BEWARE - Bubba's BBQ likes to charge people extra just for the pleasure of eating in their restaurant. They charges us and extra $14.48 "service charge". I asked the manager what service we were given and her response was that we sat together. This is a total self service establishment. There is no service! The food is good, but when two groups go in (12 minutes apart) and sit at one table, they add extra charges to your bill without your knowledge.....TOTAL SCAM! They should be ashamed! Dispite the reviews this place is just bad. Meat is tough, sausage has a weird texture going on that feels like finally ground baloney super greasy, sides are small underwhelming and sauce might be from a can not a jar. The older lady working like a demon was great! (Manager? Owner?) She anticipated what we needed for take-out and had the young girls provide it. My favorite is a 2 meat sandwich (sliced brisket and sausage) with fried okra. Yesterday I tried the 3 meat plate (turkey chicken and sliced brisket) and it was very good too. Prices and quantity of food provided are good. Kenley (she prepares the meat portion of the meal) is always friendly, as is the rest of the staff, and she always does an excellent job. Look, maybe I am not an expert at judging brisket but this joint is getting 5 stars from me based on the melt in your mouth delicious brisket I had here. Like, seriously was the best brisket I have ever tasted and so tender you could cut it with the side of spoon. We were brought here for a work lunch by some local people, you walk in and it is unpretentious (score) and a local business (love) as opposed to chain. We walked up to the counter and the guy cuts your meat -- I did the brisket, then helped myself to a couple of sides - potato salad and coleslaw. I poured a healthy portion of "spicy" sauce on my brisket and went to town on my plate. There are some servers that bring you roles and drinks... the gals watching our table were super attentive and kept my ice water full (and brought me lemon which was a nice touch since I love that). Stopped by for an impromptu visit on my way back down to Houston from Dallas. I can't say it was amazing. Could have been the time of day but the brisket was very dry. Just crumbled apart. Now like I said it could have been the late time of the day I stopped by (6:30ish). The pork ribs were okay. Mild flavor. Mild smoke. However the smoke penetration was fairly significant. The jalapeño sausage was not very impressive. Something similar I can get elsewhere for a lesser rate. The chocolate pie was no bueno. Had one bite and tossed it. There are two options for BBQ sauce which is always nice. A spicy and a regular. Once again not much to knock your socks off but a nice option. All in all. Edible. In fact, I would venture to say that the baked beans are so good, I would go just for those--along with self-serve bread/pico/onions/pickles bar. Frankly, I'm perplexed by the (dishonest?) less than stellar reviews here and doubt their integrity. Their brisket is perfect, their ribs are perfect, if you wanted sauce--which is not necessary, the spicy one especially, is great; ice tea with choice of sweet or unsweetened: check; polite and customer-friendly staff: double check: and super helpful even in without forewarning, bagging their great BBQ in airtight bags for DFW. I even like their John Wayne and United States pride ambience--reminds me of my Texas dad. All in all, for my money, and without exaggeration, one of the best restaurants in the country. We stopped by here on April 1st and had an interesting experience. My wife ordered a sirloin steak well done. When the steak came out, the owner stopped by our table and immediately noticed it was not well done. He took it back to the kitchen and when it came back, it still was not cooked to my wife's preference. I took it back myself and on the third time, it was done pretty much right. Now, you might think this is a complaint and that I'd be justified if it took three times to get it correct. Yeah, that was a little disappointing, I'll admit. However, when the steak was initially brought out and before my wife cut into it, I noticed immediately that it was a very thick cut of steak. In fact, it may have been twice the thickness of any steak we've ever had. I've cooked a few steaks in my life and yes, that would have been a difficult cut to prepare, especially to make it well done. So we were understanding. Plus the owner and all of his staff were very friendly, apologetic and accommodating. That definitely eased some of the disappointment. My wife will only eat well done. She once had a bad experience as a kid with an undercooked steak and even after 30+ years, I can't change her mind. I took a bite of the steak when it first came out and wasn't well done (around medium) and I loved it. So I'm sure that had my wife requested medium well, things would have turned out better. I had sausage with potato salad and baked beans. I loved finding a BBQ restaurant in Texas serving baked beans. I just don't much care for pintos except when they're borracho style. My meal was pretty good. The sweet tea was awesome... I must have had 6 glasses! Overall, in spite of the steak, we still enjoyed our visit, understood their challenge and if we find ourselves in Ennis again, we would give Bubba's another try. I'll give them a solid 3 here, but if we ever make it back, I'm thinking it will likely merit a higher rating. Not sure why this review says I'm from the San Francisco area. This BBQ palace lets you go through the line buffet-style, picking your meats and sides, with whatever fixings you crave. - OR - Just pick a rib-eye steak out of the refrigerated case by the front door! You like a lean steak? Grab it! Want one with more marbling? Look for the fattiest slab you can handle! Then take it to your table, and give it to the waittress. She'll also get the rest of your order; drink, sides, salad, and potato choices. The only bad point is that this process takes longer than going through the line. If you are in a hurry, don't ask them to cook a steak! One other thing worth noting is that the ribs (and most other meats) are served dry. You pick the style of BBQ sauce, and add however much you like. This is a huge plus to me; I prefer my ribs fairly dry - so I don't need to hose off afterwards! I like BBQ, and I like Bubba's! Ok so I was confused at first it seemed divey but no bar. The owner might want to think about adding that in the future and finding a bigger space. This place to me has a lot of potential. I would say it's a cafeteria style restaurant. Reminded me of Piccadilly back in the day. As you walk up, they ask, what type of meat do you want. We choose sausages, ribs and brisket. You must have a good brisket to call your self a pit master in Texas. The brisket was the first to disappear off of my plate. It was definitely juicy smoked flavor and delicious. All of our meat choices where tender and came off the bone easily. I love the sausage being from Louisiana. I haven't found a good sausage out here to put with my meals yet. The sides we chose were green beans, cooked cabbage and into beans. The sides were excellent. We loved them. The brisket was good but could have been a little moister. It was warm and the regular sauce was also good and warm. We felt there needed to be a little cleaning done on the establishment itself. Stopped in for lunch while working in the area. The restaurant has a very nice texas/country atmosphere with lots of decor on the walls. Also, the entire place including the bathrooms was very clean. The staff was very attentive and friendly. Their great attitude and service alone would make me want to return. As for the food. I had the brisket and the turkey. They both had great flavor with the right amount of smoke. The one negative is that the brisket was a little dry. Great flavor but a little dry. The BBQ sauce was good but it was a little sweet.
