The dates were a great idea but poorly executed. No one at the restaurant had bothered to learn how to pronounce nduja either. The giant beans were very uninspired and missing something. Salt was needed. Just a very basic dish with nothing exceptional. The bolognese sucked. The noodles were undercooked, the bolognese sauce was gross, and there was far too much bread crumbs on top. I'm a huge fan of their sister bar Barcelona down the street, so wanted to give this a shot. I've been twice now, and both times I've felt like the food was not only not tasty, but not worth the price. Food portions are very small. We got a cheese board for $28 with about 4 ingredients, not enough for a light happy hour snack. Barcelona would NEVER! As much as I like the ambiance and service, this place is not worth my money. As a vegan going to a tapas restaurant you have to go in expecting to only to be able to eat bread and salad hold the cheese. I was SO pleasantly surprised and the dishes that were already vegan and those that could be made vegan. We ordered the potatoes chips (no dip for me, gigante beans, bread (they gave us olive oil and butter), olives, cónica squash, and farro risotto which was all vegan. The farro risotto was amazing. And to top it off there was vegan sorbet affogato. Soooo good. My partner who eats meat got the meatballs and liked it a lot. I was so pleased to be able to get filled by a variety of vegan options. The food here is absolutely top tier. Everything we had was 5 out of 5 with taste, freshness, and the portion size was pretty decent as well. This included the Cacio e Pepe, the Meatballs, the Crab Lumache, and the whipped Ricotta toast. We did have an issue being seated that was not the restaurant's fault (someone stole our table by saying they were us), which led to us not being able to try everything on the menu. Ok late night menu came in clutch! They are one of the few excellent restaurants in Denver open late and they have a special menu from 10 PM to 12AM. The staff was lovely and welcoming and had excellent suggestions. The food was DELICIOUS! Ricotta toast and meatballs were our faves. It's just genuinely not an experience anyone NEEDS to have in Denver tbh. The food is pretty good and love the drinks. BUT, the wait times are absolutely insane. There really needs to be a better management system. Our reservation was at 6:45 and while waiting, we were crammed in the corner of the overly packed bar for an hour and a half just to get a message that our table would be ready in 10 minutes! I've been multiple times in the evening--always with a reservation-- and have never had the pleasure of under a 40 minute wait. Have only been back multiple times because friends want to try it, not because I would recommend. You can find similar vibes and food at other places in Denver truthfully. I hope they figure out a way to not have a reservation feel like a walk-in because then genuinely what is the point in that. I adore restaurants with small-plate concepts and don't mind paying a lot for good food, especially when it's French, Spanish, and Italian inspired. I'm leaving such a challenging review because this restaurant's food lacks sincerity. Worse, it's contributing and arguably now leading a trend that's hurting Denver's food scene: Beautiful interior, good drinks, and attractive people, but desperately overpriced, bland food. Yes, the drinks are good. Accompanied with six friends, some of whom were from North America and East Asia, we had a diverse range of preferences. Half the table were self-proclaimed foodies, and the other half just like the basics. This is a collection of our table's thoughts: The "Veau aux Olives" is claimed by the menu as "traditional Corsican" though it has shiitake mushrooms (not from Corsica) which could be acceptable had it not been so alarmingly oversalted. The "Mussels L 'Aziminu" is a mussels dish brandishing saffron as what sets it apart, but you couldn't taste any saffron (a costly and robust spice) as dill (a cheap and easy spice) was the overpowering flavor. The "Corsican Frites" were glorified via presentation, but were modest European-style fries--think chips like in the UK--and when you take a bite the skin separates from the insides of the potato. What's to say about the "Chicken Liver Mousse"? It had a standard flavor profile, lacking that rich fatty flavor characteristic of the dish, but was three bites and $14. I'm not sure what the chef accomplished curating that on the menu. The only compliment for the pasta was that for European-inspired food, the pasta itself wasn't over or undercooked, though this only requires a watchful eye on a timer. The "Rigatoni Bolognese" was fine, but didn't have any discernable flavors to be proud of. But the "Gemelli 'Cacio e Pepe'" was the most concerning of all. It was dry and only tasted like a hint of black pepper--my guess is that the cheese had been left out too long and had lost its luster. All the good reviews of this place seem to be from people who know a staff member. And that's why I'm sorry to leave this review because I too have a friend that works here. Restaurants like Corsica make people feel like they'll be called cheap for not liking a place that's destined to be trendy. These aren't small plates, they're minuscule bowls--see for yourself--that are average at best. "At least the espresso martini is good" every Denverite will say as they leave Corsica hungry, scratching their heads confused about what just happened. read more

TL;DR, Go now while you have the chance because I'm sure once word spreads about their food, it'll be hard to get a reservation. Order the chips, frites, meatballs, branzino, beef brochettes, and tiramisu. Sit at the bar and chat with the staff. We found this place on the second night of opening their doors. Corsica sits on a corner in RiNo not too far from its sister restaurant, Barcelona, and boasts French and Italian inspired tapas with a stunning wine and cocktail menu to match. We sat at the bar (open seating) and were immediately greeted by Meghan and she walked us through the menu of wines by the glass, cocktails, beers and aperitifs; their extensive wine by the bottle list, and the food menu, which consisted of four parts: apéro (small bites to enjoy with your first drink), then small plates of vegetables and meat, then a selection of pastas followed by meat and fish "main" plates, and finally, desserts. We started with the salt and vinegar chips with chive aioli and the farm egg. The chips were OUTSTANDING, and I could have easily eaten my body weight in them, they are not to be missed, and although I enjoyed the the egg, I could see it not being for everyones pallete. We chatted with the Som, Austin, and he recommended a beautiful bottle of wine to pair with our next plates: meatballs, baked lumache, and Corsican frites. The meatballs were perfectly salty, charred, and paired with a bright red sauce, I highly recommend them. The frites were thick cut and cooked to perfection, crispy on the outside and buttery in the inside, and served with a Calabrian chili ketchup and aioli, also would not miss these. To finish, we opted for the branzino, pork milanese, and beef brochettes. The steak was melt in your mouth and served with a rich, green peppercorn sauce; the milanese was crunchy and paired with housemade pickled veggie, both great options, but the branzino...that was my favorite dish of the evening. The fish was exceptionally cooked with crispy skin and a kiss of char that played off the juxtaposition of the cool fregola tossed in a bright and refreshing pistachio pesto. Whatever you do, get the branzino. It was subtle and beautiful and exactly the kind of bite that made me sit back and savor its simplicity. How could something so simple be so damn good. After being blown away by dinner, we couldn't pass up dessert, and neither should you. Their tiramisu was one of the best I've had, not too sweet, not too creamy, well balanced, and a perfect end to our meal. Even though our dinner was one of the best meals we've had in Denver, the night wouldn't have been the same without the fantastic FOH team. The bartenders Meghan, Meghan, Chance, and Caitlin, along with the Som, Austin, the GM, Michael, and Mimi (who I didn't get a chance to ask her position) were all incredibly friendly and knowledgeable and took the time to chat with us about the food, give their reccomendations, and made sure our glasses were never empty. WOW! Food, service, atmosphere, drinks...there isn't a bad thing I can say about this place! We each ordered a cocktail which were delicious. We then ordered the whipped ricotta toast and the broccoli Caesar to start.... both delicious. For our main meal we shared several plates such as muscles, cacio y pepe, mushroom arancini, meatballs, and pork belly. The portions were perfect to share between 2 people. While it was a little pricey, we got to try many different fine dishes so I would definitely say it's worth it. We cannot wait for our next date here!! read more

Talk about an underrated restaurant! I initially didn't even know what Corsica was, but I had driven by a few times and the drawings on the outside of the building drew me in. I'm so glad I finally stopped in, because it did not disappoint at all! They have a great wine selection (we had a Spanish wine that was amazing). The food is small bites that are just big enough to share, and very reasonably priced. We tried the cannelloni, meatballs, and Brussels. The cannelloni had a very faint lemon taste to it that mingled perfectly with the ricotta cheese. The sauce was also flavorful, and well balanced. I honestly don't think I've ever had a meatball so well seasoned. It wasn't spicy, but had some sort of a kick to it that left me wanting to order another one! The Brussels with trout were probably my favorite. The earthiness of the veggies blended with the smoky, saltiness of the fish was a match made in heaven. The service is on point; our server had great recommendations and didn't miss a beat. The only complaint I have is the building isn't efficiently air conditioned. The two rooms outside of the main room are quite literally 20° hotter and it was VERY hot and uncomfortable. I cannot imagine how hot it will be in there during peak summer. He took time to go over the menu and give me his recommendations (which BTW, we tried most of them!) we also met the GM who was so sweet and down the earth. You cannot beat the heart that is pumping through this restaurant. The stuffed dates were my absolute favorite but you honestly can't go wrong with anything on the menu. But here's the thing... we made a reservation for 7:45 on a Friday night and when we arrived 10mins early, we got told that they "don't tell people to leave once they're sat so it'll be like 20 mins" which was fine I totally get that but an hour later after waiting at the bar we FINALLY get our table at which we just decided to order at the bar because we got lucky and found a spot. We also weren't the only ones this happened to. So, all in all, the food is great but make a reservation early or show up early because even with a reservation you're not guaranteed a spot, which is a little f'ed up to me. Parking in rino is the worst, so be prepared for that.
