I'm sorry, but I just don't see what the hype is all about. Went there for lunch for the first time a few days ago and I was unimpressed, to say the least. First of all, they seated us in what felt like a cave with hubcaps hanging from the ceiling, the waitress was kind of rude and I was very disappointed to look over a menu in a Tex/Mex joint and find no tamales. Whoever heard of Tex/Mex joint without tamales? Since I didn't find my favorite Tex/Mex dish, I opted for the chicken flautas. Tasteless would be the best way to describe them. It would be kind to say the meat was dry and overcooked. I had charro beans that were cold and also tasteless. I didn't even bother tasting the rice. Chuy's is rapidly becoming the Chili's of Austin style Tex-Mex. It's safe and predictable. Having said that, their chili gravy is as good as anyplace else and it's hot. If Chuy's had one consistent problem, it's their fascination with over garnishing the plate. We went to Chuy's on a Saturday afternoon and it was pretty busy. Upon walking in there were two hostesses. The one that stood out was Britt. As we walked in her face was stone cold. It was so uncomfortable but I managed to put a smile on my face thinking she was going to eventually say something to the effect of "Welcome to Chuy's but I would of been waiting for ever because it never happened. We sat outside because it was a nice day. I thanked Britt as we sat down but she just walked away without saying anything. I can't even put into words how uncomfortably creepy the whole situation was, but if you ever come into contact with her you will see. Thankfully our server was nothing like her. We both ordered enchiladas. The southwestern and chicka chicka boom boom. They both were very good and came out quite quick although my rice was a little cold. Excellent mexican restaurant! Our waiter was wonderful and very prompt with ordering, knew the menu like the back of his hand! Also he was very personable and truly cared about our experience. I LOVE chuy's happy hour! The nacho buffet is always great especially since we can make our own queso. I normally love coming here BC I love their Margarita's but the last time I came here I was really disappointed with the service. The food was how the food normally was, good, but the service was horrible. Our server seemed to have forgotten about us completely. He took forever taking our orders and if we asked for nachos it took him forever to bring it to us. Our entire meal was like this with him taking his sweet time. He was also being kind of rude/short with a friend who asked a question. At the end of our meal a group of servers were talking casually and gossiping right next to our booth when they were cleaning the tables. They even started talking badly about other customers right in front of us. It was so rude. I'm sad that the last time I came to this restaurant didn't go as well as normally, but hopefully the next time I visit the servers will be more professional. read more

Chuy's is a great place to go if you want really great and cheap Tex-Mex. Everytime my fiancé and I go there we never have a bill over $25 unless we order margaritas. Just simply cheap and great! The only Mexican place I even go to in Waco anymore. read more

Okay folks--the best way to enjoy Chuy's is during happy hour. The salsa/queso/chips bar is FREE and will fill you up. I like the food here, but do find it salty. ( And I am a fan of salt!) One thing to try for sure is the jalapeno ranch dip. Great with fresh chips, you can request it at the bar for no charge. The fajitas are outstanding, but it is pretty hard to screw up fajitas...Fun atmosphere for groups, can be extremely noisy, even in the main dining area. I would recommend the patio for diners wanting to talk to one another without shouting. Overall, fun joint with above average food and SUPER tasty mojitos--worth the wait. read more

The competition is stiff when it comes to Tex-Mex in Texas, and Chuy's seems to be franchising briskly. Unfortunately, its uniquely Austin aesthetic comes off as contrived when reproduced again and again, even if the decor isn't exactly stock. However, they have built considerable quality control into their model. The tortillas are hand-rolled; the pico-with-a-kick salsa is made fresh on the hour; and the margaritas are made with fresh-squeezed lime juice. For the sauce lover, they have a number to choose from. The menu is extensive and includes all of the favorites and a few of their own devising. The website explains that their recipes are mostly collected from particular places in the southern part of Texas. This attention to place may redeem the fake palm trees and the rest of its out-of-place-in-Waco interior. read more

Finally visited this location a couple days ago. I had the chicken enchiladas with a sour cream sauce. Wife had #5 chalupa and deluxe chicken enchilada with Hatch chili sauce. We both got the refried beans and rice. A margarita was purchased as well. The food came out very hot and quite tasty. Loved the hatch chili sauce. Margarita seemed to have alcohol and was not overly priced. We actually got out of there with a 20% tip and bill was $32 and change tip included. Menu is a bit limited. We will definitely be returning considering it was all topped off with food service by a young man with great attention to his customers. read more

We were in Waco Texas visiting a friend and stumbled upon Chuy's. First off the staff were about the nicest people I've met and SO friendly. We sat at the bar and enjoyed looking around at all the fun artwork and "props" covering the place. Our bartender was AWESOME and poured one mean drink! The food was wonderful and the portions were belly busting. The queso dip was to die for and the jalapeno ranch was a complete and delicious surprise. Great experience with service and the green chili chicken enchiladas were even better.

There was no wait time which was good. However, we didn't meet our waitress until about 20 min of sitting down. She kindly took our order and brought our chips and dip as necessary. Once the food came out, there was one plate left out. The waitress completely forgot to enter it. She realized this and made the correction. All other 8 people finished eating and they still hadn't brought out the missing order. She also forgot one person's refill. We spoke with the manager and she comped the forgotten order and offered free dessert. The manager did try to fix the situation. read more

This is my favorite chain restaurant in Waco. The service is always fast and friendly. I love the chips and complimentary creamy jalapeño dip. The deluxe chicken enchiladas are also amazing and my husband loves Chuy's burritos. I have never ordered something I didn't like from this place. We have been to this location many times and have NEVER been disappointed with our visit. The service is great and we never have to wait long to be seated, even when it's insanely busy (which is priceless when you have young children in tow). The servers are friendly and attentive and they keep drinks and chips/salsa refilled. Food and drinks are fantastic, my favorite is the Elvis green chile chicken with boom boom sauce and a fried egg on top (per recommendation from our server). Great for families and a cool atmosphere.
