It's easily in the triple digits out here so i was wearing shorts and flip flops and we were not turned away. Our waiter Winston was kind and attentive and gave great recommendations. They start you off with warm sourdough bread and butter, which is complementary. Our drinks arrived. We ordered a cucumber spritz and a Long Island both were made to perfection. We ordered the grilled octopus, scallops and a half order of the Sea bass. The octopus was so tender and tasty! The scallops were cooked to perfection and the sea bass was full of flavor. I loved how many of their dishes are available in full or half portions depending on how hungry you are.

They were busy and service was still great. We sat outside to enjoy the beautiful cliffside view. The cocktail menu was fun and unique! For our main courses, we ordered the braised short ribs and the pan-seared sea bass. Unfortunately, the sea bass did not taste fresh. We alerted our server, who promptly took it back to the kitchen, and we ordered a second braised short ribs instead, which was perfect. While this was a rare issue, we wanted to share our feedback. We look forward to returning soon, just as we have for all these years.

Our waiter, Justin, was so attentive and so nice! Everyone that works there is really great! We mentioned that we were celebrating our 24th anniversary and we were surprised to get a piece of chocolate cake as a surprise. AND, we were given an anniversary card signed by all of the staff there. Amazing! Thank you to all of the wonderful staff and especially Justin for loving the "dad" jokes hoisted upon him. We were heading over to the Palm Springs cultural arts center to see a singer perform and drove in from Los Angeles and needed to have a wonderful dining experience within an hour, they made it happen! Jamie was our server and she did not skip a beat. The tables are set in an eloquent style of dining. The atmosphere is charming., but it doesn't stop there. The food is so amazing.. it's flavorful and delicious. The drinks were amazing, but the service is above and beyond. If you want a really great steak, seafood or pasta this is the place. The ambience and vibe from staff and guests were just the cherry on top! Jamie, our server is such a sweetheart. She brought a dessert for my mother with a candle in the entire restaurant saying happy birthday to her. She just turned 84. Great memories and great food. When we checked in at the restaurant, they proceeded to walk us theough the restaurant, back past the dishwashing area and kitchen, into a small private dining room with an open kitchen. It's a very casual, unpretentious space, which was one of the things that I liked the most about it. We were greeted immediately and were offered a wine and cocktail list. We were also given the evening's menu, which consisted of six courses and an optional 7th, for an extra supplemental fee. We opted to partake in this, not wanting to miss out on any of the offered dishes! On a sidenote, the menu changes weekly, based on seasonal produce, fresh fish, etc. I should definitely mention that I have quite a few food allergies, so I asked to speak directly with the chef, away from our table to go over my dietary restrictions with him. Pleasantly, he didn't bat an eye and assured me that I would have as full an experience as everyone else, just with some modifications. I greatly appreciated this! Course after course after course was perfection and all four of us were incredibly impressed with all of the dishes that were served to us. And as our servers brought each plate, the chef would then approach our table and describe each dish. The attention to detail was not lost on us, nor was the personal approach that this restaurant strives for and achieves. For our final dessert course, the head pastry chef came and spoke to us about her creations, thus adding to the personal touch. And to thank us for dining at T&T, we were each presented with a goodie bag at the end of our meal, containing a mini chocolate loaf cake and a canister of their house-made and absolutely delicious, caramel corn! Before leaving, we spoke once more with the chef and he told us that the restaurant is only open Friday and Saturday evenings and he tries to cap the number of diners at 30 per night, which enables him to have a personal connection with each table. Considering the fact that we had called for a reservation only the day before, we felt very fortunate to have gotten in at the last minute. If you are looking for a very unique dining experience, then I highly recommend T&T Innovation Kitchen! Based on our experience, it was a three hour dinner and though quite pricey, we felt that it was very worth it!

And so was our sweet and lovely waitress, Alo. She's attentive, friendly, charming and such a doll. Wifey told her "you're the best waitress we've had in the entire Coachella Valley. And I agree 100%. Wifey's hibiscus margarita was unique, flavorful and refreshing. She forget to tell them "no salt." But it all worked out for the better, because the salt & chili powder spice rim on the glass, kicked it up another notch. I sampled it with a couple sips and totally agree. I'm generally a h2o dude when I eat...and loved the glass water bottle left table-side. More restaurants need to offer this. All our food was outstanding. My Branzino/fish was excellent quality and prepared perfectly. But a little too much sauce for my liking. I prefer Branzino when it's grilled whole with a light sauce. The piccata style was prepared well and the texture too. The sauce was good but a little salty for me -- especially with all the capers, and would prefer a little more lemon flavor. The rice was overly salty and wifey mentioned it to me before I even had my first bite. She had the Bosa Verde and enjoyed it very much. We both happily cleaned our plates. The squash was perfect and paired well with our entrees. Free complementary birthday dessert for wifey was just okay. Though we appreciated the thought and celebratory gesture...it was prepared with way too much gelatin and was like thick tres leche milk jello...and with ice cream too on top -- diary overkill. The carmel sauce was right on the money. Perhaps the preparation is their take on this dessert? Next time, we're going to be all over that Carlata Cake we saw at one of the other tables. The service is top-tier & polished. Couldn't ask for better hospitality. Along with Alo, was Daniel (who I recognized from Salsas) and the bartender Alex, who both happily joined in on the action. Chef Oscar, also made his way to our table to say hello & Happy Birthday. And of course let's not forget the classy & gracious owner, Fernando, who we shared a wonderful conversation with. He's a sharp dressed man, with lots of restaurant and resort history in the Coachella Valley. The restaurant & bar decor is simple yet chic, elegant and cozy. The lighting & room temp was perfecto. And the chairs at our table were extremely comfortable -- which encouraged more enjoyment and lingering. I've read some reviews claiming the restaurant is very loud. We did not experience that. Thankfully. The octopus alone is enough to bring us back for a lite bite at the bar...and more dining experiences to sample more of the menu, for both lunches & dinners. Looking forward to trying their ahi tacos -- served only at lunch. My wife had her choice to dine at any restaurant she wanted for her birthday. Since we both love great fish, we narrowed it down to Oceana and their reputation.
