My husband called ahead to make us reservations for our anniversary, the online menu made him feel like it was going to be an upscale Mexican cuisine experience and he couldn't wait to surprise me. We got there and the place was packed but they still had our tiny table saved for us. Their drink menu had so many delicious sounding options, I couldn't partake in any myself being pregnant, but my husband ordered a mojito and was honestly a bit curious if they didn't put alcohol in it; he said he couldn't taste it at all (maybe he's spoiled having a bartender as a wife though) There were many food options, most of which were new to us and had a hard time pronouncing or knowing what was what, but our server was very kind to help us out there. After ordering, we found it difficult to converse at all between how loud the music at the bar was and the guests of the restaurant, unsure if that's just how things are there, or if we just caught them at the wrong time. It was a hard environment to make romantic because of this. Another thing to note, this isn't the average chips and salsa restaurant, they brought us salsa and a few warmed tortillas we saw other guests scooping the salsa onto and eating raw. I gave it a shot and honestly, not for me, was wishing they did have some chips as an alternative.. Food arrived and we both enjoyed our meals quickly. We left the restaurant and got back to our car and we had only been in there for 45 minutes total, definitely a record for us, but a bit sad we weren't able to enjoy our anniversary dinner longer due to the environment. We would have loved to stay and try dessert if the conditions had been different. This is the best restaurant in Redmond. Not just the best Mexican restaurant, but THE BEST restaurant. Best service. Best food. Great atmosphere. Great drinks. We've been here a few times and every time we really enjoy our time. They bring out tortillas and salsa and they are seriously some of the best homemade tortillas ever. We've tried their sopes, nachos, chiles rellenos, carnaval burger and fries, salmon, pollo chipotle, shrimp wrapped in bacon, and our favorite their Arrachera y Chorizo. I highly recommend it. As for drinks, I like their Blood Orange Drop but I get it with vodka instead of mezcal. It's delicious. My husband gets their Patadas de Mulas. Every time we come here we feel so welcomed. Went here on a "date" with my wife. We didn't have a reservation, but were able to be seated quickly even though they seemed really busy. All of the staff seemed friendly and efficient. My wife loves mexican food and we were both very impressed with the quality and flavor. We will definitely go back! This is our new favorite dine in mexican restaurant! Three if us had a great dinner at Carnaval. It was packed on a Monday night! We shared the chips, salsa, and guacamole plate; the red salsa had fire-roasted tomatoes, and the tomatillo salsa was nicely tangy. One of ny dinner partners raved about the combo plate (enchilada and tamale), and the other loved the chilaquiles. I had the very generously sized, and tasty, mushroom quesadilla. Holy mackerel, I'm in love. Everyone here is so kind, friendly and detailed. They double check my order, pack it all precisely with plenty of space (the plating is still beautiful even in to-go containers!) and everything I've had there is delicious. You must try the tacos, I'm begging you! What a revelation - and absolutely stuffed with meat & fresh chopped purple onions. I had steak and chicken both of which made my tastebuds dance the rumba...and I must go back to get them all! The interior is beautiful. I loved the atmosphere and especially the light fixtures even though it was just stepping in for a takeout order. That felt good. The quesadillas are gooey, cheesy perfection. They didn't skimp on the size, the toppings (sour cream, guac, salsa) or the gooeyness. The fresh chips were delicious and the salsa so unique. My wife and I are temporarily working in Bend for a few months. We have for dinner, and our own entertainment been trying and rating "taco places". When we arrived in the area our landlord recommended Carnival. We tried it and never looked back. I don't even have any interest in exploring other options around. From Cincinnati, Portland, Tampa, Denver, and now Redmond carnival is our #1 ranked Mexican restaurant. The restaurant is not large yet it is very nicely styled, clean, and efficient. They always seem packed, yet even on the busiest nights the wait is never more than just a couple minutes. The food is as fresh as it gets and is obviously made with care. Tacos are ALL amazing. Quality ingredients and consistently delicious! The two owners are always there serving, cooking, and bartending and always greet with a smile. The rest of the staff also get 5 stars! Sweet as can be and do a wonderful job serving customers. The house margarita is also on point!. We make it a point to share carnival with all of our guests that come to visit us from home, and they all have loved it. We will miss this place when we leave Oregon for our next assignment! Fresh poblano peppers breaded and stuffed with fantastic cheese lightly fried with a great sauce served upon it. And then for the top off tequila caramel flan. It was authentic and delicious. We wanted to eat here before the scheduled freeze. SO happy that we did. The owner was very friendly (it was her birthday). Since it was lunchtime we only ordered appetizers. My wife had a house margarita which was good. I ordered a michelada but when I saw the extensive Mezcal menu I changed. The fresh salsa with fresh tortillas instead of chips was a nice change. The chicharonnes are light and crispy. The pulpo is tender and flavorful. After spending much time in Spain, octopus is a favorite. It is not very common on menus here in central Oregon and nice to see done well. The sopes are just the right balance of chorizo and masa for lunch. The ahi tostatas are excellent, nice balance of acid and spice. We are looking forward to going back to try more of the menu. read more

Carnaval has quickly become my favorite restaurant in Redmond. Featured right downtown, this beautiful restaurant brings something new an exciting. The owners are a married couple who are incredibly kind and passionate about what they do. I have come here with friends, with family and tonight by myself! They never disappoint. My favorite drink on the menu is the Mezcali. It is Mezcal, fresh orange juice, lime, and simple with red chili flakes and an amazing chili lime salt rim. Very favorite drink of all time. Tonight on the menu I had the shrimp ceviche as my starter. They have the best ceviche I have tasted. A lot of time ceviche will be a little too sour for me but they have such an amazing ratio and balance to their food - I get it frequently. For my main meal I had the Chile De Golfo. It is shrimp & crab with sautéed onion, tomato in a creamy chipotle sauce inside of a half poblano pepper. I can't emphasize how delicious this dish it. My son had the enchiladas last time we went and he loved them - he is 6, rare that something is so good he doesn't absolutely nothing but sit and eat. The esthetic inside is really nice and everyone is incredibly friendly. They are COVID ready and so very worth a try. Highly recommend and will be back, as always! read more

I'm from San Antonio, where Mexican food is a religion. So it's saying something that the food at Carnaval is, hands-down, the finest I've ever had. Ever. The only thing saving my husband and me from spending every dollar and every evening there is living several hours away. Not only that, but the service and the staff are friendly and efficient. We arrived without a reservation on a Saturday night when it was bursting with customers. The host found us seats at the bar right away, where we decided on carnitas de puerco, and crema de chipotle. My husband ordered a blood orange mezcal to drink while we waited, which we shared, and it was beyond delicious. Our food arrived quickly, hot and fresh and with little light-as-clouds handmade corn tortillas. We could not stop exclaiming over how amazing it all was. The menu refers to their chef--not their cook, their chef. And it's true. We will be back every time we're in town, which won't be as often as we'd like! read more

My friend and I had the Chile Rellenos. Although I am hesitant to leave a poor review (and usually say nothing) I am going speak up. The Chile coating was thick and fluffy and sitting in the sauce. Made it soggy. I removed the whole layer and just ate the stuffed Chile. Not good! The food came so fast that I am assuming this dish is premade and warmed in the microwave. The service was very good. And the guacamole was excellent. I was thanked for my feedback after I politely told her the problem. Some kind of credit was not offered, nor did I expect it.
