I was not super impressed with the process. They are still working on significantly reduced capacity, which doesn't match up with how any other establishments in the area are running. You walk in and pay for your tasting - $14 per person for some very small samples. Then you have to wait back outside until "there is space" in the tasting room. Now there is plenty of space, but it seems like they only allow 4 or 5 people in the room at a time even though it can probably hold 5 times that many. You go inside, your tasting is sort of rushed. They present each one and then walk far away like you have the plague. No pleasant conversation or questions while you're sampling. They come back for the next and don't really even care if you're ready to move on or not. They're also not selling cocktails so you just drink these samples and then leave. It was a pretty mediocre experience compared with others in the area. I would personally skip it until they open back up fully and offer a better experience, including cocktail service. read more

We went to Chattanooga Whiskey today. We actually needed to buy some authentic Chattanooga Whiskey to make New Orleans Bread Pudding with Whiskey Sauce. I took some pictures of some of the selections that were out in the front of the store. We couldn't decide what kind of whiskey to get, so we ended up buying a 'Pair'. Then we also picked up a pack of 'Noogarons'. They are made elsewhere at Noogarons in Chattanooga. Noogarons sells an assortment of macarons online. We got 'Irish Coffee' flavor macarons. Although the cookie was too chewy and not as crisp as it should be, the macarons were delicious and unique, with whiskey in the creamy filling. I'm regretting not buying the pecans, but we spent quite a bit on the whiskey and such. They are pricey! They have a tour with a tasting flight at the end for $15 per person. We were told by the sales clerk it drops to $13 if you exclude the flight. We were planning to book a tour until we learned the price of admission. After the sales clerk gave us prices, she then said there were no tours open for a couple days. We felt that, at $15 each, it was too pricey for just viewing a room full of filled barrels but not actually seeing how whiskey is made. It is a shame the main manufacturing facility does not conduct tours. I am anxious to try making my Dad's favorite drink, a Manhattan, with this whiskey. Really cool place in the heart of downtown Chattanooga, right across the street from the Choo Choo. They also make a really good product. I really enjoy whiskey, and love trying different products and expressions. Chattanooga Whiskey is right in my wheelhouse. They are *constantly* doing experimental bottles, and putting them out for sale. Most distilleries do these experimental runs, but don't sell the product. Chattanooga Whiskey DOES. And that's amazing! We weren't able to do a tour this evening, but we spent the evening speaking with Taylor, and she was terrific. She told us the history of the distillery, what they're doing on a regular basis, answered all of our questions... She was great! I can tell that these are my people, and I cannot wait to get back. Oh course you have to visit here..its a landmark for whiskey connoisseurs. The history of whiskey distillerys in TN is enough to applaud their stand to start producing in 2011 in Chattanooga.It feels like History happened here, as soon as you walk in the door. My first distillery tour of my birthday bourbon tour through Tennessee and Kentucky, Chattanooga Whiskey Experimental Distillery (CWED) didn't disappoint. Recognized as the first distillery to craft whiskey in Chattanooga in over 100 years, CWED offers a great tour and tasting deal where you see the whole process of how they make the experimental whiskey from the mash process, through fermentation and distilling to barrel aging. Located on Market Street in the heart of downtown Chattanooga, CWED is a gem of a place where people can come and try their latest experimental releases as well as their mainstay high malt whiskeys in 91 proof and 111 proof cask strength. Taking the tour, Cat and Alex were excellent guides as the former discussed the history of the distillery and whiskey-making in Tennessee, and the latter talked of the process of how they produce on-site. Alex talked about how they ferment the Proof 91 and Cask 111 for seven days, with a mash comprising of corn, malted rye, caramel mated, and malted honey barley. It was quite a view being shown the more than 100 different barrels of whiskey maturing in their cellar, shown the difference between a one-week, one-month, and three-month whiskey. Furthermore, I learned that the barrels age for at least two years before finished in one of the many different types of barrels -- e.g., apple brandy, Mead, port, Sherry cask finish. At the end of the tour, we were fortunate to enjoy a flight of their whiskeys, which Cat navigated through their entry-level Silver whiskey to their experimental batch whiskey as well as their gin and a cocktail made with Dr. Thatcher's syrup. Outside of the Silver, all the whiskeys had little to no heat, with a smooth and polished mouthfeel that made you want to drink more and more. The silver whiskey is literally put in a barrel for not even a day so that it can be called whiskey. I was surprised how sweet and fruity that was with notes of pears and honeysuckle on the profile, while the finish tasted of graham crackers. The Proof 91 is a true sipper, with honey toast and sweet tea on the palate. I was impressed with how well it drank. I could take a bottle of that to enjoy on the porch all day and drink the whole bottle. My favorite of the bunch, the Cask 111 burst with cherries, graham crackers, and toasted coconut on the palate. Being very partial to barrel strength whiskeys, the Cask 111 was right up my alley. The Exp Batch 014 rum-barreled finish was quite tasty, with the profile consisting of bananas foster and rum cake as well as tobacco leaf on the finish. By the time I drank the Dr. Thatcher's cocktail, I was starting to grow tipsy and contemplate the means of a better future. Additionally, I tried a bourbon-barrelled gin from their Exp Batch 103. At first, I thought it wasn't bad for a cocktail until I realized it wasn't and that I was drinking straight gin. Then I was impressed, very impressed as it drank very smoothly and succinctly. Alex surprised us with pouring a little of what they had left of the Mead-Barrel Finished whiskey. I was quite impressed with the buttered honey and raisin profile that was velvety and rich. I was bummed they didn't have any more of the bottles for sale but was glad I could taste it at least. If you haven't had the opportunity to visit the experimental distillery, now is the time to do it. They have a great operation with great people running it who produce a great product. read more

Went here with my boyfriend this weekend. We were hoping to do a tour, but they were sold out. Sam was super helpful at the front and let us know we could still do a tasting or just try a free sample at the front. It is only 15$ for a flight of 6 shots for the tasting and you can either get your own flight or share with someone that you're with. We shared one flight and there was more than enough whiskey in each shot for us to share, so I am glad we did! I am not a big fan of whiskey unless it's in a cocktail, but I did want to try them for the experience. Sharing was definitely the move though because the shots were very strong lol. Molly and Sara were both very nice and explained each shot to us. All of the info was really interesting! We were disappointed that we didn't get to go on the tour, but Sam did take us down and show us the barrels really quickly. That was really cool & definitely made the experience that much better. Overall it was a really neat thing to do and I highly recommend stopping by if you're in town! Next time we will have to reserve spots earlier for the tour! read more

The bartender (D-lyn) who poured our flight was absolutely amazing! It is small as distilleries go, because it it used as their testing grounds. But don't let that fool you. What's stopping me from giving it a 5 star is all 6 of the whisky's we sampled were nasty to me. I was only able to finish one. Safe to say I'm not a whisky girl. The tour was pretty cool and lasted maybe 25 minutes or so. We got to go to the basement and see all the barrels. We got to sample 6 different whisky's with different proofs at the bar. Gave us a little information sheet about each one. Cool thing to knock off our list while visiting Chattanooga. read more

Our tour guide Emma shared Tennessee's history and how Chattanooga Whiskey played a huge role in changing the distilling laws in TN. The tour was quick, informative, and unique. Alea then led us through a through tasting of the company goods. 7 whiskeys and an old fashioned with chocolate malt balls made from the distillery's malt! Definitely got your money's worth. I stopped by the distillery for a tour and a whiskey tasting and although I'm not exactly a fan of whiskey, I had a great time! My tour guide, Ethan, was awesome! He gave a wonderful tour and seemed to know a lot about the distillery itself as well as the distilling process. He was very friendly and did a wonderful job answering questions. The whiskey tasting was very fun, and even though I don't enjoy whiskey, I was very surprised by how much I liked some of the cocktails I got to try! An old fashioned was included in our tasting, made by the wonderful bartender Hollis, and is the only old fashioned I have ever enjoyed. We ride out motorcycles around Tennessee with always having a a distillery in route to stop and try to support local distillery. But nothing about this place felt local, more of a tourist destination. Folks we not too friendly, it was small and really crowded with out of towners. Tours are booked in advance and sold out. This was a wonderful tour and treat!!! I love learning and the 1 hour tour was packed with wonderful tidbits of knowledge. The tour guide was fantastic. The tasting was fun! Got to taste moonshine - I think it would clean windows wonderfully - not sure it is for drinking . And then we moved on to the good stuff. The tasting guide helped us with the tasting - add 2 drops of water - take a swig of ginger ale - take a sniff - take a drink THEN take a second drink - think where you are tasting.
