They stick to what they know and avoid the fluff. Margarita pizza was hands down the best, added sausage to it and that was by far the favorite. Able to get on waiting list online, checked in when arrived, and were sat quickly. Timing for online wait was accurate. Food came out quickly. Our server was bartending and serving tables...God Bless her and she did a GREAT job. All the food was great. Pretzel is enormous!! Finally tried Cadillac Pizza Pub at the urging of a friend. At 4pm on a Friday it wasn't crowded, but the after work crowd was starting to build by the time we left. The place is small so I can imagine there's a wait later in the evening. The place was loud, even without a crowd. They appeared to have a nice selection of craft beers. The servers were friendly and the service was fast. However, I didn't enjoy their pizza as much as I thought I would for a pizza place. They only had one size (10"/medium) and it was extremely thin crust.....almost like a tortilla. I've been on the hunt for good pizza in TX... this place was a success! We sat at the bar because it was super crowded - I'd definitely recommend joining the waitlist ahead of time. I think of the two, the smokey pie was my favorite but both were great. The pizza dough was not anything special but I'm coming here more for the specialty pies/toppings. I think it being wood fired made it even better. Definitely a cute place to hang out at and they had tvs playing the sports games. So good! I love the pizza here. My boyfriend and I shared the all American and bees knees (half and half), super satisfying! I recommend doing a half/half pizza to try more of the menu. The Caesar salad was really good and was loaded with chicken. The lasagna was excellent! The cheese bread that came with it really made it 10/10. I've come here twice now and will be back!! HOLY YUM!!!!! The honey bee cocktail is delicious and refreshing for the summer time! The queso is a must get and I love the spin on serving it with Fritos. The star of the show is the pizza. The thin and crispy crust doesn't leave you feeling heavy. Last weekend was Oktoberfest in McKinney. Hankering for pizza we ventured over to Cadillac Pizza Pub which has been booked marked on my list for sometime. I'm glad we gave it a try, we had to check into the hostess stand outside and wait about 10 min. to be seated inside as that particular day even around 8 PM was still 90 Degrees! We were sat and the friendly waitress promptly took our order, to share we stared with the cheese bread...a MUST!!! I am still dreaming about this bread. For our entrée was the wood fired Goat and Fig which is a crispy pancetta / goat cheese / fresh mozzarella / dried fig / balsamic drizzle / fresh basil. Service is always good. Most employees have worked there for a while. Ambiance is casual and local. Usually see someone we know. Food is consistent. We love their pizza..thin crust. Also offer cauliflower and gluten free options. There are a few off menu pizzas so ask about them. Nice staff. Music on weekends. You can get on a waitlist online, but it's not always accurate. Check in at door. This is one of McKinney's faves so expect a wait on weekends. They will text when it's your turn so you can walk around downtown while you wait. read more

This pizza spot has been on our list to try since we moved to McKinney. We finally got a table at the spot on a late Friday afternoon. We were surprised Ashley get a table since this place is usually pretty busy leading up to the weekend! The restaurant offered live music and seems like a great spot for families and couples alike! the restaurant itself is pretty small, but there is plenty of outdoor seating as well. Although since it's patio, weather is pretty limited. My husband and I split medium pizza and while I was full my husband was still a little hungry. Since the pizzas are mostly crust, they can be a little less filling! I personally love a thin crust pizza so these pizzas checked a lot of the boxes for me. There's plenty of other pizza spots around the metroplex so this wouldn't rank the highest on my list. The crust was cooked well and not burnt, which is easy to do with such a thin crust! I've given this review lots of thought before posting. Let me tell you exactly why I will never spend another dime at Cadillac Pizza, despite the INCREDIBLE servers, and bartenders, and kitchen staff. Having supported this place every single day for 3-4 months prior since moving downtown in Novemer 2024. I live on the square; often tipping bartenders and servers the full amount of my ticket or more. I live on the square. I used to love this spot. I brought friends, family, and dates here. I even posted about it, advocated for it, and made it a part of my daily routine. That loyalty? Apparently it meant nothing to the assistant manager, or the general manager (I will not name them out of respect), who decided I wasn't welcome anymore, based on nothing but assumptions and ego. Here's what really happened: I came in with my best friend, sat down like any paying customer, left and went to another place on the well known square, and came back to order food and drinks, as I normally do. Minded my business, as I've done dozens of times. I was even told, "See you later" by the hosts before returning the second time. (As I am OFTEN here multiple times per day.) The next day, the atmosphere completely changed. I didn't even make it in the door before I was being treated like a problem... why? The Assistant Manager pulled me outside the very next day. Not to ask questions. Not to check on a concern for a LOYAL customer. No, she told me the employees matter more. She not only talked at me like I was an employee of hers, a child, smug and condescending, accusing me of "making her staff uncomfortable" (AFTER 4 MONTHS OF BEING HERE DAILY). Because, get this: I had politely asked the HOST how old she was before asking for further interaction. I did that out of respect for the person and the business, not just making sure she was of age before initiating any contact. I didn't harass her. I didn't make a scene. I didn't even push past a "no."in fact, she aksed me how old I was in return! I was 100% polite eyewitnesses, from the staff and customer base have stated. I respected that staff and their environment. But the Asisstant Manger wasn't interested in the facts. She didn't want context. Even after I requested she return to my table to hear the full story / context she wasn't privy to. Her mind was made up as "Mama Bear", she claims. From what I gather, due to me bringing different female friends into the establishment over time, at different times (including my cousin, no less), she decided I was a "player" (my words). That's the level of judgment I was met with, not professionalism of management. Not communication. Just assumption and attitude. To make matters worse, after I vented privately to a "regular" friend from the gym...at a fellow local bar... that person went straight to Cadillac Pizza management as if they had nothig better to do. Suddenly, I'm banned. No explanation. No conversation. No one, not the Assistant manager, not the GM, has responded to the FOUR separate emails I sent requesting clarification on the matter. Let me repeat: I was banned for calmly expressing discomfort over how I was treated, due to an Assistant Manager who felt more like a high school mean girl with authority than someone capable of handling people. It's a shame, really, because the bartenders and servers here? Incredible. Some of the best I've EVERT met. But they're being led by managers who stand around judging customers from the corner instead of building a community. THEY NEVE SPOKE TO ME OTHERWISE! Cadillac Pizza loves the idea of being "local," but when it comes to how they treat actual loyal locals? That mask slips fast. If you're reading this, Cadillac, I genuinely hope you do better mangement wise. Because the way this was handled was disgraceful. I showed up with respect, every single day! I spent $1,000s of dollars. I supported your business every day. And you threw that away over assumptions, and a manager on a power trip. Your customers deserve better. Your staff deserves better. Our waitress was just doing her job- getting orders placed and served. We order the Cesar salad and the bees knee's pizza. The salad was good, fresh nothing to really speak of. The pizza was tasty, crispy crust, spicy sopprasata with a honey drizzle. The honey itself was good but not on pizza. I did get a caddy margarita. It was not worth the money. We couldn't settle on just one pizza so our server suggested Half Goat & Fig, Half Bees Knees, so we did. Jalapeños were very tasty with the bacon Crumbles and housemade Cilantro Ranch. Both of us thought the Goat & Fig was delicious with nice salty and sweet nuances. The Bees Knees was more my style, really enjoyed the heat. Very satisfied and we will be back. If you like good tasting thin crust pizza you have found your place. It is also situated perfectly in downtown McKinney. We had the cheese bread and deviled eggs as appetizers and they did not disappoint. Not a huge fan of deviled eggs normally but put bacon, ranch, jalapeños and shoe string potatoes and you have my attention. The cheese bread was super good and gave us a preview of the goodness that was forthcoming. We had the people's choice pizza and it was like everything good in a pizza and nachos.
