Since it's more of boutique, the bottles are quite pricey, mostly ranging near the 100s. But it was our favorite the whole weekend we went there. And we bought 6 bottles. We loved the spell and got 3 bottles of that! It's a Syrah cab blend. Has the Paso flavor that we love. It's not a vineyard, just a tasting room but worth a visit. We met the wine maker too. Friendly and attentive service. Can't wait to pop open a bottle at home soon!

It's one of the coolest winery tours I've been on. The caves are a massive labyrinth carved into the hillside and naturally stay around 55 degrees year round, which is where they age a lot of their wine before bottling. Even if you've been to a lot of wineries, this is something a little different. At the time I'm writing this, tastings are still complimentary, which is almost unheard of these days. If you go, do them a favor and leave with a bottle or two. That's how places like this are able to keep offering experiences like this, and honestly, you'll probably want to take some wine home anyway.

After that, everything was fantastic. I love that Justin offers this tasting room separate from their main winery, which is several miles away. Having a location right in the downtown Paso Robles square is so convenient, especially being surrounded by shops and restaurants. I also really loved the setup with tables to sit at versus standing at a bar. They offer wine by the glass as well as different tasting flight options, and they also serve small bites. We heard there are different menus depending on the day, which is a nice touch. Our server greeted us quickly, brought water right away, and got our first tasting to us fast. She was very knowledgeable about the wines and did an excellent job explaining each one. Since we were in a bit of a hurry to catch a flight, she kindly brought all of our tastings out at once, clearly labeled, walked us through them, and let us enjoy at our own pace. One of the whites wasn't good at all and I had to ask for a new glass so I wouldn't taint the next sample. But you're probably not going to like them all. That's the fun part! I enjoyed learning about the Austin Hope winery and its origins. I felt like they grew in popularity quickly and threw up some barns to accommodate the crowds. For example, the bathroom wasn't well constructed as when people slammed the door shut, the walls shook. I can't imagine how the walls would shake if someone had a blowout here. Even with some of the downfalls, this was my favorite winery and I wish I could get some of the wines without joining the club. We are the type of members who always take great care of the staff and rarely leave without purchasing extra bottles, yet today we were treated like an inconvenience. ​Despite being told in the past that spontaneous visits were no problem for members, we were turned away on a gloomy Monday with plenty of open tables. The host at the entrance was incredibly dismissive and wouldn't even let us finish our sentence before cutting us off. We were told our only options were to come back in an hour, a "limited" tasting, drive all the way downtown, or just pick up our shipment and leave. ​We asked for the Wine Club Manager to resolve the situation, but she wasn't on-site. To be offered a "partial" tasting as a favor after nearly ten years of support was the final straw. It feels as though they now prioritize "closing" new members over honoring the people who have supported them for years. They've gone mainstream and lost the personal touch that made them special.

Now the menu is short and expensive, more places & restaurants seem to going in that direction. I really wanted the tomahawk pork chop but I settled with the spring salad and a small portion of King Salmon. Justin's is known for their Burger and a side of truffle fries will put you back a bit. if you have to ask.... The wine was brought out one white and one red. I don't drink but both flavors were applauded. I ordered a bottle of sparkling water. The stories flowed, I didn't really know these folks, they were good AG people from Bakersfield. So we got acquainted, the most annoying thing were the flies. They had those table top fly spinners but on another table so that didn't help us much. The food was delicious, no question although the pasta dish with chicken for L had a very long and dark hair on it you really couldn't miss it. Other than that excitement we all enjoyed our meal. I had a couple slices of the pork, not as tender as I would have thought but it tasted real good. Salad a tad small but flavorful. I missed out on dessert, the wine was enough. Overall a very nice setting with a casual pace, perfect for those special occasions. In a 3 mins conversation she mentioned at least 4 times how they were about to close and they are unable to provide us anything except the wine tasting. We had an appointment for 3:30 and the winery closes at 5:00. I would have understood if it was 4:30. I was celebrating my birthday and I mentioned it. It literally meant nothing to her and she never mentioned it in her notes while she mentioned that they will do a chocolate flight with a candle. The guy who helped us with our wine tasting was good but visibly tired. He tried his best. Even arranged a charcuterie board for us. He did mention they were about to close but that made sense. He was genuinely happy to see us when we went inside to pay. The only good deed done to us was asking us if we needed waters for the road. Also I liked the breezy fan feature. The wines are not very appealing. A lot better can be done with the taste,recipes and fermentation process. The prices are very high for the experience and the wines. They had a couple special members only bottles open but they weren't super busy on a Thursday afternoon so we got to try those too. All of the wines were delicious honestly! My favorite was the Silken. The tasting room is beautiful and pretty big. They have a ton more seating on the wrap around porch and downstairs on the patio. They also have a short but good menu for food items as well. We got their charcuterie plate, a bowl of their daily soup, and a small salad. Everything was fresh with good flavor and the bread was addicting! Even my wife that doesn't eat bread couldn't put it down. The tasting is done standing at the bar but it is a very generous tasting where you can try up to 8 wines for $25, and the tasting fee is waived if you buy a bottle that costs at least $25. Thankfully, their wines were excellent and I ended up buying several to take home with me. The most expensive one was about $48, so the tasting fees were easily waived. They also have a wine club and it is an excellent deal, and they ship all over the country!

I wasn't going to stop at Hope on Park, even though the aesthetics of the wine tasting bar are really appealing, just because in the past I haven't always super loved the flagship cabernet that is distributed everywhere and the place was so nice, it didn't seem kid-friendly. However, the host, Alli, was so friendly and engaging that I paused to reconsider. Once she mentioned that it was also legal to take the wine to the park, as long as you had a lid, I was in, as I had an escape plan if it didn't work out with my family!! From that point on, it was a really fun and magical tour of the entire lineup of Austin Hope--with many really enjoyable whites and reds. Alli also offered up revisits and other bottles that weren't in the lineup...and she was super knowledgeable about all the wines, since that is what she is studying at school. When my wife came with our son, Alli also really engaged both of them with both the wine lineup and juice for my son, being really kind and generous to both of them and I could tell they both really liked her as well. So, this ended up being the perfect spot! I guess my instincts were right!! Of course, we were going to buy a couple of bottles to get the tasting fee waived and to repay her for her kindness...however, we loved the experience and her so much, we ended up buying the two most expensive bottles there.
