I have tried to call and order food from this place on more than one occasion and no one has ever answered the telephone number they have listed. No option to leave a message to have them call you back either. There a 2 items that i will always try if it is on the menu. 1 is fish and chips. The other is a Cubano. So when I saw the Cubano I knew i was going to order it. A Cubano traditionally is pork loin cooked into submission, ham Swiss cheese mustard and pickle grilled on a plancha. I dont do pickles so I ordered mine without. What i got was a grilled cheese with pulled pork bacon and smothered in pickles and onions. This was not even close to a Cubano and should not have been billed as one! I would also like to point out that those were pickled cucumber slices not actual pickles. Since I was at a function and the line for the food truck was exceptionally long. I just brought the sandwich home. I will also say the Mac and cheese was not terrible although I would rethink the pasta that is being used. It was large a overcooked. Finally got to eat at this food truck that I've been following for quite sometime. Chef Rudy had a pop up at Shades of brew Taphouse, which had a tasty selection of beverages to choose from!! If you try nothing else, you must eat the risotto and goat cheese cakes. Cubano, the stacked #99 burger. This was what was on the menu for today. There are of course several other options but these were the options that captured out attention the most. Now for me, I could have had about 3 dozen more of the risotto cakes with goat cheese. A play on the crab cake, the risotto with goat cheese is an amazing taste adventure you really just have to try to believe. Now do keep in mind, that goat cheese is a much stronger cheese and if you are not into that, then stay far away. However if you have taste buds like mine that are always looking for the amazing experience, then you need not look any further than this great little morsel. Of course that wasn't all, as my wife loves Cuban Sandwiches and even though I didn't get but a single bite, after looking at what was left, I would venture to guess that her sandwich was spot on. The meat inside was flavorful and moist, the cheese was the gooey mess your hoping for and the overall flavors were exactly what one should hope for. I ended up with the stacked #99 burger. It was all I could do to unhinge my jaw and try to get around this monster of a burger. What I can say, is that it was cooked to perfection, cheese, sauce and flavors were all executed to perfection and what you have is a fantastic restaurant experience put together from a food truck, and you would never know the difference had you not picked up the food yourself. Truly a great experience, and of course one would also need to have the libations provided when you first walk in and with that you are all set for a fantastic meal. I came to eat at the food truck and noticed what looked like some really delicious food being served to awaiting customers . I ordered the bacon Caesar salad at $12 and a mushroom chicken soup for an additional $2. I thought these choices would be quick as I observed quick service for the other items. This wasn't the case. The wait time was about 20-25 minutes. They were pretty busy. I thought ok, well it's probably going to a great salad! What came next was disappointing once I tasted the fruits of their labor. The salad was overly acidic and I had to get a search party to locate the bacon. I thought they may have forgotten as there was no discerniblep bacon flavor... Alas, I located two small bacon bit looking morsels and a larger 1 inch piece. Probably the worst salad I've ever had. I thought there was supposed to be croutons but nope. I could have been mistaken. They did manage to include a gob of chèvre. The soup had potential to be good however it too was underwhelming. It was extremely bland. Thankfully, I was able to locate some salt and pepper in my office as I didn't have any time to eat after the lengthy wait. I should have ordered the items I was seeing served up quickly but was trying to avoid a heavy carb-loaded lunch. If you try this food truck, I encourage you to pass on the salad. Soo good I went twice in 3 days during the pop up at Shades of Brew. First trip had the rum Monte Cristo, nice thick ham, bread perfect texture, and right amount of cheese. Potato salad on the side also really tasty. Next time in wife got the cubano she loved it and the bite I tried was really tasty. The Boss Hog was probably my favorite, juicy burger topped with cheese, bacon and super tender pulled pork with Chef Rudy's awesome bbq sauce. I have visited Chef Rudy's food cart three times now. Each time, his food and service did not disappoint! Most recently, my SO and I ordered a meal each, but unfortunately that meal was taken by another customer (dine and ditch at its finest). Chef Rudy and his team handled this with grace and finesse. We were informed of a delay in our meals, and were provided with our meals somewhat delayed, but excellent in flavor. Each meal is prepared with creativity and a delicious palate in mind. I prefer the Boss Hog which has a burger, pulled pork, bacon, cheese and house made BBQ sauce. Being a BBQ sauce lover, a request for more sauce was greeted with 2 new sauces the chef has been working on. The Bourbon sauce was great, the beer bbq sauce was even better. This is probably the best food truck I've have ever eaten from. I found him in front of Spider City Brewing on the east side of Bend. I briefed the menu but told chef Rudy i would eat anything and like spicy. He plated me up some pork, with spicy mustard, jalapeños in what appeared to be a giant toasted roll with other amazing mystery seasoning and herbs. It was also served with potato salad. All of which was incredible, savory, fresh, and cooked to perfection. It sounds like Chef Rudy is a hard working family man who is passionate about what he does and it really shows. This food cart is in Wilson park near the state Capitol in Salem. The cabbage soup was delicious, and came as a side with sandwich. The Cubano sandwich was impressive. Rudy's food is so good and at ~$10 a plate it's the best value in town! My favorites have been the Brisket Sando and Shrimp Scampi pasta but everything I've tried has been excellent w/ portions large enough to satisfy most appetites. Normally the truck is located outside of Humm Kombucha HQ but you can also find them at events on weekends. Maybe my only criticism is that it's difficult to know when they are open. If you do make the trip over and find it closed at least there are other great options in the area...Ramen 123, Sally's Wok, and the Mexican truck near Gear Peddler are all solid! read more

Rudy and his staff KILLLLL it with the casual food cart food. Its one of the few food carts in town I feel like I'm getting my money's worth! I love seeing them at events cause I know I'll be well fed. The meat is always perfectly cooked (with great cuts, I HAAATE fatty bits and have never had that problem there), and the risotto balls have a sauce on them I'd eat like a soup if it was socially acceptable. This was our first time here. We ordered one burger to share. The guy gave us the beeper for call back when it's ready. After more than 15 minutes I sent my husband back to check. A new chef was up there who seemed to not know we ordered. Also 2 more customers ordered and they were being attended to. After my husband came back empty handed...I went back and saw the guy we originally ordered from flip up my burger and plate it with the salad. No comment as to the 20 minute delay. I sat down and bit into charcoal. The burger had obviously sat there the whole time and burned to the grill. And he plated and served it??!! Shortly he came to offer us a piece of cheesecake as I was getting up to return the burger. "Is something wrong?" He asked? "Yeah it's not edible!" It's at that moment he realizes the other guy never did anything with the slab of meat when he walked away for a break or whatever. Anyway he offered to remake the plate.
