I've been eating at Uchi since it opened in Denver and today it still carries that same intoxicating balance of precision, warmth, swagger, and restraint. The room itself glows instead of shouts. Wood slats divide the dining room into little private theaters while the sushi counter hums with focused choreography. Expert hands moving constantly. Rice. Fish. Quiet communication. Tiny acts of discipline repeated hundreds of times a night. I sat down intending to have a civilized happy hour. That plan lasted maybe twelve minutes. The kurodai crudo arrived first. Gooseberry, leche de tigre, candied garlic. Bright, sharp, and alive. This is the kind of starter that wakes up your entire palate and you are reminded that you will absolutely be spending more money than originally intended. Next was the bincho temaki: cool albacore, kimchi, avocado, and a vividly garish orange sauce with some heat to keep the richness from becoming too much. Uchi understands something many restaurants don't: luxuriousness needs balance. Fatty fish without acid, spice, crunch, or brightness is palate exhaustion. And then one after another the deliciousness continued: the oysters were cold and perfect with cucumber, calamansi vinegar, and umeboshi. The day boat scallop nigiri nearly stopped time altogether. Just sweet scallops, rice, citrus, a little finishing salt. Incréable. Or whatever the French word is for "I briefly forgot my own name." And somewhere during martini number one, the staff adopted me. Apparently Uchi keeps notes on guests. Mine, I was told, says I'm "nice and a good eater," which may be the most flattering thing anyone has said to me in months. Suddenly more dishes started appearing. Gifted nigiri. Ikura glowing like little amber jewels (my favorite). A ridiculous and completely delicious carrot toro maki with green chili crunch and enough heat underneath the richness to make the whole thing flirt openly with your mouth. At one point the bartenders literally invented a "walu walu shot" on the fly just because the mood had drifted into improvisational chaos. This was somewhere between oyster shooter, seafood dare, and excellent bad decisions. Meanwhile, the guests next to me started talking to me and the entire energy of the evening shifted into communal sushi-bar joy. Suddenly we were all reacting to dishes, laughing, comparing bites, participating in the same ecosystem of salt, fish, alcohol, and temporary human connection. This is the real thing Uchi sells. Not merely sushi. Attention. Rhythm. Atmosphere. Memory. The feeling of being folded into a beautifully functioning machine dedicated entirely to pleasure. And yes, by the end I was emotional enough to remember being 20 years old eating sushi with an older woman named Alana who wore real fur and introduced me to this whole sensual adult world in the first place. That is what a martini and exceptional nigiri will do to a man. The final bill before tip was somehow only $141, which honestly feels mathematically impossible considering I briefly entered a spiritual relationship with the sushi counter. Both the red cabbage and pear salad and the brocolli salad are delicious and the portion is massive, easily enough for a table of 4 to share. For apps and shareable entrees, you can't go wrong here. The build your own tuna temaki hand rolls can easily be shared and the tuna is so fresh and well seasoned. The szechuan dumplings are delicious, as is the curry onigiri and the bao bun. The Dan Dan noodle, kimchi Carbonara, and their tonkotsu ramen are also amazing, and, with the exception of the tonkotsu ramen, can easily be shared. I would highly recommend other seasonal dishes as well, such as the coconut swordfish or chicken katsu parm. However, one of my absolute favorite dish here is the ochazuke. It's basically grilled fish over rice in a warm green tea dashi. It's so comforting, especially on a cold night, and a dish that I return to time and time again. I've been many times since before and after COVID, and it was one of my favorite repeatable spots in Denver. However, the crew totally dropped the ball with our visit today. My wife ordered a tonkatsu ramen and got a chicken tonkatsu set instead (chicken cutlet, not bowl of ramen). To not make it weird, we just let that one be for the greater good of the table because it was our anniversary, grandparents were visiting, and we are here often. Our hamachi kama (one of my favorite dishes in the entire city, normally something I'd highly recommend on this review) was never sent to the kitchen, leaving us waiting for over an hour with two young kids at the table who had finished 40 minutes before. I watched the staff's confusion from my seat, even after we had been told that it was on its way. It was never even started, and it was obvious. That stuff happens, but it's hard to hide what happened in an open kitchen where you can hear what people are saying. But then after they had the "oh crap" moment, it wasn't even expedited. It was gonna take so long that it wasn't worth getting, so two people had to leave our not-busy lunch without getting the main thing we brought them to Ototo for. We were asked to wait for the dish, waited 15 more minutes, and it was not even close to ready. And while I appreciated the apology, the manager initially just tried to "take the dish off the bill," a dish we never received. So he basically tried to do nothing because no restaurant would charge for something that never came out. After I pointed this out, they took off part of the check, but that attempt at nothing under the guise of a comp was crazy. I've easily spent thousands at Ototo over the years. I've sent tons of people to Kizaki, Temaki Den, and the others. This will probably be the last time I go to Ototo. If you read some of the recent bad reviews, something is not working here anymore. I hope the otherwise amazing service at the other Dens can find its way back to Ototo.

There were open bar seats and plenty of open tables, so I'd be nervous to see what the experience is like on a busy night.
