Cabo Mexican Grill in Brier Creek has very good potential to become one of the best restaurants in Brier Creek with a few changes. The food was actually really good overall. The chips and salsa were solid, and the dishes had good flavor without being overly salty, which I appreciated. That said, it feels like they are trying to create an upscale Mexican restaurant, but the overall execution is not quite hitting the mark yet. One thing I would suggest is making the menu smaller and more focused. There are a lot of items, and realistically, no restaurant can do that many things really well. A tighter menu could help the food feel more intentional and refined. The biggest miss for me was the margarita. It tasted like it was made with a mix and was way too sweet. Using real citrus juice would make a huge difference and would better match the quality of the food. The margarita was also enormous. If cost is a concern, I would happily pay the same price for a smaller drink made with higher-quality ingredients and fresh citrus. The atmosphere is okay, but it could use some refinement. The TVs felt unnecessary and made the space feel a little cheaper than it needed to. The menus themselves were also too big, the tables were a little close together, and the color temperature of the lighting near the hostess desk was awful, with too much of a blue hue. I also think the space could benefit from more art on the walls, and I think real plants would go a long way in making the restaurant feel warmer and more intentional. Service was on the slower side, though the staff were pleasant. Overall, I'd come back for the food, and I think with better drinks, a more focused menu, and a few atmosphere changes, Cabo could really stand out in Brier Creek. read more

Cabo is a brand new restaurant, I look forward to trying them again in a couple months! The good: Cian was our server and he was great, he did everything he could to make sure all his tables were satisfied. We were served water and chips & salsa as soon as we sat down. The chips and salsa were delicious, the chips came out nice and hot. My party ordered a strawberry margarita tower to share, and it was smooth and delicious. The bathrooms and restaurant are beautiful. I love the design and color scheme. I had the Burrito King Cabo for my entree and it was delicious! I loved all the meats and it had a good level of spice. The bad: Our cheese dip took a while to come out. A table that was already seated when we arrived at the restaurant got their entrees after we did. I spoke with some friends I saw at another table, and they went through 3 baskets of chips and were still waiting on their food... so you can tell they are still working out some kinks in the kitchen. I'm so glad they are FINALLY OPEN!! You know every new place has growing pains when they first open, but I am confident this place will work out the kinks. There is quite a bottle neck effect when walking between the round tables in the front window and the tables opposite those tables. I certainly hope they get smaller tables to address this as it is a fire hazard and quite uncomfortable to navigate. The place is absolutely beautiful! We thoroughly enjoyed our girl's night out and taking in the beauty of the place while sipping on margaritas from the tower. The chips, salsa, queso, and my entree were all amazing. I ordered the chicken Hawaiian and was pleasantly surprised that it was served in a pineapple. The presentation was beautiful. When we walked in Cabo Mexican cuisine, I immediately looked at my friend and said wow! Inside was decorated so beautifully, it was authentic upscale and something I wanted to just sit around in! Food was good, server came immediately and helped us. I got fajitas with shrimp and they did not disappoint. Chips and salsa were delicious. First time in the relatively new Cabo Mexican Cuisine restaurant in Brier Creek. The interior is modern, elegant, nicely spaced with booths and tables, plus a large bar. It was not busy when we arrived, but a couple of hours later, around 7pm it was visibly getting popular. Our wait person, Madelyn, was friendly and helpful, with the right amount of attentiveness. The food was great - tuna bites for starters (a good substitute for calamari, not on the menu) followed by chicken chimichangas, then Dubai chocolate cake, all excellent! Definitely will return soon. A nice addition to the Brier Creek area. (Note to Management; staff who answer the phone need to be 'on the ball' and properly trained. First contact with any potential client is crucial.) read more

Cabo Mexican Cuisine is FINALLY open! After a lengthy wait as the signs had been up for quite a long time, the restaurant had their soft opening on May 13. I dined with a few friends for lunch a few days later (some of us have to work). The restaurant is in the former Applebee's location in Brier Creek, and it has been thoughtfully remodeled. I really like the appearance and design of the restaurant. I had the opportunity to sneak into the restaurant and take some preview photos last year (plenty of alcohol in the bar now). I arrived last, so my friends already had beer, chips and salsa on the table when I arrived. I ordered a mango house margarita to enjoy with my Chori Pollo lunch. It came out quite quickly and the flavor was good. As the restaurant is brand new, I am withholding judgment at this time. I enjoyed my meal and will go back in the near future. read more

This place is so nice! Apparently it's fairly new as there was a "now open" sign outside of the restaurant. The decor is so modern and chic! I loved it! The staff were all extremely friendly and welcoming as well. The food was absolutely delicious! I may be biased though because Mexican cuisine is my favorite lol. They're seeding sycophantic reviews. Here's accurate and objective feedback: Food: Sysco special. Chicken tenders and fries for kids were drowning in salt and rubbery (looked like school cafeteria food), burrito was just a pile of filling with a tortilla thrown on top (ive never seen a burrito presented so poorly) and it was flavorless and chewy, and the kids tacos tasted dog food grade. We also ordered a cocktail and they brought the wrong one back and said final sale (is this K mart? What do you mean final sale?). When I pushed back she offered me a shot of JUICE to make up? Ridiculous. Service: slow, unprofessional, cold. When we came in and greeted the manager she ran off and waved us to the hostess. Bad sign. Hostess seemingly never heard of a booster seat (this is supposedly a neighborhood/family friendly grill). The server refused to write anything down, got our order particulars wrong, barely checked on us, offered us a pen and her order pad when we asked for crayons/kids worksheet (so bizarre). The place was empty on a Saturday at lunch yet there were 10+ employees on the floor sitting in the corner gossiping (I speak fluent Spanish). Ambiance: eerily empty, very green/unprofessional staff, no energy or vibe just utensils clanking, nice furniture and design that does not at all match up with the amateur service. It was our first visit and I was pleasantly surprised. It's new and cleaner than other local Mexican restaurants. They have a grade A (95) hanging near the hostess table. Inside, there is all white seating with gold and green accents give it a nice contrast and upscale vibe. They use glasses which is preferred over plastic cups. Chips and salsa was good. Service was slower than expected but still good. Our server was attentive. I ordered a Lemon drop with reposado, it was $18 but delicious, nonetheless. Our dishes: birria tacos very good, ribeye (no seasonings and smoky), chicken flautas- bland, beef chimichanga, also bland. Street corn had hot Cheetos on them, didn't love that (Single serving $7), and the queso was very small but pretty good. Food came out hot and took a while to get drink / chip refills. Overall, the meals were decent and we can hope that over time, they'll improve. I'm willing to try them again as it takes time for restaurants to find their groove. Great location, Brier needs more upscale dining options. Lots of potential here. read more

This is the kind of place we want to keep a secret. You know, that place that surprises you and suddenly you crave their food? We've had a lot of Carne Asada in the area but this venue has THE BEST! The meat was tender and VERY well marinated. It came with a generous scoop of guacamole, several grilled onions, a block of queso fresh, and a yum cup of refried beans. We highly recommend it. Next up, tacos.... Been there done that at other places with the shrimp tacos that tasted bland and a heaping pile of cabbage - NOT here! The Tacos Baja were fantastic! The balance of sauce, cabbage and grilled shrimp was fantastic! The white rice was an odd add but not unwelcome. Service was great with multiple visits from Alex and Carlos to be sure we were taken care of throughout the meal. It was Rosalind's first night working and she did a great job! Went here about a week ago. Was told at the hostess stand the kitchen was overwhelmed and they're not seating anyone at the moment until they can catch up. Waited about 20-25 minutes before we were sat. I've been excited for this place to open so wanted to try. Prices are fair and the ambiance is great. I love the decor. Food was good but needed more seasoning. Ordered fish tacos and was slightly confused why it came with a side of white rice. For the price I was expecting more or mexican rice and beans. The tiny salt and pepper shakers were cute but not very practical. The service was excellent and they were very attentive. Will love to try in a month or two and see how they're doing. read more

I understand that restaurants put something on their menus so as to please everyone in the party. But why put a lobster and shrimp pasta or Cordon Blu on a menu in a Mexican restaurant? Or filet mignon? The salsa was average, the chips seemed stale and rice bland IMO. Will we go back? Probably, we live close by, but we have to drive by a Mexican restaurant that we have been eating at regularly for over a year so it will be a decision. read more

Had the lunch chicken fajitas. The meat, veggies, rice and beans were good. It was all served on a regular plate, not on a sizzling skillet. Missing lettuce, tomato, cheese and no sour cream either. My wife and I went to Cabo Mexican for an early dinner. We were somewhat in a hurry so no drinks. I ordered the the Enchiladas King Cabo which was very good with beans and rice. The beans and rice were good and some of the better accompaniments I have eaten in the area. My wife ordered the Enchiladas Beja which came with shrimp, potato, (mashed potatoes) and a mix of fresh vegetables on the enchilada. There were two shrimp per enchilada on the top with the veggies. My wife ate the shrimp and started eating the enchilada where she found mashed potatoes in the enchilada, something I have never have seen before. She did not eat the enchilada, just the veggies and shrimp and very little rice. First thing that caught my eye on the menu was the Fresh Guacamole was Market Price another first! Overall the atmosphere was good (new decor) the service was very good and prices were just a couple more for most Mexican food. We will probably be back for other dishes. read more
