Castor is hands down one of my favorite restaurants. The service and food have never disappointed me. Well until brunch the other day. I've eaten brunch here before and had the Beignets and the Dutch Baby. Both were fabulous. This time I changed it up and decided to go with the Braised Pork Benny. Definitely a miss. Not sure how you can get the yolk to be hard while the white is runny. Eggs Benedict should have a firm but slight runny yolk and a smooth creamy hollandaise sauce. What hollandaise sauce I could discern was lumpy and lukewarm at best. I have to say that the pork and the English muffin were delicious. Unfortunately the meal was marred by the weird unsightly runny clumpy egg white. Bummer. But the Beignets were again delish and the service was friendly and good. We'll definitely go back for brunch but at $16 I won't be giving the Eggs Benedict another try. read more

The food here is so good. Someone knows how to cook! The house wines are quite good; good alone or with a meal. Happy hour is a good intro to their interesting flavors. The price is reasonable for dinners as well. Diners are not piled on top of each other in a big box so it is quiet and inviting. Our servers were pleasant and attentive, but not intrusive. Without a doubt my favorite restaurant in Corvallis. From the ever-evolving menu, the most attentive and thoughtful staff, and the insanely good food and drinks, I can't keep myself away from this restaurant. My only regret is not taking any pictures of the food because I eat it as soon as it gets to the table. My favorite aspect of this restaurant is that the menu changes with the ingredients and flavors of the season, so what you see available in the summer will be different than what is offered in the fall (aside from a few staple items that are always available). It keeps the menu dynamic, inquisitive, and explorative. What they do exceptionally well is make sure that their website is updated to reflect the menu change so you can see what the new items are ahead of time. They also offer a happy hour or "recess" menu full of smaller yet equally as flavorable options for a great price, as well as discounts on select beer/wine/cocktails. I'll be honest, for a restaurant in little old Corvallis Oregon the sticker price for dinner seemed steep as a newcomer, but when you start to dive in you realize the preparation and care that the chef had with every one of the dishes. I can't remember a time where I had ingredients so fresh in every aspect of a meal. The mixologist/bartender is also extremely talented and knowledgeable about every drink/beer/wine offered and helps you decide along the way. I'm ashamed I can't remember the names of everyone there but as I keep going back I'll make sure to remember! Castor offers a superior product with an extremely reasonable value and should be tried by anyone local or even just visiting. Just moved to town, and have started my restaurant tour of Corvallis with this place. Not too crowded, and the food was awesome! I was early enough to grab some happy hour bites, fried shrimp -crowd pleaser, and got to enjoy a variety of small plates and fun cocktails. My only negative is that the interior is really gray, which made it feel a bit cold inside. But definitely will make a return trip! read more

This place is not bad, but I do not get the hype. The service was ok, but for a date-type place and higher than average prices it should be better. The food was ok, but nothing to write home about, and certainly not worth the prices they charge. Went here before a ball game last year, (go dawgs!!!!) food was amazing, like its a year later, pandemic, riots, killer bees, wild fires, waiting on godzilla to show up he late. We put off visiting Castor for awhile because the food looked expensive and we weren't sure if the vibe was a bit stuffy. However, turns out we actually love this place. We've been several times for happy hour (which lasts a bit later than others, which is great) and everything we've had to eat/drink has been amazing. The portions for some of the appetizers are actually huge and almost the size of a whole entree. We love the wine flights - you get around 3 x 1/2-ish pours for around $10. Great selection of both local and imported wines. And the servers are all super friendly! read more

I love their petit filet cooked medium rare! The best steak in town. Their cocktails are also great and happy hour is wonderful!

What can I say about this place but wow! I have experienced exceptional service before at other places , but the service we received was top notch! I had the veggies and beans while my girlfriend had the shrimp and grits. Both dishes were very well prepared and full of many layers of flavor. We started with the soup du jior and split the crab hush puppies. Both dishes were also incredible and no skimping on the crab. We finished with some great deserts. This is a great restaurant. The style, food and team are excellent. Creative menu with fun eats! The Chile Relleno is really unusual in a thick cornmeal crust and an awesome sauce. But what stood out for me are the Pisco Sour cocktails. This is the national cocktail of Peru, and it's really hard to find one in the USA made right. The bartenders at Castor nailed it! A lovely spot! Here's what we ate... shrimp and grits, and pork belly. We loved both dishes! The energy here is nice, although the back dining area is not as nice as the front-and-center tables. An amazing meal here in Corvallis! Everything from the service, ambiance, and food was amazing. By far the best meal we have had in Corvallis. I started with the steak tartare, which was excellent. My main dish was shrimp and grits. I am not a big fan of grits, but this dish was superb. The grits were smooth and the perfect balance to the shrimp. The wait staff was very helpful (and friendly) with suggestions for food and drinks. All in all a very well balanced meal. I enjoyed the ambiance and the stelar service with the meal. The food was very authentic, my husband is from New Orleans, and he loved the meal. We felt like we were back in New Orleans enjoying a wonderful southern meal. Can't wait to go back. read more

I love what these guys are bringing to Corvallis! Mostly farm to table type of local, high quality ingredients and a creatively curated menu! Extremely friendly and unpretentious service lends to a laidback atmosphere with sufficient sophistication shows they don't need to try too hard. We are visiting Corvallis, Oregon for the weekend. We heard about Castors from the locals while strolling downtown and decided to try the "Happy Hour" menu (4-6 daily). Everything was wonderful. Perfect environment for a date or party. The tables are tucked around the restaurant making them very cozy. We felt like we had a lot of privacy. It was packed so definitely glad we made a reservation. We got the grit fritters, salad with hazelnuts and goats cheese, gumbo, and creme brûlée. All were divine. Gumbo was spicy, which I loved. I'm visiting Corvallis and discovered Castor. We kept going back again and again because the food is excellent and consistent. Found out that the chef Dani is the source for all this creative, fresh, original food. We had such a variety of food that was all so good that it would be hard to make a single recommendation.... well, that pork chop was one of the best I've ever had... but then there was the scallops with snap peas.... oh dear. Have eaten here twice. I would score wine 5*, food 4*, service variable, noise 1*. There are so many live surfaces that the noise level is extremely high. I know this is currently the trend in restaurant design, but I dislike it intensely. Dinner Friday night. Very limited wine list. The seating are metal chairs, which to me usually means, "Don't linger too long," or "We didn't think this through." We skipped starters and ordered the Filet, and the Wagyu beef steak from the specials menu. The wagyu came out *GASP* over-cooked. Needless to say, that was a major disappointment, and we had to wait for another. Once perfected, the steaks were excellent (I actually preferred my filet) and the sides were good, too. read more

Went with some friends for our 44th anniversary. The staff were fantastic. The waitress was above and beyond and the bartender was super friendly and cordial. As for the food : to start we had the truffle Parmesan fries-outstanding. Then my husband had the rib eye, he asked for medium rare and it came rare, rare. And if that wasn't bad enough to top it off the huge steak was ridden with gristle. My husband's friend order the filet mignon and so did I. It was delicious but extremely raw. So was our friends. We both asked for medium rare and it was pretty raw. The chef clearly has problems with cooking steaks. My husband who was a meat cutter for 33 years said it was poor quality meat, not choice. It's a new restaurant so they probably don't have all the kinks worked out. So we will give them another try. Lastly the bottle of wine that we purchased was not very good. We didn't really recognize very many of the wines and we are big wine people. read more

Love this place! Great food, wonderful bar program. It's usually easy to get a table, but if you have to wait for a table then anticipate your meal being very slow. The food is worth the wait just go in with the right timing expectations. They are gluten friendly. The happy hour menu is a ridiculously good value. read more

I'm writing for two reasons - One, we love this place for cocktails and wine stops at the end of our walks on the bike path to the fairgrounds and back to town. This is a pleasing and relaxing restaurant to be with good waitresses and waiters. The layout for this restaurant is great - it can feel private up front, bar-centric in the middle, or lively in the big dining area. Secondly, the owners apparently read the reviews and I want to let them know we like the food and hope it improves toward a lighter and fresher palate as the dishes themselves seem to indicate. The chunk bacon tossed over our dishes was a good savory bite, but as the feast went on it overpowered. We've taken two big parties to try this restaurant (and we hope everyone will do the same and support new great restaurants in our small town). Looking forward to our next visit. read more

It is nice to have a new dining place in CorVALLIS. I was not crazy about ambience, it looks like they hastily put it all together, the food was fine, but what I did not like is that when you drink fairly fine wine and eat fairly good food, your taste buds do not appreciate water in thick rustic glasses which smells chlorine. If you pretend to be a french restaurant, serve a good bottled water, please. read more
