Food was not good. Only a couple things we got were decent to eat. BBQ was dry and hard. Atmosphere was neat.

Even though there was a very limited menu, our lunch here was yummy. The staff are friendly and knowledgeable about the menu and the ales they brew. The Carillon burger was fantastic and their brats are tasty too! Their ales are served at room temperature so be mindful. They also make their own sodas too. read more

Excellent dinner this evening and Carillon knocked me out of the ketosis zone with their excellent beers! We started with the sauerkraut balls which were delicious and the spicy horseradish was good. I think a spicy mustard would have been better. Ate them all. Main course was a burger minus the bun, with sauerkraut rather than fries. Burger was cooked to the medium rare I requested and served with all the LTO and pickles too. Delicious to eat with knife and fork. I chose to go with a flight so that I could enjoy some different flavors. The porter was great, the spicy coriander was excellent, the pale ale was good and the beet was too sweet. Hey, it's not going to please all palates but I was happy with my choices. Good service from Kevin despite the fact that our table was far from the kitchen. This was our first time eating here and definitely will not be our last. I loved everything from the ambiance, to the food to the people. You walk in to a beautiful wood paneled building with oak barrels stacked and lifted with pull systems. Behind the counter you'll see a large stone hearth with a welcoming fire. There is an indoor , outdoor and upstairs eating area. We chose to eat indoors. My only negative involves ordering. I'm not sure if it's always been this way or if it is due to covid but you walk in and order food abs beverages at the counter immediately before sitting down. This tends to stress me out, especially at a new place. Thankfully the cashier suggested a beverage based on their special and the food menu is pretty limited so I was able to choose something quickly. We both had the rye cask ale that was on special. I chose the Carrillo burger and my fiancé chose the rueben. We both upgraded chips to potato wedges. The wait for the food seemed to take awhile but we weren't in a hurry. The food was WORTH the wait. I highly recommend the carillon burger it was a perfect blend of flavor and was cooked to perfection. The rueben disappeared quickly as well. This restaurant is marketed as a 1800 time period establishment with foods and drinks of that era. Interesting concept and atmosphere. Once seated it did take at least 10 minutes of people in period attire walking past our table for one to finally come over and say they were our server. We just ordered a Juno pretzel and the sauerkraut balls which both were very tasty. We also had a flight of their house made ales which were pretty good as well. Overall it was good. read more

I've been here a few times now and I've always had a great experience. The beers are super unique and quite enjoyable. I really enjoy the beet beer a lot. It definitely surprised me. My husband and I enjoyed learning about the beers from one of the brewers. It was a very cool learning experience about how beers are made and how to describe them when trying to order something new. The inside and outside offer great seating options. Insides is a really cool throwback. Outside is so peaceful and relaxing. This could be a five star review if they improved on thing and that would be the food. As another reviewer has stated they have nothing dairy-free or vegan. If they could make something that is authentic dairy-free that would be great, but honestly I'll take anything. This really won't stop me from coming, but I'd probably come more if they did offer something that I could eat. read more

The location is nice and the beer is good. We had some Kölsch which was tasty and not too hoppy. The beergarden outside in it's historical surroundings was nice and calming. The service is reduced to the extent that they will bring your food out to the table, you have to order foods and beverages at the counter. The food is another story. We had a Curry Wurst which was disappointing and not nearly what the German original would look like. I suggest looking at one of the Berlin originals or some in the Ruhr area in Germany. WITTY's Currywurst in Berlin for example, my personal favorite. That one is an extremely fine ground and smoothe pork bratwirst sliced up and covered in curry ketchup. It has to be real ground curry and could also be a bit hotter with some pepper. This Bratwurst was bland, corse and served uncut like a hotdog in a bun with absolutely no curry spice to it at all. The potatoe salad, though not in any way nearly an original receipe either, is good in it's own right. Very unique and I liked it. read more

Their hours are a little odd and I found it hard to find a good time to go while they were open. They are also closed a lot for private events so I suggest checking on their Facebook page to see if they are going to be open when you're going. Rude and extraordinarily unfriendly! They seem aggravated that we're even here wanting to eat food or order drinks. You have to stand in a very long line at the front door and wait at least 15 minutes to place your order there was no sign of a thank you or any helpfulness at all. I grew up going to Carillon Park to see the trains, and it's a welcome surprise to be able to come back now and have a beer and dinner. Carillon Brewing is a brewery, restaurant and museum all in one and makes for a great experience. It's very authentic and they primarily serve German food. We made a reservation for 6:30 on a Saturday, but there was really no need. The place was pretty empty the entire time we were there. There were an army of waitstaff there however which makes me wonder if they were busy earlier in the day or if it was just a slow shift. As it was, Brooke did a great job handling our party of 10 and food and drinks came out quickly. I tasted a couple of their beers, but decided to opt for a glass of their semi sweet wine that they make in house. For dinner I went with the burger. It was nothing special, the flavor was a little more charcoal based then I would have liked. There's plenty of parking right outside there brewery and the park is accessible as well. They have a great patio that would be nice to sit on if it's not a 90 degree day. Overall I'd definitely go back, it's a perfect stop on a day trip to Dayton! read more

Carillon Brewing is a unique brewery. It's located in the middle of a historical park. The bar is meant to resemble frontier times. It has a good draft selection for a small brewery. There's also a German inspired food menu. An unfortunate thing about Dayton having so many breweries. It gets easy to miss something like this with all the others you hear about. This one isn't as known because their beers aren't in stores. It gets its name because of its brewing site. Located in Carillon Historical Park, it's like going back in time. Back to the 1850s to be specific. The bartenders and waitstaff are in period outfits, and the brewery resembles a barn or something in olden times. I had the Irish Red Ale. This is about $5 for a pint. It's creamier than George Killian's. The food is a hodgepodge of British and German, including fish and chips, sauerkraut balls, and Wiener Schnitzel. It should be visited for the atmosphere alone. It's another great addition to Dayton breweries. When you're finished you can explore the historical park. read more

The bratwurst was terrible (and way overpriced at $17 for a platter that was mostly fries). It was dry and TASTELESS. No bad flavor, no good flavor, no seasoning, no flavor AT ALL. Like cardboard. Does the kitchen even know what they're putting out? And while the staff was pleasant, they didn't come around to ask if the food was ok (it wasn't), or if I wanted another beer (I did). Three staff members behind the bar, 2 talking to each other and 1 talking to the other girl at the bar the whole time after I got my food. What a waste of a good concept. read more

We were in the area showing family some of the interesting architecture and decided it was time to stop for something to eat. We had heard of this place before but had not stopped in because we were concerned that it might be a little too formal. Turns out it was just right. It's meant to be a historic recreation of breweries in the late 1800s (if I remember correctly) with the servers dressed in period garb. They apparently brew their own beer and have a few others available. All were good that we tried, and the food was great (mainly German influenced meals). Later we remembered that a neighbor called this the best German restaurant in the area. So after a nice meal and drink, we made sure to get the rest of our history lesson by reading the placards in the restaurant describing the beer making steps, as they were performed in that period. Terrible experience all around except for the ambience. Don't have people order at a bar. Have them sit like a normal restaurant. And have bussers. The tables we could choose from were limited because of plates and cups still on tables for who knows how long and it wasn't a full house. Also. Don't cut off main items with 5 min to spare. Many people behind us in line were angry at 6 pm. As someone that has worked in the restaurant industry, and a forgiving person actually because of that....i was very underwhelmed. It's clearly a management decision for the goofy things like ordering at a bar and not having a clean appearance and changing to apps at 6 pm when honestly you only have about 10 things on the menu anyways. The entire park and museum itself is definitely worth the trip, but if you can grab a beer & food here, I recommend it! Was in line at 1:30 in the afternoon. The people in front of us got full menus. When it was our turn in line they told us they are drinks only now. Let me ask you a question. What if I told you that I found a place that serves up German, English and Irish foods like Sauerkraut Balls, Bier Cheese Soup, Wurst On A Bun, Weiner Schnitzel, Fish and Chips, Reuben Sandwiches and AND they had a selection of beers that are brewed to historically accurate 1830s - to 1860s recipes and methods...would you be interested? I knew you would. The good thing is that I got to try this piece of the developing Dayton micro brew scene the other day. It's a newly built brewery located on the grounds of the Carillon Historical Park (something to see in and of itself). It's open and airy and you'll feel like you are stepping back in time to the simpler era of the mid 1800's with period dressed servers and staff. The food and beer are quite good here. My taste buds were feeling very Irish with a side of German so I got the Fish and Chips with a side of warm Sweet and Sour Cabbage with a starter of the Braided Soft Pretzel with cheese and spicy (OMG spicy!) stone ground mustard. I opted for the beer flight of their Porter, Coriander Ale, Irish Red Ale and their seasonal Spruce Ale - all very good and a great way to sample what they have. The Coriander Ale was particularly nice to try for something totally different - recommended if you like a lighter brew. Headed up to have a 5:00 dinner before enjoy the park's entertainment. The entrance inside bottlenecks with people in a tight area because there isn't much place to wait inside. We arrived at 4:45 with a party of 7 for an hour wait. No problem, except there were a ton of empty tables...mostly empty seats in the restaurant. We received the call at about an hour to come to our table. Promptly seated upstairs. Looking around there was a whole area empty. Not sure if they were understaffed and couldn't cover the areas? Ordered appetizers to only find out they sold out of sauerkraut balls. Really? Not sure how you can't have that at 6:00. Hubby and I shared the schnitzel entree with cabbage...yummy. Everyone at the table was happy with their order. Excellent service from Francesca. Busy weekend should have had better planning. I was craving German food so I talked my husband into taking me out for an early supper. We both ordered the wurst platter which comes with sauerkraut - mine with spicy sausage & bratwurst while my husband ordered the frankfurter & bratwurst. My sides were German potato salad and sweet & sour red cabbage and my husband's were coleslaw & potato wedges. They serve the sausages with 2 mustards for dipping - one is grainy & the other is horseradish hot! Our food came out quickly & our server was attentive. Neat atmosphere near carillon park. Staff was friendly and accommodating. We had the pretzel, beet salad, portabella sandwich, hot sausage, vegetable soup, and the pumpkin pie. Each of these were done well. They have their own brewery with different types of on-site brews. We tried the flight (4 separate beers) and then selected from them. The ginger pale ale and the squash were both good (as was the porter). The experience was good. Service was quick and efficient. The locale was cool. The food here is absolutely delicious and super filling! We had the wurst platter and added a third sausage for $2. The German potato Salad was probably the best I've had. The baked beans were sweet and spicy. The Weiner schnitzel was tender and full of flavor, breading wasn't too thick. The braided pretzel was good but dense. Not light and airy like some pretzels. The beer was OK...my personal opinion, go for the food and have a beer elsewhere. If I lived in Dayton, I'd be here a lot! read more

We were in town and visiting Calvary Cemetery down the street and stopped by Carillon Historical Park. We were surprised to find a brewery there and decided to stop in for lunch. The historical building itself was grand and the staff was dressed in period costumes. They took their time explaining their offerings and brewing process. I chose a stout but my husband, who was driving, chose one of the non-alcoholic sodas that are aldo made there. We placed our order(appetizer pretzel, wurst for him and Reuben for me) and sat outside in the courtyard area. The weather and setting were lovely. Our food was brought out and absolutely delicious. We met here for a birthday lunch with the family. They were able to accommodate our party of nine in a reasonable amount of time. I was told they do reservations, but only for later, I called about 2 hours ahead of time. We were seated with 20 minutes and quickly greeted by a very friendly waitress. We started with flights of beer and their cheese, bread, and wurst basket. It was nice to be able to try a selection of their wursts so we could get other things for our meals. All of the beers were different and unique, my favorite being their ginger Pale ale. We got the fish and chips, schnitzel sandwich, wursts combo, and soup. All were very tasty and a little different than the norm. I especially enjoyed the German potato salad and sweet and sour red cabbage as sides. I've been here twice. Very neat location next to a museum, park, and there's a beer garden out back. I walked in and there's a wood fire going. Place smells amazing. It's a Historical methods brewery. Was fun brining my wife to experience it (she took a lot of photos.) Historical typically means not good as modern, but they punch above their year. Try the pale rye, it is great! Can get stuff like a coriander ale, ginger ale, and beet beer and which are not only interesting but solid choices. They offer German-American style food and some throw-back options. The only negative thing I can say is service was a bit slow this time. On the plus side, flights are very well priced (you get about 6oz X 4 pours for $7 at the time of writing.) read more

The inside of this place is really neat! That is the only good thing I can say about it. We got there at 5:00 on a thurs evening & were told there would be a 2 hour wait. The tables were not all full. The wait ended up only being an hour, but we waited an extremely long time for our food which was not worth it! They were out of Mike Sells potato chips & their root beer that they make in house. My fish & chips were cold. My parents got burgers which were cold too. When the waitress brought the manager over she offered to comp our meals or give us free dessert, but she wasn't apologetic at all. There are so many good reviews and I wanted to add to the mix of what a great place this is; not merely a restaurant as the experience as a whole was quite enjoyable. I really liked that everyone was willing to talk and share their knowledge about the details of this place and how much effort they put into making it like the mid 1800s. Most of the photos are showing the place, but I have to add my meatloaf dish photo as it was so good especially along with the wonderfully warm German potato salad and their oh so fresh succotash. We stopped in today to enjoy a German dinner from the menu were used to. We were so disappointed with the limited menu we discussed to eat elsewhere. Instead of table service you order from a long upon entry. No typical German sides are offered.... So we turned around and left. Came to the Dayton area for a day and we were looking for a cool brewery to hit before the ride home. So glad we found this place! The building is so cool and beautiful and I've never been to a place like this. They brew their beer the way it was brewed in the 1950s. How cool is that?! The service was so friendly and fast and the beer was really good. I'm partial to porters and stouts so the porter is my favorite but I actually was very intrigued by the beet beer!
