If you've never been here, wow, just wow. We came in expecting your average "Italian" pizza joint not this amazingly authentic Italian experience. The garlic knots were a great opener to our dining experience followed by a phenomenal meatball sub on homemade bread that is, by far, the best we've had in Memphis. Of course we had to get a pizza and was not let down, the chicken parmigiana pizza was perfect. So, if you are in the collierville area and want great reasonably prices Italian - this is where it's at! Oh, and PS: kids eat free on Monday with the purchase of an adult meal! I was visiting famiglia in Tennessee and we heard about this spot with authentic Napoli style pizza (Neapolitan or from Naples). We went to go check it out and were not disappointed. For those of you who don't know the difference, Napoli pizza is cooked on a stone plate in a wood burning oven that reaches a temperature of 900- 1,000 degrees, most of which are hand-built by Italian Artisans. Also, there is no such thing as pizza sauce. If you see red sauce on a real Napoli pizza, it is cooked with crushed San Marzano tomatoes! Also, most of the mozzarella is not shredded, it is buffalo mozzarella slices. Ciao Baby had all of the tools necessary to create the perfect authentic Napoli style pizza. The oven was beautiful, the dough was freshly made, and pizzas were made to order! This is counter service, so do not expect a waiter to wait on you. You order at the counter and they bring you out the pizza. You get your own beverages, napkins, etc. They have parmesean, crushed red pepper, garlic powder, and oregano all in shakers for you to add to your pizza if you would like. We ordered 5 different pizzas to try. Each pizza was good for one hungry person or to split between two people who are also having a salad or something. There were 5 of us and we each got a pizza and shared family style. We had the Ricotta Pizza ( sausage, ricotta cheese, mozzarella, onions, garlic, basil, San Marzano tomatoes), the Proscuitto Pizza (Proscuitto, fontina cheese, parmesan, San Marzano tomatoes, olive oil, and oregano), the Toto pizza (Proscuitto,San Marzano tomatoes, mozzarella, goat cheese, cherry tomatoes, parmesean, basil, and garlic), Buffalo pizza (chicken, mozzarella, gorgonzola and jalapenos drizzled with hot buffalo sauce) and Greek Pizza (Chicken, Mozzarella, artichokes, kalamata olives, feta cheese, and oregano. All the pizzas were terrific. I would not sway anyone away from ordering any one of these. However, my absolute favorite was the Ricotta Pizza. The creamy sweetness of the ricotta with the salty spiciness of the sausage and the combinations of flavors really hit the spot. It might have been close to the perfect slice of pizza. The other one that I really loved was the Toto. The proscuitto with the goat cheese, basil, garlic and cherry tomatoes was such a good combination!! Each pizza comes out barely cut with your own pizza slicer, so you can slice it the way you want. This is no Pizza Hut or Dominos Pizza! This is the real deal! The one disappointment was that I really wanted to try the rapini pizza, but they were out of the broccoli rabe. We also ordered a slew of desserts: cannoli, chocolate mouse, bread pudding, and the cinnamon sugar dough fritters ( I don't remember what they called it, but I know them as frittele). Everything was very good! I really loved that bread pudding though! It was super yummy!. All in all, I think this place is a great find and I hope that it does well. This is not a review against the food in any way. This is the only place to eat pizza in Memphis imo. However, you NEED to fix your hours if you continuously close before your sign says you are closing. My husband and I had a terrible day and showed up to eat on Thursday night around 7:20p. All we wanted was some comforting pizza. I was told the restaurant was closing early. I completely understand the reasoning why but we drove pretty far to get there and it didn't even occur to me to call a business who advertises they are open until 9 on a Thursday night. I'm giving this place a modest 3 star review and that's being generous. First of all, people have to remember this is authentic Neapolitan type pizza. So that means it's a 12' inch individual (adult size) thin crust pizza. The crust was crispy and the sauce was flavorful. The ingredients were not cooked long enough. Not enough mozzarella cheese. It just wasn't that great like everyone makes it sound. Prices seemed a little high but then again everything in Collierville is inflated. The owner has a arrogant attitude which may come off as rude to some but it's just his east coast character. I may give this place another try just because I love wood fire pizza. read more

Kids. This is the closest to Italy yet. I spent three years in Italy and have become quite a connoisseur...really. If you're looking for Americanized, i.e, not real Italian pizza - then this won't be your place. No stuffed crust, no pasta bowl bread cholesterol busting dishes, no pile of unchewable mozzarella cheese, no thick, indescribable sauce with who knows what seasoning. Hint: Italians use cheeses other than mozzarella... Here's the key, this guy has a VPN certification. Google it. It doesn't get any more pure. He uses wood. Simply put, this is real Italian, and more importantly; pizza Napoli. The sauce is tomato. Plain, simple, gorgeous red tomato, like tomatoes should taste. The pizza margarita is done right. Not slathered with mozzarella...just enough spread around like it's supposed to be in chunks. Real basil, then they do what few American pizza joints do, they drizzle it with Olive oil. The dough? High protein flour, water, and salt...then you let it go. 700° oven, not the Conveyer belt make it awesome. One complaint, we eaters of real pizza Napoli do not eat pizza with our hands. This was good, though not so great that I am clamoring to run back immediately. The Margherita was quite good and worth a repeat. I had the prosciutto with added anchovies - this didn't work out as well. The anchovies are a high quality - big, white and firm - but they were more "fishy" than "briny" and thus I am reluctant to fully endorse them. But the other element to it is they lay long solid slices of prosciutto on the pie instead of smaller pieces. This blankets the anchovies and thus makes their flavor more intense. The bottom line: don't get anchovies on a prosciutto pizza. My daughter tried the pepperoni pizza. This too was a swing-and-a-miss...the pepperoni has a smoky flavor unlike any I am familiar with. This imparted a skewed flavor to the entire pizza - even if the pepperoni was removed. However the basic cheese pizza is a good base from which a tasty pie may be derived. I am giving this place 4-stars because I think the food is of a generally high quality and is worth trying if nothing else just for the experience of a style of pizza that is certainly rare in the Memphis market, and unique to Collierville. read more

My wife and I went here for the first Friday during Lent, and it was PACKED! It was our first time eating here, and we were both thoroughly impressed. The staff was friendly, and our order was processed fast. We are both from New York City, and although nothing can compare to a NY Pie, this was pretty close to a couple little pizza joints that we would enjoy in Queens. Within 3 minutes (and, before our meal arrived at our table) I knew I would have no intention of ever returning. This place is frantic, disorganized, and unpleasant. The ordering process is confusing. The quality is mediocre. We tried three different pizzas, and two were undercooked and unpleasantly doughy. All three were too salty, single note, and uninteresting. The Margherita had ALMOST a grand total of 2 basil leaves on it... Just sad. I had to walk behind the counter myself to get a box for the leftovers (for my neighbor's cute black lab - not for us) because none of the amateurish employees could be bothered to help. If you are planning to drink water instead of soda or wine/beer, you have to drink out of one of those smallish "kiddie cups". Here's a suggestions for the owners: maybe get real cups? At $10++ for most of your basically single-person pizzas, it might be nice to be treated like a valued customer. Here's another annoyance: when you are standing at the cash register to order and pay, you have to continually dodge the butt end of the long pizza peel handle as an oblivious young man works the (admittedly impressive) wood fired oven. I get it that they want to display the oven, but who the hell wants to deal with that?? Summary: pizza = below average; atmosphere = sucks; sad example of nuevo restauranteurs who just don't get it. It's expensive and they are cheap on the ingredients. $38 for two small pizza's with little in the way of toppings, two salads that tasted terrible, and two beverages? The wood firing is a gimmick. LONG VERSION I saw the five star reviews on Yelp and immediately thought,"oh look, shills, I must go try this restaurant then if it's just opened. I wonder if it's going to be about as bad as the cupcake place they replaced." I unfortunately wasn't wrong. :-((( We come in and see that the pizzas are around $8 to $12. They are too small to share with another person, but they are bigger than a personal pizza, thus why they cost so much. You order in line, sit down at any open table, and wait for them to give you your food. You also get your own drinks. My husband and I order two pizza's, two Caesar salads, and two drinks. The bill came to $38 and they also had a place for tips on our credit card receipt. Really? I haven't even gotten my food yet. Restaurants that put tips in before you even get food and service in general annoy me. We sit down. This restaurant is brand spanking new, so why is my table not standing correctly? It instead rocks back and forth. The acoustics in the restaurant are also sub-optimal because of the their high ceilings. People in the restaurant are talking and it sounds much louder than it should. I try to get our drinks, but the Coke Zero ran out while I was trying to use the fountain drink machine, so I got tea instead. The tea was greatly watered down. I'm not sure the Coke Zero was ever replaced either. We get our $6 Caesar salads and I'm immediately disappointed. There is no Romano cheese and the dressing tastes like plain mayonnaise. Seriously, I paid $6 for this salad? The croutons were the best part of this salad (they were actually quite tasty and I wonder where they acquired them.) We finally get our pizzas. Both of our pizzas are meager on the ingredients. The sauce tastes like it came right out of the jar, plain plain tomato sauce. My pizza had very few anchovies, plus the anchovies weren't salty in the least. HOW DO YOU HAVE NON-SALTY ANCHOVIES ON A PIZZA?!!!!!!! I understand this is wood fired pizza, but I've had wood fired pizza before and not tasted this kind of burnt pizza - they had majorly blackened the crust on my pizza. Ugh. So was there anything good about this place? If the cost had been HALF of what we paid, maybe I'd give another star or two. But $38 for this kind of food and service, I could have gone to Longhorn and gotten better food and service. Good grief. read more

I've been here and had AMAZING pizza (hello pistachio pesto, and red wine sausage). I've also been when it was so-so (lack of flavor or quality in toppings etc.). My husband and I went to Ciao Baby tonight for the first time. When we walked in I immediately thought of "Extreme Pizza" which is in Brentwood, CA. EP has the same concept as Ciao Baby however, at EP the process is much smoother. Ciao Baby is set up as an "assembly line" per say. Customers stand in line and the pizza makers, along with all the ingredients are behind plexiglass. The menu is on the wall. Customers place their order with the girl at the cash register. This part was really frustrating because the cashier was very very slow and not only was she helping customers she also had to answer the phone. Doesn't make much sense to me to have someone in the front who is taking orders from customers also answering phones. I do have to say that the cashier wasn't friendly at all. I think she might have been shy. Someone outgoing who smiles easily would be a better fit for interacting with customers. That person is the "face" of the store...first person to interact with customers. At Extreme Pizza the "pizza makers" took your order when you came in. One person tossed the dough and put the sauce on. That was their only job. The next person asked the customer what they wanted on the pizza and then the pizza was pushed down to the register along with the tix of what was ordered. Cashier rung up the order and when the pizza was done your name was called out. It kept the line moving and seemed more organized and fluent compared to Ciao Baby. Ciao Baby is a wonderful, unexpected addition to Collierville. It's owned by a loud, passionate Italian New Yorker who knows how to serve up real Neapolitan pizza. I would branch out to another pizza type, but I always gravitate to the four-cheese and add meatballs. Great selection of paninis and pasta specials as well. The pizzas and WINGS are cooked up in a wood-fired oven the owner imported from Italy. Ambiance is meh - like a 5 guys or something, but food is good. My only gripe lately is that you can't get a cup for water - people were stealing soft drinks from the fountain, and now you must buy bottled water if you want water. read more

The staff seemed to actually care that we had a good experience, and took the time to understand what we like and to suggest menu items. This is a big plus - we would have ordered differently without the suggestions. The pizza is excellent - thin crust and baked in a wood fired oven. Hard to top this. Best pizza in the area by far. This is pretty far from my house but my husband and I were in the area and decided to give it a try. It was delicious!! I planned to take a photo to add but stuffed my pizza down my throat before I had time. We both had pizzas with prosciutto on them, and instead of the usual situation with dropping a few pinches of it on the pizza, they layered entire sheets of prosciutto on after it was out of the oven. Really a hidden gem in Collierville. Went here for lunch with my family and was pleasantly surprised. We have never been here but it was amazing! Sabrina took our order and was so nice and friendly.
