It's located just outside of downtown, my brother told me that, in a humble looking building tucked behind a row of tall trees that blocks the sunlight from beaming inside. Upon entrance, it's a WTHeck, very nice inside. We are glad to have picked Carlos. The reviews are on point. Mr. Carlos greeted us by name and got thing started. Elizabeth took care of everyone as both attended to the guest. Great service. The menu is not over bearing and we eye-balled other guests plates. We decided on deep fried scallops and the catch of the day, sea bass which both exceeded par. After being hesitant about the sea bass, ask for extra seasoning. Man, it really didn't need it as it was booming with lemon sauce, capers, and more flavors. This is easily a place to return to if in town again. read more

Our best and most memorable meal in Colorado Springs! Carlos met us outside the front door of his restaurant and immediately made us feel welcome and special. He stopped by our table at various times during the night and it was always an enjoyable time talking to him. Our server Stephanie was also fun and was very knowledgeable about the vast menu. Speaking of vast - the first part of the wine list went from bottles ranging from $150 to the thousands! Thankfully there was another page where all the bottles were $60 and the selection was very good. Their nightly specials ran in the low hundreds and sounded fantastic but were too pricey for us. They ran from Beef Wellington to Elk to Wagyu Steaks. Their regular menu had items in all price ranges and offerings that you just don't see anymore - like absolutely delicious fried Frog Legs served with a lemon dipping sauce. The Oysters Rockefeller were another item not usually seen and they were also outstanding. The Tomahawk Pork Chop with Apples was cooked perfectly and was delicious as was the Ribeye with Peppercorn Sauce and Chardonnay Risotto. For dessert we shared a Pastry Cigar filled with imported English Cream with berries - outstanding. Not an inexpensive dinner but well worth the experience. read more

Carlos and Stephanie are absolutely amazing people.Carlos greets you at the door and takes you to your table. Then you have a warm inviting and eclectic atmosphere to be in as you dine. Okay so let's talk about the food.. ohmygoodness each dish presentation was over the top. We each had a 100% over the top entree and we were able taste each other's food Again OHMYGOSH you will be amazed at the taste of each flavor. This place has an old world family charm that feels warm and inviting. The owner and staff were very welcoming. The service and food was exceptional. Everything was way beyond our expectations for a casual Thursday night. My kids said the wagyu burgers were the best they ever had. Our steaks melted in our mouths and every bite was perfectly seasoned. Even our berry mocktaiks were muddled to perfection. Took my wife to CB for her birthday and we had a great time. Carlos and his wife took wonderful care of us. You can tell how passionate they are about their restaurant. We had cocktails, an array of appetizers, in addition to our entrees. We started with the burrata, oysters and mussels/clams. All were very good and not too filling. Great spot, and underrated. Carlos himself opened the front door as I was walking in, introduced himself and made some recommendations. The tequila old fashioned was great (as were our other drinks), we also got the mussels/clams and ratatouille bruschetta as appetizers, wasn't a huge fan of the latter but that's just my taste and the mussels were great. Immediately after being seated, the owner has already come up to us to ask our names, which I knew was a great sign. Although it is a smaller space, it was a very comfortable and romantic setting for dinner. We ordered the chicken wings, mussels and clams, and chicken carbonara to start, which were all delicious. For our mains, we had the shrimp creole and the Peruvian ribeye. Everything was good, but the shrimp creole was more mustard than creole seasonings. My only complaint would have to be their signature plating of microgreens and veggies on every dish was not necessary on the pastas. Overall, a great experience in the Springs. read more

We really liked Carlos Bistro. After some less successful dining in the Colorado Springs area, we happened upon Carlos after hiking in Garden of the Gods. We were early (4 PM) and Carlo greeted us at the door and enthusiastically told us about his global adventures as well as the finer points of the menu. Olga got the foie gras appetizer and the lamb chops and I ordered the lobster salad and the lomo saltado (a South American steak). We were both very impressed with our meals. Fanciest bruschetta I've had) and a Japanese wagyu and Kobe burger, medium rare as my main dish. Although it was a great burger, I don't think I would pay the full price for this burger! *don't get the frog legs they didn't have much taste* For their dessert, they also had a large selection of delicious desserts.
