I got this the other day and it made me so happy. 4 stars for stellar tongue (lengua), though there was some miscommunication/language barrier. ========== $15 for 5 tacos and one horchata $2.50/ lengua, cabeza, tripas - everything else was $1.50? Lengua DELISH. Not sure if this is the norm price anymore, high chance u_u it's been so long since I've had good lengua in the vicinity, but wow. So so good. It's relatively juicy, not gamey. It's not cut up in chunks compared to other places, it seemed a bit more piecey. My tastebuds were dancing. Pollo I got this to try, wouldn't get again. Slightly dry, nothing to write home about. Pass Al pastor I think it was Al pastor lol it was slightly dry, pass. Tripas (extra crispy) Very clean! They did a nice job making sure no nasties was inside the intestine lol crispy and not gamey tasting. I like this more than the bravos tacos on Bristol. Nice job! Horchata Just a tad less sweet/rich than our fav, but still very solid. Not watery and not full of ice. Sauce Got the light green one, and it went well with the tacos. Flavorful, spicy but not overwhelming. Though not a huge issue, but we asked for one tortilla (less carbs), and our other taco order was missing. All tacos were served on two tortillas. The handmade taco was MIA also lol Oh whales. Next time! Located in a neighborhood that's not the most brightly lit. I'd come here when it's brighter ^^; but service was friendly when we conveyed what was missing.

Great little truck in a random neighborhood in Santa Ana. Serving up some really good tacos. If your familiar with the area you will know that these little trucks just park themselves in their designated spot. My co worker recommended this place for our lunch break. I had a carne asada tacos and they were very yummy. There are a couple of tables in someones front yard that you can enjoy your food. Staff was very nice. Truck was clean I am a fan.

Let's taco bout this gem on wheels. $1.25 for authentic goodness, count me in. My bf & I got both the asada and al pastor & both meats were delicious. Seasoned well & juicy, there's nothing more to really ask for - except pineapples would be nice lol We also liked how there was a mini cooler built within the truck that we were able to pour our own sauces with the mini containers they provide (don't forget to get the green avocado salsa!) Location seems a little sketchy but other than that fast service, friendly employees plus tons of parking for you to enjoy your meal as soon as you get your hands on them. TIP: they double their tortilla for each taco so with the excess meat that falls on your plate, make an extra taco or two with one of the tortillas. You're welcome ;)

Delicious tacos for $2.50 a taco! Count me in! Don't let the food truck deceive you! Appears to be very clean inside. Tacos were made quickly! Service is great! Very nice people! We tried the el pastor, pollo, carne asada, and carnitas. We ordered them a mano, which was $2.50 instead of $2. Meat was tasty and not full of grease like other places. Had a nice touch of grilled onions on top of it. Sauces are available on the side of the truck. All served on a delicious corn tortilla that tastes quite fresh!

So I was on the hunt for a taco craving. If you live in LA you know you can't throw a rock without hitting a great taco. I stumbled upon the Cabanas Tacos and was pleased with the find. I had to get my favorite selection. Lingua and Carnita tacos as well as a Cubana Torta... delicious! Great customer service. They do need to keep up twitch the condiments on the outside, but other than that it was a great meal!

Classic good taco truck. There was nothing super special about them; I ordered the tacos al pastor and the carne asada tacos, preferring the former. To mention the service: my mother told me to say that the staff was rude while she was ordering. It's an easy way to get some normal tacos if you're in the mood.

Reminds me of tacos I had in Tijuana many years ago. This is how tacos should be made and taste like. It looks like you plain and average tacos but it's packed with lots of flavors. Cheap eats but big bang for your buck. $1.25 per taco vs. $3-$4, and this is their everyday price. Why wait for taco Tuesday? The truck is clean and the two female workers were polite and accommodating even though their english is limited. They have 3-4 different hot sauces to satisfy your pallette. They are the only food truck at this location and I've been told they are there all day and have been at this location for a long time. Will definitely be back and recommend.

I've been here at least half a dozen times now and it's a solid 5-Star taco truck. They charge $1.25 a taco and they are excellent. My favorite is the Al Pastor but you can't go wrong with any of them. They offer a nice selection of salsas and plenty of parking to boot. I'm getting hungry again just thinking about it.

The tacos and burritos are amazing. Very flavorful, very filling and the grilled onion they put on the tacos takes them to a whole new level. Much recommend.

This place never family. Their carne quesadilla is tasty. Al pastor is good. And they have all the crazy tacos too buche, Tripa, lengua. Those are the ones we try to find when eating at a taco trust. Not a lotta people have those varieties. And u can't beat the price. We got about 30 tacos n a quesadilla for $50 They take CC too. Line gets long during dinner time. We go here all the time when we are in the area.

I've been trying a bunch of taco trucks in Santa Ana and this one is probably one of the best. 1.25 or 1.50 (special meat) per taco is a steal. The meats were seasoned really well and they give you grilled onions. My favorites would have to be the Cabeza and tripa tacos. Only complaint I have is that they give you a certain amount of cups for the salsa and if you want more it's 50 cents per cup. They gave about 6 small 1 ounce cups for about 25 tacos and 1 quesadilla that I ordered. Definitely not enough salsa.

    Al pastor, lengua, tripa

    * Parking and Location * This truck is located right next to a large parking lot, so parking is simple. There are salsas and condiments out for you to pile up, and small stools for you to sit on while you wait/eat. * Food * Al Pastor - The al pastor here was slightly drier on its own compared to a few other trucks I've tried, but the flavor was great. With the salsas though, you can't even tell that the meat itself is drier. It all just blends together and tastes AMAZING. I would order this again for sure. Lengua - The meat was super soft and tender and the taco had a good amount of large chunks of the lengua, rather than small pieces that other trucks may give. All three tacos had a decent amount of meat on it, but the amount of lengua was ridiculous, I've never seen so much lengua on a taco before. We were wondering if maybe it was because we were there a minute or so before they closed so they had extras they were trying to get rid of or if it was the normal amount, but if it was the normal amount, it was LOADED. Tripa - We were excited about the tripa since they came out looking super crispy. The first time we got these, they ended up being chewy underneath the crisp, but the second time, they did not disappoint. Crisp and perfect. The salsas were so so good though. My mouth was even slightly tingling after finishing the tacos. LOVED the kick the salsas added. * Service * The two ladies working the truck were super nice and even took orders from a party that came a few minutes after they closed. Very sweet ladies!

The photos caught our eye, but they don't even do justice to the actual experience. The modest facade completely hides the gem buried within; the moment you step through the doors, you are transported into a beautiful, vibrant atmosphere. Despite arriving just before 7:00 PM on a busy Saturday night, we were seated incredibly fast. We had the absolute pleasure of being served by Karla (with a 'K'). Her enthusiasm, attentiveness, and deep knowledge of the menu were top-notch--truly a model for how the entire service industry should operate. As for the food? Out of this world. From the presentation to the flavor, the attention to detail is flawless. It is completely clear that Rosa Madera was created by someone with immense vision and heart, and they've managed to find a staff that shares that exact same passion. We are so hooked that we will absolutely be making the trip back from San Diego with the sole purpose of eating here again. Thanks to Restaurant Week, we stumbled upon this gem, and we are so grateful. The hospitality alone would earn five stars. But then came the food. The tacos? Absolutely exceptional. The steak was tender and flavorful in a way that reminded me of eating throughout Mexico, you could actually taste the meat. A light, gentle pickle of vegetables on top, minimal cheese, nothing heavy or greasy. These are not the American-style tacos drowning in a pound of melted cheese. These are the real thing. The beans were lovely, the rice was solid, and my passion fruit winearita drink was genuinely a treat. Restaurant Week gave us the perfect low-pressure reason to try somewhere new, and we walked out with a new favorite. We'll be back for lunch. We'll be back for dinner. To make matters worse, one of our meals was completely forgotten. The service was extremely slow throughout the entire visit. Every time we needed something, whether it was a refill, an update, or assistance, the wait felt excessive. The restaurant may have potential because the food itself was flavorful, but it seemed like they were either understaffed or unprepared for the number of customers they had. Another disappointment was the drink selection. We were told they don't have a liquor license, so hard alcohol isn't available. Their sodas were canned, and when we asked for juice for the kids, they told us they were completely out. As for the atmosphere, the restaurant is on the smaller side and felt more like a converted house than a traditional restaurant, complete with a fireplace and television in the dining area. The food had good flavor, which is the only reason I'm giving more than one star. Unfortunately, the long wait times, missing meal, lack of drink options, and poor service made the overall experience disappointing.
