Stopped in here to eat some lunch on the way to Breckinridge, CO. As I walked to the door the sign out front peaked my interest with the glory of the idea that I could get a chili relleno burrito. I love burritos and I really love chili rellenos. Upon my entry I see on the menu that it is not always available, so there was the anticipation that my new dream may not come true. As I waited in line and could feel the sweat of anxiety build on my forehead. Finally I was up to order and I asked the tatted and pierced up gentleman if my dream was to come true on this day. He politely responded "excellent choice". Hallelujah!!! A vision that had never crossed my mind before is now just at my fingertips. As I hurriedly scampered to my table like a squirrel who just found the largest pecan in the world, I was now face to face with a desire that my tastebuds had never dreamed of. I bite down and as the miracle of the roasted chili, cheese and battered deliciousness combine with the rest of the burrito those happy endorphins that we all desire becomes almost overwhelming. I am now positive that my new found love will forever be with me and continuously be a craving that I will ferociously seek. 4 stars was due to the lack of seating. read more

On my first visit I would have game this place a 5 star review. The man that helped me gave good suggestions for my first time and seemed happy that I was there. As well as the food being wonderful. The second third and 4th visit were just average. From the staff being irritated or short by a simple question to the small portion size I received compared to previous times I would have gave 3 or 4 stars. Unfortunately I was unable to visit this place for a 5th time. Last Monday on my way back down to Denver I figured I'd stop in to grab some tacos and I'd been looking forward to it all day. Well I pull up at 6:54 all chairs are on top of tables with a girl cleaning in front and 2 others guys in back by the kitchen area and the door locked. All 3 employees saw me kinda laughed/smiled and kept going about their day as I wave at them in hopes that one may come out to give some sort of explanation as to why they were closing early since the door says open daily until 8. I had recommend this place to many friends but now I don't even desire to eat here. Hopefully they can learn to understand that their customers are important and keep the business going. read more

Best tacos I've ever had. We were passing through on our way home from vacation and stopped for dinner. A little pricey, but worth it.

I had the Fish Tacos. The flavor was great, but the quantity of fish per taco was incredibly tiny.

Been coming here for about 5-6 years now starting the year we renovated our house and had no kitchen for a while. We've probably eaten here about 50 times or so now. Those who say it's similar to Chipotle or Qdoba are right in terms of the format/setup of the store, but they aren't paying attention to the flavors, which are far superior here. We've continued to come here though less than the 2 times a week we used to. The fish and shrimp tacos really are very good. The breading they use has great flavor and everything about the pico, white sauce, cilantro, and cabbage just combines for a delicious meal. We always get the corn tortillas as I didn't like the flavor of the flour tortillas when we ordered them. The only negative I have is that the consistency just isn't there any more in terms of amount of fish or shrimp in your taco. There are times where your tacos will have nice full pieces of fish and other times where you get just a tiny piece of fish in one taco. It's like the staff, which cycles through frequently and isn't as friendly as they used to be, is told that only one piece of fish can go in every taco or they'll be fired. This is fine if your fish is consistent size, but when it's not, I expect someone to recognize this and fix the problem rather than server a "fish" taco with a nugget of fish in it. Part of the problem may be the way they cook/dole out fish for the tacos. They bring over the tray of cooked fish to put in your tacos and there is already just enough for one piece per taco so if one of the pieces ends up embarrassingly small, the staff just sort of shrug and put it in your taco because they don't have any extra cooked. It's a poor process that assumes too much about consistent fish size/pieces. This kind of thing happens probably every 3rd/4th time we go. If they didn't taste so good, we'd bail on them, but they do taste good, so we keep going and deal with occasional order that's less than what we've come to love. Service is generally better outside of ski season when there is less customer volume. I'd give the food we've had (never had anything other than the shrimp and fish tacos) 5 stars, but the service 2-3. Since we like Chimayo overall and just wish they'd figure out their consistency issues, I'm giving it a 4 overall. read more

Chimayo has the best Baja fish that I'm aware of, I particularly like their fish burritos but the tacos are great too. I highly recommend it if you're in Summit County. read more

Both my boyfriend and I got the garlic grilled shrimp burrito. I like how they cook the shrimp right there on the skillet made to order. The girl that made my burrito was nice. They have flavored sour cream sauce that was a nice delicious touch. So we really enjoyed our burrito while eating it for dinner. However, the next morning we both had stomach aches and rushed to the bathroom. Definitely caused by our burritos. It tasted good going in, but not coming out. So...I dunno. Maybe our shrimp wasn't cooked all the way? I'm kind of torn because our burritos did taste good but the fact it made was sick is unfortunate. read more

I really like this place and come often, the baja shrimp taco's and burrito are SO good! My only issue with the place is the total inconsistency of the staff, you never know if you're going to get super nice stoned guy, surly as f@#k guy that hates you and every other customer that has ever stepped foot in the place, or the completely complacent employee that is barely aware that you're there. The character that makes your meal seems to affect the end product as well. It's a bummer because the food really is good. read more

I have had a lot of burritos in my lifetime, but I have to admit I was caught off guard with the fish burrito served here. I wasn't sure what I wanted so the guys behind the counter asked me if I was Hungary and I said yes and they recommended going with the burrito. Then it was time to decide what type of burrito and they said their top seller was the fish burrito. I now understand why. They packed the burrito with black beans, corn, salsas, cheese, jalapeños and cilantro along with the fish. I was asked if I wanted their special sauce and I said no, but the young man said he would put it in a small container for me to at least try it because he said everyone that got the fish tacos or burritos loved the sauce. So I got it on the side. Thank you to the young man because he was right. It was outstanding with the fish burrito. What was also amazing was the fact that everything put into that burrito was fresh. In fact it was so fresh that I could actually taste every ingredient put into the burrito which was amazing. The place doesn't look like much but their fish burrito and all that was put into it was an unexpected flavorful adventure. I look forward to going back and trying their other plates. read more

I came here for dinner and ordered grilled fish, it was around $10. When the food came I was shocked to see there were only three little pieces of fish, each about the size of a piece of French fries, and it is so salty I could hardly eat them. Never again! read more

Stopped here on the way to Steamboat based on reviews. We were not disappointed. Most of us had the grilled shrimp tacos which were smoked, garlicky heaven. Queso, guac, salsa and chips on the side (not that you needed it as portions were ample) were outstanding. After snowboarding all day, we were starving to death. We decided to go to Chimayo because the reviews were great, and the price was really good as a place in summit county. We were so glad we chose Chimayo. Their Fish taco is amazing!! They fry them right in front of you. The tartar sauce on top complements the fish so well. They give you 3, but I was stuffed with 2. Chimayo Grill is our weekly go-to for a great meal at a reasonable price. We love the variety, but I keep going back for the fish tacos! The menu has enough to please your group with prices that won't break the bank like many Summit County dining options. These guys ROCK!! Fish taco was amazing! My husband got the bowl and then after getting it realized it was breaded.. My husband recently has changed to a gluten free lifestyle and cannot have the crust so went back and asked if we could just order some of the grilled fish and change it out. Well Mark (I believe was his name) wasn't having that! He wanted us to enjoy the meal fully and remade the entire bowl for us so that we didn't chance my husband getting sick! We had Frank and his team put together a Taco Bar for a party of 25. It was incredible. From beginning to end it was perfect. I simply called and discussed menu options, they sent a confirmation email with the price, I picked it up and it was ready right on time. The food was amazing!! We had enough for 10 extra people.
