The crispy potatoes were the saving grace of the dish and I ended up leaving the rest of the benny and simply having my poached eggs with the potatoes. However my partner stated confidently that the pulled lamb spaghettoni was the best pasta he ever had, and I attest that the flavours as well as the consistency of his dish were top notch. Our server Jackie was very sweet and attentive, and made our experience memorable. There were minimal wait times and we were seated promptly upon arrival, and the bathrooms located in the building were clean and had hands-free doors which was greatly appreciated. Overall it was a memorable and delicous experience and we would love to return to try more of their cocktails and their dinner menu in the near future! read more
Came here for a group dinner, super cute spot. The ambience is fantastic with dimmed lights and beautiful ceiling hangings. For entrees, we got the mushroom soil tagliatelle and the vegetable ragu dish. Both were delicious but the serving sizes are super super small. Our waiter was very friendly and waited on us attentively. Their cocktail menu is very inventive and creative. Five star prices ... matched with five star dining. Success. Walk into the Fairmont and take the dragon stairs ahead of you up to the mezzanine. The restaurant will be on your left ... check in by the Taschen sign. You'll likely be led past the bar on your right under a looong warm origami light fixture to your table. You'll eventually pass a piano, and if you're lucky you too will enjoy the Mario Bros theme song played live during your meal. This was our final dinner leaving Canada after a week at Whistler and we couldn't have picked better. But what we didn't pick was our food. Opting for the chef's choice aka "We'll take it from here" we enjoyed a seven course meal over the span of a couple of hours. Now... I think this actually only comes with six courses but we also ordered the lobster and the chef fit the food into the sequence in a way that worked - each dish becoming bolder in flavor than the last. I won't say that I loved every course. But there were several that were incredible and I definitely enjoyed the experiences that each one brought ... from flavor, to texture, to novelty. While we didn't go with the wine pairing, we did enjoy some wine and cocktails with our meals. I gotta say - don't leave here without trying the botanist marine martini. It may be the best martini you ever have. Incredibly crisp and enjoyed one very small sip at a time. Looking forward to my next visit, even if it won't be for years... read more

The cocktails were amazing here. We had the marine martini and something that was bee-related, but both had great consistency, texture, and just the right amount of alcohol. We ordered scallops, salmon entree and the lamb shank. The seafood dishes were amazing. The broth that came with the salmon had a unique tangy taste that was difficult to describe but paired well with the salmon. The lamb shank unfortunately was my least favorite. For an elevated dish, it was a stew of lentils, and I don't think lentils should be an accompaniment to an elevated dish. Just makes it gritty and doesn't have good flavor... overall disappointing. Besides that overall a good experience. Waiter was very helpful and pleasant. read more

Seared Scallop - Fresh and flavorful. Only thing is I wish it's a bit warmer. It served lukewarm. I wasn't too keen on the pickled vegetables. That's just me. Tagliatelle with chanterelle mushroom - great texture, al dente. The chanterelle mushroom was pretty good. Again cause it served lukewarm. Preferred to be hotter. Pepper crusted salmon - I thought foie gras melts in your mouth, never thought salmon can melt in your mouth too. It's like having salmon toro. Impressive. The black pepper crust wasn't too overpowering, just right. Duck breast - I've had duck breast at Michelin star restaurants, but this one trumped them. Crunchy outside and very tender inside. I stopped by Botanist on a Friday evening at 8:00 p.m. and the bar was packed! We were lucky enough to get seated at the library next door. Drinks here are very well made. It's no wonder why this place was listed as number 6 on a list of top bars in Canada of 2022. Botanist's list of awards and accolades goes on and on. I got the Lost in Translation - japanese whisky, eau de vie, imperial oolong tea, coconut, amargo chuncho, and it was a alcohol forward but balanced drink. Coconut notes were very subtle. We were craving some after dinner desserts and the desserts here were stunning. Each dessert looks like it comes from a Michelin starred restaurant: so many different creative components. This was a true dining experience. You can 100% see why they are a Michelin star restaurant. The service, the food, the ambiance, they nailed it. This was my boyfriend and my first time in Vancouver and on our next visit we will be sure to come back. The food was out of this world. Each bite so carefully and thoughtfully crafted. It tasted straight out of the garden. Which makes perfect sense being named the botanist. We created our own dining menu; which the waitress kindly coursed out for us. We started with the beet and burrata salad. My boyfriend who doesn't eat beets was licking the plate. Next came the wagyu carpaccio, sliced thinner than paper. Topped with a parm flavor and little crunch, providing both flavor and texture. For our third course we ate the scallops wrapped in duck prosciutto perhaps my second favorite bite of the night. The play on texture and flavor what this combo provided was mouth watering. As the fourth course we had lobster, topped with a lobster bisque table side...do I really need to say more. Last but certainly not least we finished with the best lamb a non lamb eater has ever had! If you can't tell we enjoyed from beginning to end. I don't think I could rave more! read more
Everything brunch should be... and more! The experience was positive from beginning to end. Showing up without a reservation we were asked to hang our in the waiting area but were made to feel comfortable while we waited for a table. We felt very welcomed and the food was delicious! read more

We went to the botanist while vacationing and it was so amazing! We are not folks who eat at fancy restaurants very often, but the staff treated us kindly and helped us decide what to order. We decided to order family style so we could try many different dishes, and all of them were great! They were not only beautiful but tasted amazing. The chef at this restaurant really knows what he is doing. The restaurant is also beautiful with plants all around and the decor is stunning. Our drinks were also delicious and super fun. It's definitely worth the price to try this place out! read more
Went to brunch with my friend for my birthday! The set comes with an appetizer, main, coffee/tea, and a beverage. For the appetizers, we got avocado toast (without cheese and butter to make it vegan) and burrata salad (which I loved!). The salad was mainly cheese it was so creamy and melts in your mouth. The olive oil and salt was such a good dressing. The avo toast was pretty good too, the spread itself was flavoured very well that it almost tasted like cheese?! For mains, we got the mushroom eggs benedict! This was pretty good too. Lots of potatoes I was so full at this point. I got a latte and then their mocktails, which were very refreshing. This brunch set is on the expensive side but on special occasions, it's okay to splurge! It's such a lovely space, I loved their decor. Very modern and pretty. Also, the staff are very accommodating to my friends dietary restrictions! So they were able to make it vegan. PS. My friend told me that they have SO much more vegan options for dinner. One of our favourite restaurants ever and it never disappoints. The decor was elegant but natural and it is a great place to consider for a special occasion. This dry aged duck dish symbolized the fall season and totally encompassed all the things you look for in a great dish, color, texture, flavour, plating. Everything played a key role to compliment the duck. The seasonal fall produce was well prepared and the garnish of liver pate cannelloni totally stole the show. The duck breast was perfectly cooked, pink and juicy, and a sensational crispyness from the skin. We paired it with a fruity cocktail and it was totally sublime. read more

4.5 stars. I came here for a light dinner and lunch. Gorgeous decor and fantastic service. Note that several dishes (charred octopus, salmon tartine) have pickled onion slices which were two overpowering in one bite. I would recommend cutting them up. DINNER Chart octopus is excellent. I especially like the potato gnocchi which add another layer of texture in this dish. The pickled onion was a little bit too pungent. Make sure you slice them to parts before eating this dish. Burrata salad: beautifully presented. The first couple of bites were delightful. But then my palate got fatigued was the richness of this dish as i continued plowing through it. Best to share. Tantalus Riesling - delightful try Riesling from Okanagan valley. It's in particularly go super well with my dishes but still liked it on its own. BREAKFAST: Salmon tartine was the best dish. Brightly colored and fatty salmon whose flavor was it enhanced with dill caper and pickled onion. Again, slice the pickled onions Smash avocado toast was poached egg. This dish is hard to make it super delicious. The avocado may need a little bit more acidity from the lemon.l, and the poached could have benefitted with a bit more salt on top Steel cut oatmeal - solid but not special read more
This restaurant is located within the Fairmont Pacific Rim hotel. Had a reservation for one, but as I arrived right at open, I don't think I really needed one. However, the restaurant did start to fill up shortly after, so do make a reservation in advance if you want to dine during prime time! I got to sit right by the kitchen, which has an open design, so I got to see all the action! What I got: - sparkling water - glass of pinot noir: Can't have duck without the wine! - salt roasted beet salad (manchego cheese, pecans, maple syrup, compressed pears): I was a little confused when this came out, as it was covered - I mean, COVERED - in shaved manchego cheese. But after shifting some of the cheese, I uncovered the beautiful beets and pear pieces. Lovely salad to start my meal. - dry-aged duck breast (roasted onion, tamale, salsify, red mole): This is the sole reason I wanted to come here, and it certainly did not disappoint! The crispiest duck skin around the perfectly cooked medium duck breast. A little pink in the center, indicating perfect temperature. A texture balanced between juicy and crispy that was impressive - I would come back just for this entree. A lot to eat by myself, but so worth every bite! I had excellent service from start to finish during my dining experience here! Would highly recommend during a visit to Vancouver! read more
Love love love this place. Definitely recommend it if you are in the mood for a fancy brunch. The ambience is so pretty and the food is delicious as well. The set courses with multiple options make this brunch a unique tasting menu experience. All the food we had very delicious (mushroom toast, croissants and eggs Benedict) and the portions were pretty generous as well. We definitely had leftovers to take home. Overall, wonderful brunch place in Vancouver. read more

This is, by a notable margin, THE best restaurant I've tried at this Michelin-star-y price-quality tier in Vancouver (I tried a handful of others during my 2 weeks in Vancouver). It's always been a delight to travel and visit places partially just to see the sorts of craftsmanship and creativity when people combine ingredients with technique, and the Botanist has delivered this in spades. I got the "We'll Take It From Here" (118 CAD) with wine pairing (60 CAD) and every every taste was a delight. Spoilers ahead - it was great going into this without expectation, so read the courses at your own peril! ===set menu spoilers=== Bouche plenty amused, 1&2: a ceviche atop nori cracker, incredibly balanced. Had an excellent, drinkable white. Hearty bread with a soft center and rich, artisanal butter. Salad: fresh produce-of-the-day tossed with a balanced citrus vinaigrette. I mean... it's a perfect salad coming from a restaurant that calls itself the Botanist. MOST AMAZING Appetizer: incredible dish of tender scallops atop roasted corn, floating in this buttery sea foam. This is prob the best dish I've had this year and is a surreal showcase of local ingredients paired with what I assume is New Canadian style -- I've never had anything quite like it. If you're not doing the set menu, PLEASE AT LEAST ORDER THIS DISH SOMEHOW. Protein 1: halibut atop a split pea reduction and some other veggies. Perfect execution, mild character. Protein 2: roasted duck with a savory tart. Again, good execution, just not super exciting. Not-a-dessert: an exquisite water buffalo ricotta drizzled with honey. Simple and elegant, perfectly showcasing the textures and qualities of both. Dessert: deconstructed berry crumble with a sorbet -- prob a stylistic choice, but they chose to finish the meal clean, versus kicking your ass with some heavy cream or dark chocolate thing. Refreshing and delightful. read more
