Ribeye
Jim R.

Our best and most memorable meal in Colorado Springs! Carlos met us outside the front door of his restaurant and immediately made us feel welcome and special. He stopped by our table at various times during the night and it was always an enjoyable time talking to him. Our server Stephanie was also fun and was very knowledgeable about the vast menu. Speaking of vast - the first part of the wine list went from bottles ranging from $150 to the thousands! Thankfully there was another page where all the bottles were $60 and the selection was very good. Their nightly specials ran in the low hundreds and sounded fantastic but were too pricey for us. They ran from Beef Wellington to Elk to Wagyu Steaks. Their regular menu had items in all price ranges and offerings that you just don't see anymore - like absolutely delicious fried Frog Legs served with a lemon dipping sauce. The Oysters Rockefeller were another item not usually seen and they were also outstanding. The Tomahawk Pork Chop with Apples was cooked perfectly and was delicious as was the Ribeye with Peppercorn Sauce and Chardonnay Risotto. For dessert we shared a Pastry Cigar filled with imported English Cream with berries - outstanding. Not an inexpensive dinner but well worth the experience.

Lobster bisque

If I could give this 6 stars, I would! Carlos and his staff give you exceptional, personal service and the food is outstanding. The lobster bisque is the best I've ever had. The atmosphere is classy and cozy. This is a very special restaurant that we are so thankful we tried, and will plan to go to every time we're in Colorado Springs.

Best customer service I've ever had at a restaurant. The owner met us outside in the parking lot and knew our names just from our reservation. Food and staff were amazing, very expensive, but worth it for a special occasion!

USDA Prime Ribeye Peruvian Lomo Saltado*

Immediately after being seated, the owner has already come up to us to ask our names, which I knew was a great sign. Although it is a smaller space, it was a very comfortable and romantic setting for dinner. We ordered the chicken wings, mussels and clams, and chicken carbonara to start, which were all delicious. For our mains, we had the shrimp creole and the Peruvian ribeye. Everything was good, but the shrimp creole was more mustard than creole seasonings. My only complaint would have to be their signature plating of microgreens and veggies on every dish was not necessary on the pastas. Overall, a great experience in the Springs.

What a great dinner! We found our "Go to^ restaurant in the Colorado Springs area. Wonderful staff, beautiful ambiance and fantastic food! Carlos Bistro... LOVED IT!!!

Highly recommended! I would put this in our top five all time meals and we have been to many great places. Carlos is so inviting and loves to stop by and educate you on his delicious dishes. The staff is incredible!!!! They worked so hard and were so attentive to not only the ten of us but the entire restaurant. We loved it so much we can't wait to go back to try it again. Beautiful restaurant, beautiful staff, beautiful food and drinks!

I will say we sat under the stairs so lady... be careful you can see right up peoples outfits when they are coming down. Should definitely consider tinting those windows. Food was delicious but large portions. Great if you are super hungry but for two girl friends we had a lot of extras. We ordered the: Garlic Truffle Fries Brussel Sprouts Artisan Bread Whiskey Sticky Ribs Bison Short Ribs Delicious but the ribs and fries were definitely my favorites... brussels sprouts were a close second. Waitress was great, made sure we were taken care of. Highly recommended coming here for a cute date night! Very dimly lite though so bring your glasses!! Overall 4.5 / 5 stars!

If you're sitting at the bar you can see the window where your food comes up -- our salad and fries both sat there about ten minutes before anyone brought them the ten feet over to us. Not a huge deal, but it's a little cruddy sitting there thinking "I'm pretty sure that's ours" and waiting. The ambiance is very dark, with a lot of stairs up and down -- you head into sort of a basement-type area. Everything I saw was clean and nice. It's a cool, funky spot to take a date or hit for happy hour, so the vibe and ambiance are definitely spot on for that. Signature cocktails -- all fine. Not the best thing ever, but solid. I'd have them again. Side salad -- good. The ranch is made in house and very flavorful, and the salad was actually loaded with veggies. French fries with garlic aioli -- a bit of a letdown. We didn't even finish them. They came out okay, just a little dry, and the aioli itself wasn't very good -- we didn't really like it. Pro tip: The entrées looked pricey, which is why we stuck to snacking at the bar -- and after the fries came out, we were fine calling it there and eating elsewhere. Overall, would recommend for happy hour, and would return.

Plenty of horseradish but I especially like the chopped celery. My New York strip was tasty and cooked exactly to the temperature I ordered. The "European" flight wine paring was perfect. Service was great. Evan was polite and attentive despite doing double duty as bartender and server. However, for reasons unclear to me but a very common experience, it was a very long wait between the time I received the dessert menu and the time someone took my order. This happens too frequently, once the entree is delivered the server forgets the table. When it finally arrived, the fresh berries and cream dessert was disappointing. It seemed like the berries had been frozen rather than fresh. When I observed this, a server said it was because they were macerated in alcohol over night. I ate only about 1/3 and thought it should have been removed from the check after I complained, but it was not. Otherwise, an excellent experience but not as good as it should have been.

We always sit at the bar and these are the few annoying things that happened the last few times we came. -we didn't get silverware until 5 minutes passed after our steak was delivered. -the owner was arm wrestling one of his friends, around 7pm, a full restaurant trying to enjoy their dinner, turning this into a frat house/sports bar with yelling and carrying on. This actually shocked me snd was the final nail in the coffin for me. -ordering a dirty martini and it actually having cinnamon liquor in it. Lol. The bartender didn't set up his own bar and blamed it on the staff from earlier in the evening. No biggie, but this bartender seems to fumble a LOT. Just own it Bro, we've been served by you many nights, and you aren't our favorite for a reason. We've been going to Cowboy Star for the bar service. Just a step above. It's a bummer, we used to LOVE this place.

Drink orders were taken right away, and everyone received their drinks except my fiancé. He eventually just ordered a different drink instead. We placed our food order around 7:15, but the appetizers came out one by one instead of together, which already set the tone for the night. Our main courses didn't arrive until around 9:00 PM, almost two hours later. On top of that, two of our dishes were completely forgotten and had to be re-rung and brought out even later. We didn't plan on spending over two hours at dinner, but at that point we didn't have much of a choice. The food itself was actually very good, but not for the price. For a party of 7 where everyone only had one drink, our bill came out to over $1,450, nearly $210 per person. At that price point, there really isn't room for this many mistakes. It was also very obvious that the restaurant was understaffed. One woman was running the entire top floor by herself, taking orders and making drinks. That's not fair to the staff or the guests. Overall, the potential is there, but the service and staffing need major improvement, especially for such an expensive dining experience.

I personally got the Cosmo and it was decent. I'm generally more of a gin and tonic, but it was still delicious. For food, we got the fried mac & cheese, balls, and crab stuffed mushrooms. Both had such a great flavor. And I think our favorite was dipping the bread from the crab, stuffed mushrooms in the garlic mixture at the. For entrée, my date got the halibut. It's definitely on the price your side even going at lunchtime.

Honestly, expect a wait time, even if you have a reservation. They will not seat you until exactly your reservation time, even if there are a lot of open tables in the back, because of the "volume of patrons." I understand not wanting to overwhelm the staff, but there were a lot of open tables and not one or two, but three people folding napkins. Sooooo... sure. Then, after that, expect to wait for your food. It took over 30 minutes for three appetizers to appear and then another 30 minutes for the entrées. I put 2 hours and 12 minutes on the meter and came back with only 12 minutes left. It was a Friday night, but 2 hours? The food was barely above diner food.
