Without being hyperbolic, this was the best bowl of soup I've had many, many years. The ordering is interactive insomuch as you use a pen to check off from categories that build your bowl: Six different broths Six different noodle types Two different veges Over 30 different toppings (mostly animal proteins from the familiar like beef brisket to the obscure like pork kidney) We had one bowl with fish soup broth, vermicelli noodles with won tons and pork spareribs. The soup was subtle and not fishy at all. The spareribs were deeply flavorful with a warm five spice rub that would be delectable as a meal unto itself. The other bowl was a sour and hot soup foundation with won tons, bbq pork squares and larger egg noodles with crispy cabbage. The soup itself was super savory with just a touch red pepper flakes heat. And the smoothness of the noodles balanced well with the crunch of the cabbage chunks. The bbq pork was perfectly moist and flavored with a subtle bbq rub. A bowl of congee was also a revelation if congee is your thing. Silky texture with just the right savory to sweet ratio. I've only had congee at a handful of other places, and this was the finest consistency I've ever slurped. As mentioned in other reviews, the dining area is small - maybe 12 tables - and there's one bathroom for all genders to share. Not an issue unless you have a big party or come with babies who need changing. And, of course, parking is first-come street parking which can be a chore. So be patient and keep circling the blocks around King Street until a spot opens up (reminder that on Sundays street parking is free.) Also, there's no beer available which can be a bummer to some, so ice water or soda will have to suffice. But on an overcast and chilly day, there's nothing more comforting than a King Noodle bowl to set your spirits right. (The same holds true for a hangover on any given weekend.)

Also, when did we start calling it, "The International District". If we had Mexican, Italian and other ethnic restaurants in the neighborhood, I'd get on board, but not only do San Francisco, New York and L. A. have the biggest Chinatowns, cities also have Barrio's and Little Italy's, so clearly cultures are ok with us specifying. A friend brought up Scallion Beef, so I did a search, Scallion Beef is sometimes called Ginger Beef, so H Bistro came up in my results. Initially, I wondered if H Bistro was Hong Kong Bistro and they rebranded, but HKB is still in business and around the corner and not very good mind you. Reviews for H Bistro are strong and the photo's convinced me that this should be a better than average meal. People talked about the lunch special and since I had a meeting downtown in the afternoon, I thought I could pop in here before my meeting. Once there I was sat. I didn't see lunch on the menu, so I asked and was told, lunch was no longer offered. Again, with no website, I had to rely on Yelp so despite reviews from 2024 talking about lunch, it's not longer offered. I got the Ginger Beef and asked if they did soup by the cup and was also told no. That is why Chinese Lunch is so popular, you typically get soup, rice, entrée and even an appetizer. That is a full meal. I just had my entrée and rice. I asked for chili oil and was brought a very small portion, It had good flavor, but no heat. The entree was good, but without soup and appetizer it just wasn't well rounded. Also, the food would have benefited from being served on a hot iron plate. Not only does it add sear, but it keeps the dish hot. Post meal, I had hoped for a cookie and despite being a block from the fortune cookie factory, no cookie was served. Would I return, sure, with a large group, that would be the only way to truly experience the menu. With 2 people I could have added soup and appetizer as the entrée is also large enough for 2. That said, this was one the cleaner places in Chinatown. That is not to say Chinatown is dirty, but many restaurants need paint, have old furniture or have water stains. This place was fairly nice inside and could be classy with a few more bucks invested. This place really shot itself in the foot by discontinuing lunch, despite being decent, there was just too much disappointment today.

We only got 4 dishes, 宫保鱼， 椒盐虾，干煸四季豆， 夫妻肺片。Gong bao fish, salt and pepper shrimp, green beans and "husband and wife lung strips"! Actually that's a beef and tendon appetizer. Everything tasted just like we remember. Well, the fish dish was wetter than before but still tasty. Flavors are authentic but a little toned down from the Sichuan food in China and in a few other local restaurants. The main flavor of Sichuan cuisine is 麻辣 or spicy numbing. It's not really so hot as it is numbing. Your lips tingle. Most people who didn't grow up with this aren't big fans. Their 水煮肉 or 水煮鱼 comes pretty close though. Leftovers with either of those and leftover rice plus whatever make the very best 烩饭, huifan! Just boil it. We arrived there early and there were just a few other customers eating. And they left soon after. So it was just us and a steady stream of delivery drivers coming in to pick up food to go. I would consider ordering on line like that but this food doesn't hold up well over the distance to our home. Although the interior had been remodeled since our last visit, the decor is fairly stark. Combine that with the location in a strip mall on the corner of Jackson and 12th, which has seen better days, ambience isn't a real draw. However if what you want is a very good meal at reasonable prices then you should go to the Sichuanese Cuisine restaurant in Seattle. (I prefer it to the one in Bellevue.)
