My first visit to this establishment was on January 20, 2026. My dining companion and I went there a little bit after lunchtime. There is good signage and adequate parking. Total seating I estimate estimated to be about 40 people maximum. It's relaxed decor with a really outstanding mural covering the entire south indoor wall. The menu offers choices of American diner type food and a few Mexican dishes. I had the chili cheeseburger with a side of fries and friend had grilled cheese with fries. The cheeseburger was cooked to my specifications and came with onions, pickles lettuce. Very good flavor and a nice bun. The fries were done perfectly. The grilled cheese was a great comfort food. The quality of the Chili Hills in Edgewood has declined the last year or so. Sometimes it's good , sometimes it is pretty bad. This review is getting two stars, based solely on the kindness and professionalism of the waitstaff, otherwise it would have been less. I ordered $16.00 nachos to go. I got out to the car and there was nothing but beans and cheese on some chips. I took them back in and the waitstaff was very nice and got all of the accoutrements to go with. They gave it back to the surly Cook to put garnish on it, and I went back out to my car and drove away. As I was driving down the street, I took a bite of the nachos and disgustingly, it tasted like a giant bite of blue cheese. I searched through the nachos and there was no blue cheese, so I'm pretty sure that either there was cross-contamination, or their shredded cheese has gone bad. One of my grandfathers favorite restaurants. The last meal he ate out at was here; and I'm sure it was either biscuits and gravy or the juevos rancheros. Living in a small town you get to know the locals, and I know the people here loved him/vice versa. He always enjoyed saying he'd had a cup with his name on it here! It's been about a year since he passed and I haven't been back since but I saw this in my draft. There's a lot of "New Mexico" food here but I've been able to find things to eat without chili anyway. I've been satisfied every time I've been here. Worth a visit. New management. Took the wife to dinner. The ribeye steak was so bad she thought it might be rotten meat. She didn't dare take a second bite. The baked potato was so cold it didn't even try to melt the butter. Normally, she loves okra. Couldn't eat it either. I had the 'all you can eat fish. Apparently, all you can eat is three small pieces. Taste good though. Except the tartar sauce. Yuck. It's a shame, but we won't be back. My two friends and I stopped at Chili Hills restaurant for dinner on June 19th 2024. I ordered the fried chicken dinner and my friends ordered the fried cat fish dinner. The meat/fish were both very dry and tasteless as were all the sides (broccoli, Okra, potatoes). The food looked unappealing but it was almost 8:00 pm and we were hungry so we ate some of it. The table water was served without ice and tasted like tap water which looked cloudy and the table felt sticky. The only saving grace this restaurant had was the salad and the the two waitresses that served us with enthusiasm and a friendly smile. I can't imagine how this restaurant got 4 stars, except that perhaps the rating is for breakfast only or includes all the Chili Hills chain restaurants in New Mexico. We loved this place when it was run by a gentleman named Carl, back in the day. Since he left we unhappily report that the food has been mediocre at best, and the place is filthy, including the kitchen, which is visible from the front door. We have seen roaches more than once. Oh, and we have wound up with food poisoning several times. We have tried to give this restaurant "just one more chance" each time the owners have changed, because we support local businesses, but this is not the restaurant it used to be. The eggs were good for my huevos rancheros but the hash browns were uncooked. Grilled brown on the top but raw in the middle. I have no idea how this place got a 4 star rating. The bus boy who had just started and was only there for his second day had WAY better customer service than our waitress who was an older lady with eyebrows that looked tattooed on (she never gave us her name). My husband got the chicken fried steak breakfast which he said was under seasoned and didn't have the heart to tell our waitress that. He barely ate half of his plate. I got cheese enchiladas with red sauce with beans and rice on the side. I'm not normally a red sauce person so when I asked the waitress how it was and how it tasted all she had to say was "good". The beans were "ok" and the rice was actually pretty bad. For this to be a New Mexico local restaurant I had very high expectations for the food but was let down. The rice tasted like the rice you would get from a microwaveable bag of rice and like straight tomato, no other flavor at all. The red sauce tasted like a very empty non flavored spicy sauce but at the same time tasted like straight tomato (the spicy part was the only thing saving them) when the waitress came back to ask me about the red sauce I told her my honest opinion to which she replied with attitude "well there's no tomato so.." and just walked off without offering any type of solution or replacement, there was no seasoning or anything on any of mine or my husbands food. I ate one enchilada that's it. Her overall attitude killed my entire vibe for that place, she was not helpful whatsoever, she had terrible customer service, when she would come back to the table she only made it a point to ask my husband how his food and everything was and how he was doing up until the last minute she asked me how my food was. She was terrible and bc of her we will not be coming back to this place anytime we are here. She got a $3 tip and if it was entirely up to me she would've gotten $0-$1. She did not deserve to be tipped at all. We would've tipped our busboy a decent tip if it was an option and he wouldn't have to share it with the wait staff. read more
