Good service, laid back staff, and a surprisingly good atmosphere outside, especially considering it's under a freeway. They serve both buffalo and beef - no fries, chips instead. The is a little hole in the wall that delivers BIG on service and taste! I ordered the Vegas bison burger minus the bun and habenero sauce since I'm on a restricted diet (minimal carbs). The girl behind the counter readily volunteered for my burger to be lettuce wrapped. I can honestly say this is the best thing that had touched my taste buds in months! My husband ordered the beef Vegas burger with bun and habenero and he was in Heaven! He also had the potato salad which he described as unique and absolutely worth a try. We also tried the Bakery Man homemade carrot cake, and my one bite was worth every carb I had to give up for the rest of the day! It was moist, full of flavor, and almost perfection. Simply delicious! Hidden gem! I get the Buffalo Cheeseburger and add a fried egg to it. Finger licking good. The Las Vegas is and explosion of flavor, so if you cannot make up your mind, that is the one for you. You can pick between beef or buffalo...I always go with buffalo, since it is so much healthier and tastier. Another plus is that they sell frozen buffalo patties, so you can grill those bad boys at home. Only draw back to that is, that buffalo tends to crank up the gas chamber, so beware. read more

The burgers were very good, but not out of this world. Unfortunately, one cannot get fries with them, because they don't have any (- 1 star). My girlfriend had a buffalo burger while I had a Beef Double Cheeseburger. We were very satisfied and finished our food after a night of dancing and getting up at noon and christening this food our first meal. Would I come back? yes, but I would prefer to try another local burger joint that serves French Fries in addition and a coke. we do not normally eat like this but sometime one can crave a real sloppy good burger masterpiece. This was very good, but not the best I have had. Staff is very kind, the place is local and a real shack (cool). They could do even better. Two burgers with nothing else but one lemonade and a orange cream soda about $24. With $3 at the counter tip $27. That is a $$ meal that did not satisfy all our burger cravings. Lack of fries -1star. Price and overall experience -1star. 3 stars for A-ok experience, but this place has potential to become more and better. The Vegas burger was quite good, but not necessarily the most amazing burger ever, so 4 stars for the burger. The bacon was better than most because it was cut a little thicker, crispy and lightly peppered. The main downside for this place is that they DON'T MAKE FRENCH FRIES OR ANY DEEP FRIED SIDE DISHES?!?!?!?! as has been discussed in many other reviews and amongst my friends that I went with, most people want to eat french fries, onion rings, or tater tots with their burgers. However, when I asked about it, they said they do not have a deep fryer and would have to remodel to get one, so they just haven't done it. They only offer chips or jalapeño potato salad for the side. I really like chips in general, and I really enjoy chips with sandwiches, but not with my burger. Yet on the contrary, I would not like fries with a sandwich, either. I guess that's an association that has been created and reinforced by restaurants, but it's just difficult for me to go against it. I don't like potato salad personally, but my friends really enjoyed the jalapeño potato salad and I thought it was at least an interesting version of a dish I don't like. The employees were very friendly and the outdoor seating is nice when weather is good like yesterday. Not having deep fried side orders is a MAJOR NEGATIVE, so even though the burger is pretty good, I can't say that it's worth driving to this isolated location just for a burger without french fries, so 3 stars overall. read more

Yup, there's no place and no better vibe than Bubba's. I was absolutely skeptical the first time I entered this establishment some 6 years ago, but it will always be my favorite burger place in town! When it comes to burgers, this is the kind of place I want to go to. No non-sense. Also it is LITERALLY a shack and yes it is underneath the freeway...but don't let that stop you, PLEASE. You have to try it!! I always get the buffalo cheeseburger with the potato salad (note: they don't have fries and I'm not the biggest chips person). ABSOLUTELY FREAKING FANTASTIC!!! The meat is well spiced, veggies are fresh, and the bun has soaked up just enough grease from the meat. For the vegetarians out there, their veggie burger kicks but! I gotta say, it might be a bit of a drive and definitely not a place I would go everyday, but it is one hell of a treat and one of my favorites. read more

After reading all of the reviews I decided to walk to 2 miles from my hotel to give it a shot(some over the top reviews). I have to say it was worth the walk...but I would say that some people overstate it's greatness. I went with the beef cheeseburger with chili on the side and a potato salad. All were very good. The burger was moist cooked just shy of med well and very flavorful. The chili was very good as a stand alone but the extra layer of flavor it added to the 2nd half of my burger was very nice. The potato salad was very good as well. Bottom line, like most things if they are overhyped there can be a let down. With that being said...if you come expecting a good burger full of flavor you won't be disappointed. Definitely worth a try read more

Whenever I'm asked where I'd like to go get a burger, my mind always thinks of Bubba's first, automatically! This place is THE dive of dives! Everything from the odd location (literally underneath Westpark tollway), the gravel parking "lot" where you basically make your own parking space, to the most basic, run-down "shack" serving a simple, but tasty menu of burgers, chili dogs, and potato salad--which btw, is amazing in its own right. I don't know exactly what makes these burgers stand out from other amazing joints in Houston (Stanton's, Pappa's, Beck's Prime, etc), but they're so uncomplicated and so good at the same time. Nothing innovative here--just a damn good burger! Only thing I wish they had was fries. Seriously, I don't think I've ever been to a place that serves burgers without fries. However, they more than make up for it by selling their pasture-fed buffalo ground meat and whole roasts from their freezer. read more

Stopped here today with 3 guys from work. 3 of us got the bison burgers. By far the worst bison burger I've ever had. Our bison burgers were extremely dry and over cooked. Tasted and looked like pre made frozen patties that they drowned in seasoning to try to cover it up. I also found 2 pieces of plastic wrapper in mine. The only reason I'm giving it 2 stars is because the 4th guy got a beef burger and said it was pretty good. I'm disappointed because they had been talking this place up for a while. Blink and you will miss it as the shack is under a fly over. Had the Bacon cheese Buffalo burger and a beer. Very good burger and good atmosphere. Tv on the patio area to watch sport, the baseball was on while I was there. Would be a good place to hang with a few friends and watch a game. Simply food cooked well. Man. The realest buffalo burger you can get. You ever get a taste bud erection? Well you will when bite into that lean buffalo. There's the perfect amount of seasoning and has really blended well. I had a double meat and since buffalo has 70% less fat, half the calories and a 30% more protein, it doesn't feel heavy at all and you feel perfectly satisfied afterwards. These people know what they are doing. Not much to look at as far as scenery goes, but who cares, we're here for that buffalo! Nonetheless a real chill time can be had outside on the deck. I've tried a lot of burgers in Houston because it is my favorite food. I have a lot of favorite burger joints--all for different reasons. This is my absolute favorite place to get a burger. Bubba is super friendly, and knows how to make a really mean buffalo burger. Very fresh, flavorful, and just the right amount of stuff on top. And you have to try the potato salad. I promise you won't be disappointed about the lack of french fries. The location is under freeways because it is the only thing that survived the construction. Apparently, the construction workers kept coming around for the awesome burgers. If that's not an endorsement, then I don't know what is. It's pretty surreal to sit in a shack that feels like it should be in a small town in Texas situated under freeway ramps. read more

With all the hype surrounding this place, I expected much more. But as it seems with many over-hyped places, the high expectations fell flat. The first topple was when we walked in the door. Hole-in-the-wall places have their own unique charm in that a certain amount of grunge is expected and accepted as long as it doesn't cross the fine line into filth. I actually love a great run down hole of a place as long as it's well kept. Bubba's isn't filthy but it does lose its balance on that aforementioned fine line. The table was sticky and the floor gritty feeling. Rather than a fittingly dated feel and look, the restaurant was, to be blunt, dirty. The location, which is underneath an area of the freeway, does nothing to help this. It just makes it worse. To me, the whole package: location, exterior and interior was just...dirty. The service was another area where Bubba's got off balance. Service was uninterested if unfriendly. The orders were placed to an employee with no smile, no greeting and no apologies. Food was handed to us in the same manner. I don't expect waitstaff to fawn over me but even he slightest smile or mumble of a welcome is better than nothing. The food was the final fall. The buffalo burger was on the dry side and without taste. I know lean meat isn't so juicy as higher fat content but this dryness was unacceptable. The buns were average quality bread and that's all. The bacon was the best part of the burger and not just because it's bacon. It was the only ingredient with flavor. While nothing special, it was at least some flavor. Neither of us fully enjoyed our burgers. If you like fries as a side with your burger or even onion rings, you'll not be getting them here as Bubba's doesn't have them. They serve potato salad but I can't comment on that because I don't like potato salad no matter what. They do have a small variety of potato chips but we passed on those. Drinks sold here are standard sodas. Bubba's also sells beer for those who like it. My experience with this place left me disappointed and not interested in coming back. It seems popular enough and there are many positive reviews for it. The only thing saving this place from a one star review is the fact that service, while not friendly, was prompt and efficient and enabled us to get out of this place quickly. I just cannot be one of the reviewers who love or even like this place. Maybe it was an off day or such? I don't know. I do know that I will not be coming back. read more

Bubba's holds a special place in my heart. A very special place. I've been a frequent regular ever since I first set foot inside the quaint little shack nestled underneath the Westpark tollway. What's great about this place is that it delivers what it advertises in its name. As you've probably gathered by now, this place really is a shack. The entire establishment is housed in a small, creaky wooden house. Inside, a huge the paint-chipped walls are covered with tons of quirky knick-knacks that really help recreate the Texas icehouse atmosphere. Take some time to look at a few while you're waiting in line. You'll see some neat pictures of Willie Nelson giving Bubba's a thumbs up or one of many hilarious bumper stickers! Now the burgers. Oh, the burgers! I absolutely believe it takes talent to skillfully cook a buffalo patty. Given its incredibly low fat content (Bubba's proudly champions its meat as being better for you than anything under the sun), it's very easy to overcook buffalo meat, leaving it chewy and dry. Fortunately, Bubba's get's it right. On on the menu, you have the option of choosing buffalo or beef. Honestly, you're missing out if you opt out of buffalo. On my last visit, I ordered my usual double buffalo cheeseburger with smokey jalapeños, cutting out the mayo. Because Bubba's is in such a small shack, deep fryers are non-existent. I've seen some patrons put off by this, but it doesn't bother me one bit. Bubba's is strictly burgers. Besides, there's something admirable about a joint that doesn't hide its burger behind a mountain of fries. Do try the 92¢ jalapeño potato salad, as it complements the juicy burger very well. For those of age, Bubba's also offers a respectable selection of beer (from PBR to Saint Arnold's) and soda (Jones, Boylans and your favorite canned drinks) to wash down those smokeys. The burger I had that day was utterly divine. The patty was cooked and seasoned to perfection, and the burger garden of lettuce, tomato and onion looked incredibly fresh. Through conversations I've had with the owner himself (the staff is incredibly friendly. they are simply awesome), I found out that all of their vegetables are purchased from local organic farmers. After about three bites, I began to see the meat juices pooling at the bottom. If you can, look up a picture of a half-eaten Bubba's burger to see what I'm talking about. Let me know how long it takes for you to start salivating. It takes me about 4 seconds. Bubba's not only delivers what they promise, but they deliver it incredibly well. If you're still uncertain about whether or not you should invest a trip over to the best little burger shack in Texas, consider this: Bubba's was around BEFORE the Westpark tollway was built.
